HOMINY WITH POMEGRANATE AND CILANTRO

Number Of Ingredients 13

1 pound dried hominy (pozole)
One 15-ounce can black beans, drained and rinsed
2 limes, juiced and zested
2 oranges, juiced and zested
2 tablespoons good-quality gold tequila
1 teaspoon agave syrup
1/2 teaspoon ground cumin
Pinch red pepper flakes
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup extra-virgin olive oil
1/2 cup pomegranate seeds
1/2 cup fresh cilantro leaves, torn

Steps:

  • Rinse the hominy, then place in a large bowl and cover with twice its volume of cold water. Soak overnight. Drain when ready to use.
  • In a medium saucepan over medium-high heat, add the hominy and twice its volume of water. Bring to a boil, then reduce to a simmer and cook until the hominy kernels have split open and become tender, 1 1/2 to 2 hours. Drain and set aside to cool.
  • In a medium bowl, add the lime juice and zest, orange juice and zest, tequila, agave, cumin, pepper flakes, salt and black pepper. Whisk together while adding the olive oil in a slow, steady stream.
  • Add the hominy, black beans, pomegranate seeds and cilantro to the vinaigrette and mix well. Refrigerate for 20 to 30 minutes before serving to allow the hominy and black beans to soak up some of the vinaigrette.

2 tsp cumin
1 tsp chili powder
2 tsp sugar
2 garlic cloves (finely minced)
1 Serrano chile (seeds removed and finely minced)
1/4 cup fresh lime juice
1 tbsp olive oil
1 tbsp red wine vinegar
1/4 cup finely chopped cilantro
salt
freshly ground pepper

Steps:

  • Add all ingredients and stir until well combined. Refrigerate until ready to serve.

One 12-ounce jar whole fancy pimientos, drained and deseeded
One 15-ounce can white hominy, drained
4 ounces cream cheese, softened
1 tablespoon Louisiana hot sauce
1 1/2 teaspoons Cajun seasoning
Kosher salt
Zest of 1 lime
Tortilla chips, for dipping
Crudite, for dipping

Steps:

  • Add the pimientos, white hominy and cream cheese to a food processor. Pulse until a smooth paste is formed, about 2 minutes. Sprinkle in the hot sauce and Cajun seasoning and pulse to combine. Season with kosher salt if desired (some Cajun seasoning blends already contain salt).
  • Pour into a serving bowl and garnish with the lime zest. Serve alongside tortilla chips and crudite for dipping or store in an airtight container, refrigerated, for up to 2 weeks.

3 T diced red onion
2-3 T chopped cilantro
1 chopped chipotle with 1-2 T chipotle sauce from the can
3 T dried blueberries, cranberries or pomegranate arils
Juice of 1/2 a lime
Chips to serve this with!

Steps:

  • Mix together all ingredients in a bowl. That's it!
  • If you want to let this sit overnight to let the flavors develop, feel free! Or eat it now!
  • And you could always do take out from Tocabe!

4 large poblano peppers
2 red bell peppers
2 tablespoons olive oil
2 cups chopped red onions
3 -4 lbs boneless country-style ribs or 3 -4 lbs pork butt
kosher salt
fresh ground pepper
1 tablespoon ground cumin
8 large raw tomatillos or 12 ounces raw tomatillos
6 -8 large garlic cloves
1 cup fresh cilantro, stems and leaves
1/2 cup lime juice or 4 limes, juice of
1 quart low sodium chicken broth
12 ounces beer (any variety)
1/2 cup jarred sliced jalapeno (to taste)
2 (15 ounce) cans hominy, drained
tortilla chips or rice, to serve

Steps:

  • Heat the oven to 400°F.
  • Place the poblano and bell peppers on a rimmed baking sheet and roast in the oven until they blister, about 15 to 20 minutes, using tongs to turn them halfway through. Transfer the roasted peppers to a heat-safe bowl, then cover the bowl tightly with plastic wrap. Let the peppers steam for 7 to 10 minutes, then remove them and slip off the skins. Cut out the stems, then remove and discard the seeds.
  • Finely chop the roasted red peppers. Set the poblanos aside.
  • Heat a large Dutch oven or heavy duty pasta pot over medium. Add the olive oil and the onions. Saute for about 10 minutes, or until the onions become translucent.
  • Season the pork with salt, pepper and the cumin. Add pork to the pot with the onions and brown on all sides.
  • Meanwhile, peel the tomatillos and cut into quarters. In a blender, combine the tomatillos, garlic, cilantro, lime juice, poblanos and 1 teaspoon of salt. Puree for a few minutes or until liquefied. This may take a few tries and you may need to stir the contents of the blender a few times to make the tomatillos and cilantro blend together. Set aside.
  • Once the pork is browned, add the chicken stock, the beer and the pureed tomatillo mixture. Stir well, then add the jalapenos and reserved red peppers. Bring to a boil, then reduce heat to a simmer. Simmer, stirring occasionally, for 2 to 3 hours, or until the pork breaks into pieces easily and the liquid has reduced by about a fifth. About 30 minutes before the stew is done, stir in the hominy.

10 arbol chiles, stemmed
3 cloves garlic, unpeeled
1/2 lb. tomatillos (about 7), husked
1/2 large onion, sliced
1 boneless pork shoulder (2 lb.), cut into 8 pieces
1/2 lb. purslane, cleaned
2 cups water
1 can (15 oz.) chicken broth
1/2 lb. coarsely-cut white hominy corn (dried), soaked, drained
3/4 cup KRAFT Mexican Style Shredded Four Cheese with a TOUCH OF PHILADELPHIA
3 oz. pork rinds, cut into 8 pieces

Steps:

  • Cook chiles in large skillet 5 min. or until toasted, stirring frequently. Place in blender. Add garlic, tomatillos and onions to skillet; cook 10 min. or until roasted, stirring frequently. Peel garlic and add to blender with tomatillas and onions; blend until smooth.
  • Cook meat in 6-qt. pressure cooker on medium-high heat 4 min. on each side or until browned on both sides; top with tomatillo sauce. LOCK pressure cooker lid in place. Cook on medium-high heat until pressure vent locks in place and regulator begins to rock gently. Reduce heat gradually to maintain slow steady rocking motion; cook 40 to 45 min. or until meat is tender. Remove from heat. Let stand 10 min. or until pressure vent drops. Remove regulator, then lid; stir in purslane. Replace lid. Let stand 5 min. or until purslane is wilted.
  • Meanwhile, bring water, broth and hominy to boil in saucepan; cover. Simmer on low heat 55 min. or until hominy is softened and liquid is absorbed. Transfer to serving bowl; top with cheese. Serve topped with meat mixture and pork rinds.
