Add a sticky honey and mustard glaze to gammon for a delicious sweetness that contrasts with the saltiness of the meat. It's great for a celebration supper

2½ kg boneless unsmoked gammon joint, tied
1 sprig thyme 2 bay leaves and 1 rosemary sprig tied together
1 onion, halved
2 carrots, roughly chopped
1 celery stick, roughly chopped
1 tbsp black peppercorns
1 tsp cloves
1½ tbsp English mustard
70g clear honey
2 tbsp soft dark brown sugar

Steps:

  • Put the gammon in a large, deep saucepan. Add the tied herbs, onion, carrots, celery, peppercorns and cloves. Pour over enough cold water to cover the meat, then bring to the boil, cover with a lid, and lower to a gentle simmer for 1 hr 15 mins. Turn off the heat and leave the ham to sit in the liquid for 30 mins.
  • Remove from the liquid (this makes a delicious soup stock) and leave to cool until cold enough to handle. Peel off the thick layer of skin on the gammon to reveal a layer of fat. Discard the skin and score the fat in a criss-cross pattern with a sharp knife.
  • Heat the oven to 200C/180C fan/gas 6. Put the ham in a roasting tray lined with foil. Mix together the mustard, honey and sugar in a bowl, then generously brush half over the ham. Roast for 15 mins, then brush with the remaining glaze. Return to the oven for a further 20-30 mins or until sticky and brown. Leave to cool for 15 mins before carving into thick slices.

1 raw gammon ham, smoked or unsmoked, approx 5-6kg/11-13lb 3oz with bone in
454g jar good quality orange marmalade
300g light muscovado sugar
jar whole cloves

Steps:

  • Heat oven to 180C/160C fan/gas 6. Put the ham into a large roasting tin, then tip in 500ml water. Cover the whole thing loosely with greaseproof paper, then cover with a large sheet of foil, scrunching and sealing it around the edge of the tin. Make sure you leave some room around the ham. Put it in the oven, then turn the heat down to 160C/140C fan/gas 3 and leave to cook for 5 hrs. Meanwhile, mix the marmalade with the sugar and 50ml water in a small pan, bring to the boil, then set aside and leave to cool.
  • Take the ham from the oven. Be careful when you lift the foil as there will be a good amount of steam, which can burn. Once the ham has cooled just a little, remove the rind by gently prising the skin from the fat and lifting it away. Try to keep as much fat on the leg as you can as this will keep the ham moist as it roasts. Drain off most of the liquid (this is very good ham stock - keep it and use it for soup), leaving a little in the tin. Turn the oven up to 200C/180C fan/gas 6.
  • Score lines into the fat with a knife to make large diamond shapes, with the lines about 4cm apart. Brush a third of the marmalade glaze over the joint, really pushing it into the creases and cuts. Now stud the ham with the cloves by poking a clove into the corner of each diamond.
  • Put a trivet into the roasting tin (if you don't have one, a few halved carrots will do), then sit the ham on top. Roast the ham, uncovered, for 45-50 mins, brushing with the remaining glaze a few times during cooking, until caramelised and delicious. Carve hot or cold.

  • When you first buy a ham, the meat will be very salty and not really suitable to eat. To remove the saltiness, and if you have time, put your ham in cold water and soak it overnight.
  • Now you are ready to cook. Ensure you have a large saucepan big enough to fit your cut of meat, you will notice from my photos that I didn’t have a big enough saucepan, in this case half way through the boiling remove the ham/gammon and turn it upside down to ensure both ends are cooked.
  • Now place the meat back in the saucepan and pour in the apple juice. Top the saucepan up with cold water if required. Add the carrots, onion, peppercorns, coriander seeds, cumin seeds, bay leaves and star anise to the liquid and bring the ham/gammon to the boil.
  • Reduce the heat and simmer the pork for 2 and a half hours. Remember to put the lid on the pan to keep the heat in. If your pan is not quite big enough like mine, you may need to turn the meat over half way through.
  • Now to make the glaze. Add the honey, marmalade, orange zest, sugar, sherry or port (or both if it’s Christmas!) into a pan and warm it through on a low heat.
  • Ensure your oven is preheated to 200°C/gas mark 6 before removing your meat from the saucepan.
  • Remove the gammon from the saucepan and place onto a board. Discard the liquid as it will be too salty to use for stock or soup. Remove any string that is holding it together.
  • Carefully score the fat into diamonds, ensuring you don’t cut into the meat. Now put a single clove in the middle of each diamond.
  • Now pour 75% of the glaze over the fat, using a brush if you have one to get good coverage. I also like to brush the glaze over the sides of the gammon for extra flavor.
  • After 30-35 minutes of cooking it should be golden brown, if you remove and it isn’t stick it back in for another 5 minutes.
