1/2 cup sugar
2 tablespoons honey
1 cup flour, plain
1 teaspoon baking powder (when using Australian BP I use 2 tsp)
1/2 teaspoon cinnamon
1 1/2 cups rolled oats

Steps:

  • Cream butter, sugar and honey until pale.
  • Sift flour, baking powder and cinnamon together. Add sifted ingredients and rolled oats to creamed mixture, stirring well.
  • Roll tablespoonsful of mixture into balls.
  • Place on greased oven tray and flatten with a floured fork.
  • Bake at 180C for 15 minutes or until golden.
  • Transfer to a rack to cool.

1 tablespoon baking powder
1 teaspoon fine salt
1/2 teaspoon baking soda
3/4 cup (12 tablespoons) unsalted butter, frozen then grated, plus more for serving
1 cup whole milk
1/4 cup honey
1/2 teaspoon vanilla bean paste or vanilla powder
1/4 cup buttermilk, for brushing
Whipped sweet cream and berries, for serving

Steps:

  • Put the flour, baking powder, salt and soda in a mixing bowl and stir to combine. Add the butter to the flour mixture and toss with a very light hand until it looks like crumbly cornmeal. Put in the fridge for 15 minutes (this firms the butter back up).
  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and set aside.
  • Mix the milk, honey and vanilla in a small bowl.
  • Make a well in the middle of the flour mixture and pour in the milk mixture. With a light hand, mix just until combined. Flour a work surface and turn out the dough. Pat into a 3/4-inch-thick round or square. Dip a 2-inch biscuit cutter in flour and cut out rounds from the dough. Place on the prepared baking sheet and brush the tops with the buttermilk. Bake until golden brown, 12 to 14 minutes. Serve with butter, whipped sweet cream and berries.

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift flour, baking powder, and salt together into a bowl. Combine shortening with flour mixture using fingers until the mixture is crumbly and resembles cornmeal. Stir milk in gradually until dough is well combined.

I got this recipe from my grandmother who got it from her grandmother. She had to translate it and then figure out measurements. The original recipe called for "enough flour to make a dough". Thankfully grandma knew what kind of dough.

2 cups whole wheat flour
1 tablespoon baking powder
1 teaspoon kosher salt
1 cup heavy cream
3 tablespoons honey
2 tablespoons unsalted butter, melted
Glaze:
2 tablespoons unsalted butter, melted
1 tablespoon honey

Steps:

  • Preheat oven to 425°F. Lightly grease a baking sheet with non-stick cooking spray and set aside.
  • In a large bowl, whisk together the whole wheat flour, baking powder and salt.
  • In a medium bowl, whisk together the cream, honey and 2 tablespoons melted butter. Make a well in the center of the dry ingredients and add the wet ingredients. Stir with a wooden spoon until just combined and then turn out onto a lightly floured surface and knead with your hands until well combined.
  • Pat the dough out onto the floured surface to about 1-inch thickness. Cut into circles with a round cutter and place on the prepared baking sheet. Gather remaining dough and repeat cutting into rounds until all dough has been used.
  • In a small bowl, whisk together the other 2 tablespoons melted butter and 1 tablespoon honey. Brush onto biscuits. Bake for 10-12 minutes or until biscuits are golden brown around the edges and on top.
  • Serve with butter and more honey. To reheat the next day, slice them in half, spread a little butter on each half and place on a baking sheet under the broiler for 1-2 minutes or until perfectly toasted.

  • Preheat the oven to 425 and lightly grease a large baking sheet.
  • In a bowl of an electric mixer, combine flour, baking powder, baking soda, and salt. Mix on low to combine ingredients.
  • Chop cold butter into pieces and add it to the flour mixture. Mix on low, until batter resembles coarse crumbs.
  • Pour in honey and mix for a few seconds.
  • Pour cold buttermilk into the center of the mixture. Mix until just combined, dough will be sticky.
  • Transfer the dough onto a lightly floured surface and sprinkle with a little more flour on top. Knead dough 5-6 times and pat into a ½ inch-think circle.
  • Using a cookie cutter (about 2 to 2 1/2 inches in diameter), cut out the biscuits. Rework dough scraps into a ball (kneading it as little as possible) and shape it into a circle again. Cut out more biscuits.
  • Place biscuits on the baking sheet leaving about an inch in between.
  • In a small bowl, mix melted butter and honey. Using a pastry brush, brush each biscuits with honey butter mixture.
  • Bake for 10-13 minutes (depending on the size of biscuits), until raised and golden brown.

I used anise seed from www.Penzeys.com, and it had a terrific flavor. The seeds soften during the baking process, and it smells like Springerle cookies when the biscuits are baking (but these are much faster to make!)

They are a 'Barossa Deutsch' recipe, which means they started as a German recipe, brought over with the settlers of South Australia's Barossa Valley, and have been adapted over the years. Makes a large quantity, but last for months in a sealed container.

