HONEY GARLIC CHICKEN OVER RICE

Steps:
- In a medium skillet, cook the chicken over medium-high and season with salt, pepper, and garlic powder until cooked through, about 5-10 minutes
- Mince the garlic and add it to the pan, stirring until fragrant, about 1 minute
- Add the apple cider vinegar, soy sauce, honey, and water
- Cook, stirring often, until the liquid reduces by about 1/3 and starts to thicken, about 3-5 minutes
- Remove from the heat and serve the chicken over cooked rice

HONEY CHICKEN OVER SNOW PEA RICE

Steps:
- Heat a medium saucepan over med-high heat; add 1 tablespoon vegetable oil and the butter to the pot.
- When the butter is melted, add in the rice; season with salt and pepper, lightly brown the rice for 3-4 minutes, stirring often.
- Add in the wine and allow it to evaporate entirely, 1 to 2 minutes.
- Add in 3 cups chicken broth and the lemon zest; bring liquid to a boil; cover and lower heat.
- Cook the rice for 18 -20 minutes or until tender.
- Once the rice has only about 3 more minutes of cook time, remove the lid and add the sliced snow peas (don't stir the rice; just add the snow peas on top and put the lid on.
- The steam will lightly cook the snow peas.
- Once cooked, fluff the rice with a fork and stir in the snow peas; they should have some crunch to them.
- While the rice is cooking, preheat a large skillet over med-high heat with the remaining 2 tablespoons oil.
- Add in the chicken, season with salt and pepper, and brown for 3 minutes.
- Add in the red pepper flakes, onions, garlic, ginger, and honey.
- Stir frequently and continue to cook 3-4 minutes, or until the onions are tender.
- Add the remaining 1 ½ cups chicken broth; bring to a simmer.
- Once at a simmer, combine the cornstarch with a splash of water and mix to create a thin paste.
- Add the cornstarch mixture to the simmering chicken, mix thoroughly and continue to cook for 2 minutes or until the liquid is thickened.
- Add the sliced scallions and lemon juice to the chicken and stir.
- Serve the honey chicken over the snow pea rice.

This is a quick and easy, but delicious meal. A sweet and tangy chicken. It can be done in the morning and placed in the oven when you get home from work. I definately recommend serving this with rice because the sauce is too good to pass up.

- Mix all ingredients together.
- Cut hindquarters into seperate legs and thighs.
- You should have 8 pieces of chicken now.
- Place in baking dish and pour sauce over top to coat chicken.
- This can be done ahead of time and refrigerated.
- Bake at 350 for 3/4 hour with lid on, and 3/4 hour with lid off.
- Serve chicken and sauce with hot cooked rice.

- Add 1/2 of the margarine in a large frying pan over medium heat until melted. Add the diced onions and 1 tbls garlic powder to pan and cook until soft and clear. Add chicken cubes and remaining margarine and garlic powder. Continue to cook over medium heat until chicken is cooked through (about 10-15 minutes).
- NOTE: Margarine and garlic powder amounts may be altered as desired.

- Season chicken liberally with black pepper and place in a crock pot.
- Combine honey, garlic, soy sauce, ketchup and red pepper flakes in a medium-sized bowl and whisk until all ingredients are thoroughly incorporated. Add green onions and stir (reserving some for garnish if desired).
- Pour honey mixture over chicken pieces then cook, covered, on high for 3-4 hours (or low for 5-6 hours) or until chicken is cooked through and tender.
- Remove chicken from crock pot then cover to keep moist. Increase temperature of crock pot to high (if not already on high) and replace lid.
- Add cornstarch to a small bowl or cup then slowly add water; stir until smooth. Add cornstarch slurry to crock pot, cover and heat until sauce thickens (about 30 minutes).
- Chop chicken thighs into bite-sized pieces and add back to crock pot. Gently stir to coat chicken with sauce. Reduce heat to "warm" until ready to serve.
- Serve chicken and sauce over white rice. Garnish with chopped green onions if desired.
