Smoky and spicy, serve Chipotle Baked Beans at your next barbecue or picnic and kick it up a notch! Leave out the bacon for a vegetarian version.

4 slices bacon
1 cup onion (diced)
2 cloves garlic (minced)
3 15-oz. cans Great Northern beans
1/2 cup ketchup
2 tablespoons soy sauce
2 tablespoons maple syrup
1 tablespoon chopped chipotle chilies in adobo sauce
1 tablespoon apple cider vinegar
1/2 teaspoon smoked paprika

Steps:

  • Preheat oven to 350. Lightly coat a 9x13 casserole dish with cooking spray.
  • Fry the bacon in a large nonstick skillet over medium heat until crisp. Remove to a paper towel lined plate; cool, then crumble.
  • Reserve 1 tablespoon of the bacon drippings. Add the diced onion to the pan and cook for 4-5 minutes, until translucent. Add minced garlic and cook until fragrant, about 1 minute.
  • Add beans and remaining ingredients (except for bacon) and stir until combined. Pour the mixture into a 9x13 inch casserole dish. Sprinkle the crumbled bacon on top and bake for 45-60 minutes, or until hot and bubbly.

1/2 cup tomato puree
1 tablespoon canola oil
1/4 cup honey
1/4 cup cider vinegar
2 tablespoons molasses
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
2 canned chipotle chiles in adobo, seeded and chopped
2 (28 ounce) cans baked beans

Steps:

  • Preheat oven to 300°.
  • Coat a large nonstick skillet with cooking spray and heat over medium-high heat.
  • Add shallots; sauté 4 minutes or until golden.
  • Add cumin and garlic; sauté for 1 minute.
  • Add tomato puree and oil, and cook for 2 minutes or until thick, stirring constantly.
  • Add honey and the next 5 ingredients (through chiles). Reduce heat; simmer for 10 minutes, stirring occasionally.
  • Combine beans and shallot mixture in a 2-quart baking dish. Bake for 1 hour or until thick and bubbly.

Making beans from scratch is one of those things people pretend is difficult. It's not. Also, you get a hill of delicious Chipotle beans for not too much cabbage (If you know what I mean).

1 tablespoon vegetable oil
1 medium yellow onion, finely diced
16 ounces dried pinto beans, rinsed
1 teaspoon ground cumin
1 teaspoon dried oregano
2 garlic cloves, finely chopped
2 bay leaves
1 (7 1/16 ounce) can chipotle chiles in adobo
2 tablespoons fresh lemon juice, from one lemon
2 tablespoons lime juice, from one lime
2 tablespoons kosher salt
1 teaspoon fresh ground black pepper

Steps:

  • Heat oil in a large heavy-bottomed pot, or dutch oven medium-high.
  • Add onion, beans, cumin, oregano, garlic, bay leaf, 2 chipotle chilies, and 2 teaspoons adobo sauce from the same can. Add enough water to pot to cover beans.
  • Bring to a simmer and cook until beans are tender, but not falling apart. Remove from heat. Remove bay leaves and chipotle chilies. Stir in lemon juice, lime juice, salt and pepper.

⅓ cup honey
6 cloves garlic
4 chipotle peppers in adobo sauce
6 skinless, boneless chicken breasts, or more to taste
2 (15 ounce) cans black beans, drained and rinsed

Steps:

  • Blend honey, garlic, and chipotle peppers in adobo sauce together in a food processor until smooth.
  • Place chicken breasts in the bottom of a slow cooker and mix in honey-chipotle sauce.
  • Cook in the slow cooker on Low for 5 hours.
  • Transfer chicken to a bowl and shred using 2 forks. Return chicken to the slow cooker and stir in black beans.
  • Continue to cook on Low until cooked through, about 30 minutes more.

To me, baked beans are an integral part of any cookout. This recipe gives canned baked beans a zing! The acid from the lime juice pairs nicely with the fatty richness of the beans and the spice of the chipotle in adobo. It's the perfect pairing for your favorite BBQ proteins!