2 lbs honey, warmed (just under 1kg)
1 lb sugar (500gm)
4 eggs, well beaten
1 teaspoon ground allspice
1 teaspoon cinnamon
1/2 teaspoon ground cloves
4 teaspoons bicarbonate of soda
3 7/8 lbs plain flour (approx 2kg)

Steps:

  • In a very large bowl thoroughly combine all ingredients except flour.
  • Gradually stir in flour until you get a stiff mix that is neither dry nor sticky. Quantity of flour will vary every batch.
  • Cover bowl with lid or plastic wrap and set aside overnight.
  • Next day. Preheat oven to moderate (180 degrees Celsius). Now, either roll out and cut out shapes or roll into balls. Press halved, skinned almonds onto balls. Either way, allow enough room between biscuits for slight spreading.
  • Baking time will vary depending on thickness of biscuit. The biscuit will have a nice golden colour when done and still be soft. Allow to set for a couple of minutes on tray before putting onto a wire rack to cool. A thin biscuit will be crisp whilst a 'ball' will be softer.

Steps:

  • Heat grill or Big Green Egg to 450°F. In the Egg, put the convEGGtor (legs pointing up) under the grill grate.
  • Add the cold butter, flour, baking powder, salt, and thyme to the bowl of a food processor. Pulse until the butter is broken down into pea-sized bits in the flour.
  • Pour the butter-flour mixture into a mixing bowl. Add the buttermilk and honey, and use a fork to stir until just incorporated.
  • Pour the biscuit dough onto a floured surface and sprinkle flour over top. Quickly form into a ~1 to 1-½-inch thick disk. Use a 2-1/2 inch biscuit cutter to cut out biscuits by pushing - not twisting - the biscuit cutter down straight into the dough. Put the biscuits in a cast iron pan.
  • Bake in the grill or BGE at 450°F for 12-15 minutes over indirect heat (i.e. over the convEGGtor in a BGE or over burners that are off in a grill) or until biscuits are cooked through and golden on top.
  • Brush melted butter over the tops of the biscuits and serve.

  • Mix oil, sugar, egg, Honey, Bicarb of Soda, Salt and mixed spice in a large bowl. Mix until well combined and smooth
  • Sift the flour, and gradually stir into the smooth mixture. The mix will soon combine into a smooth dough at this stage I emptied the contents onto a lightly floured surface and kneaded the dough carefully until all crumbs were gathered up
  • Roll out your dough to a desired thickness, and cut out your cookies. I managed to get 25 cookies using a 78mm round cutter.
  • Preheat the oven to 180C and place cookies on a baking tray lined with baking parchment. I only have a small baking tray so I had to cook the cookies in 4 and a bit batches >.< Also place the cookies with enough space between them as they will spread while baking. Bake for 10-12 mins or until golden around the edges and cracked on top.
  • Transfer baking paper on top a wire rack and leave to cool. Sprinkle with caster sugar and enjoy :)
  • I added coloured sprinkles into the dough for colour and a different texture which added a nice touch to them. Can add fruit to the smooth batter stage, such as banana or chocolate chips for some extra chewyness and flavor

1 3/4 cups (200 g / 7 oz) all-purpose (plain) flour
pinch of salt
2 tablespoons superfine (caster) sugar
1 1/2 tablespoons olive oil
1/2 tablespoon grated lemon zest
1/2 teaspoon vanilla extract
1 1/2 teaspoons ammonium bicarbonate or baking soda (bicarbonate of soda)
equal quantities olive and corn oil, for deep-frying
finely chopped walnuts, for sprinkling
For the Syrup
1 1/4 cups (250 g / 9 oz) superfine (caster) sugar
1/2 cup (120 ml / 4 fl oz) honey

Steps:

  • Preheat the oven to 400°F (200°C/Gas Mark 6) and grease 2 cookie sheets (baking trays) with butter. Sift together the flour and salt into a large bowl and make a well in the center. Add the sugar, oil, lemon zest, and vanilla. Stir the baking soda into 5 tablespoons water in a bowl and pour into the well. Using a spoon, gradually incorporate the dry ingredients, then knead gently to a soft and pliable dough, adding a little more water if necessary. Break off small pieces of dough and roll into cylinders the size of your thumb, then press lightly to flatten. Put them onto the prepared baking sheet, spaced well apart, and bake for 20-25 minutes, or until lightly golden. Remove from the oven. To make the syrup, put the sugar, honey, and 1 1/4 cups (300 ml / 1/2 pint) water into a pan and bring to a boil. Boil for 5 minutes, then remove from the heat. Pour a mixture of equal parts olive and corn oil into a heavy pan to a depth of 3 inches (7.5 cm) and heat it to 375°F (190°C), or until a cube of bread browns in 30 seconds. Carefully drop batches of the cookies into the hot oil and fry for a few minutes, until golden brown. Remove with a slotted spoon, drain well, and drop into the hot syrup. Let absorb syrup for 3-4 minutes. Remove with a slotted spoon, transfer to a serving platter, and sprinkle with finely chopped walnuts.

  • Preheat oven to 425°F. Before starting, freeze your butter for at least 20 minutes for best results. Also make sure your milk is ice cold.
  • In a medium bowl, whisk together flour, sea salt and baking powder. Using a box grater, grate the butter and add into the bowl with the flour. If you don't have a grater, you can use a pastry cutter. Gently stir the butter into the dry ingredients trying not to overwork it or break it down.
  • In a large measuring cup or small bowl, whisk together the milk and honey. Pour the milk into the flour and butter mixture and gently stir to combine. This will still be sort of chunky and in pieces, not a uniform dough.
  • On a flour covered surface, pull the dough together as one. If it seems a bit sticky, just dust with some extra flour. Very gently, press the dough out and fold it over. Press out once again, turn 90 degrees, and fold it again. Do this step 4-5 times. (see video for help)