2 strips bacon, chopped
1/2 onion, diced
2 cloves garlic, minced
One 28-ounce can baked beans
1/3 cup ketchup
3 tablespoons honey
2 tablespoons lime juice
1 teaspoon to 1 tablespoon adobo sauce from canned chipotles, depending on how spicy you like it
Kosher salt and freshly ground black pepper
1/2 cup french-fried onions

Steps:

  • Preheat the oven to 350 degrees F.
  • In a saute pan over medium heat, cook the bacon until crispy, about 4 minutes. Remove the bacon with a slotted spoon to a paper towel-lined plate. Add the onions and garlic to the pan with the bacon grease and cook until the onions are translucent, about 5 minutes. Remove from the heat.
  • In a large bowl, combine the baked beans, onion-garlic mixture, bacon, ketchup, honey, lime juice, adobo sauce, salt and pepper. Mix thoroughly to combine. Transfer to a 2-quart baking dish. Cover with foil and bake for 30 minutes. Uncover and bake until slightly thickened, about another 10 minutes. Remove from the oven and top with the fried onions. Serve.

2 (16 ounce) cans baked beans
2 1/2 teaspoons TABASCO® brand Chipotle Pepper Sauce
1 tablespoon brown sugar

Steps:

  • Cook bacon in a skillet until crisp. Transfer to a paper towel-lined plate to drain, and when cool, crumble and set aside.
  • Pour off all but 2 teaspoons of the bacon drippings, and cook onions in drippings about 3 minutes, until golden brown. Combine beans, TABASCO® Chipotle Sauce, sugar, onions and bacon in a casserole dish, and refrigerate until ready to use.
  • Heat beans in a 300°F oven for 30 minutes or covered over a low grill.

This recipe is an adaptation from my girlfriend Jan's mother, Alice. I bought one of those mega cans of Bush's Baked Beans and diced prosciutto from Sam's Club/Costco, and made two different types of beans with very little extra work. I loved the chipotle version.

102 ounces baked beans (Bush's original flavor)
2 green peppers (chopped)
2 large onions (chopped)
7 ounces diced prosciutto
1 cup brown sugar
1/4 cup yellow mustard
3 tablespoons Worcestershire sauce
1/4 cup ketchup
1/4 cup pureed chipotle chile in adobo
2 tablespoons olive oil

Steps:

  • Saute the onion, green pepper, and prosciutto in 2 tablespoons olive oil, in a large heavy pot, until the onions and peppers are soft and the prosciutto is browned.
  • Add the entire can of beans into a large pot along with remaining. ingredients, except the pureed chipotle.
  • Divide the beans evenly between two ovenproof casseroles (I covered two ovenproof mixing bowls with foil).
  • I added the pureed chipotle to one of the mixing bowls, then covered them and baked them at 375 degrees for an hour.
  • Uncover and cook for another 20 minutes.
  • Stir them about halfway through the cooking time, and then again when you uncover them.
  • If you so desire, add a little chopped fresh cilantro to the chipotle version.

1 tbsp sunflower oil
1 onion , chopped
1-2 tbsp chipotle paste (depending on how hot you like it)
2 x 400g cans black beans , drained and rinsed
400g can mixed bean , drained and rinsed
2 x 400g cans chopped tomatoes with garlic & herbs
1 heaped tbsp brown sugar
4 eggs
small handful coriander leaves
soured cream , to serve
warm flour tortillas , to serve

Steps:

  • Heat the oil in a deep frying pan and cook the onion for about 5 mins until soft. Add the chipotle paste, beans, tomatoes and sugar, and simmer for about 15-20 mins until thickened. Season to taste.
  • Make 4 holes and crack an egg into each one. Cover and simmer over a low heat for 8-10 mins until the eggs are cooked to your liking. Sprinkle with coriander leaves and serve with a bowl of soured cream and some warm flour tortillas.

2 tablespoons extra virgin olive oil
1/2 onion, chopped
3 garlic cloves, crushed
2 cups cooked black beans or 2 cups canned black beans, rinsed and drained
1/2 cup water
1 carrot, chopped in small pieces
2 tablespoons tomato paste
2 chipotle chiles in adobo, minced (set 2 tsp of adobo sauce aside)
1 tablespoon red wine vinegar
1 teaspoon sweet smoked paprika
1/2 teaspoon cumin
1 tablespoon honey or 1 tablespoon sugar
fresh cilantro, minced

Steps:

  • Heat olive oil over medium-high heat until it begins to smoke. Add onions, and cook until translucent. Add carrot and sauté until it begins to soften slightly.
  • Turn heat to medium and add garlic, cumin, paprika, and minced chipotle peppers. Sauté for 1-2 minutes, then mix in water, tomato paste, and reserved adobo sauce. Stir to combine, then add beans immediately.
  • When the beans are hot, add vinegar and honey or sugar. Cover and simmer over low heat for 10-15 minutes, stirring occasionally.
  • Sprinkle with fresh cilantro before serving over rice.
