CREAMY TUNA PASTA BAKE



Creamy Tuna Pasta Bake image

Creamy Tuna Pasta Bake - a classic meal that everyone loves - made with mostly store-cupboard ingredients!

400 g (14 oz) rigatoni pasta
3 tbsp butter
1 onion (peeled and chopped finely)
40 g (1/3 cup) plain/all purpose flour
600 ml (2.5 cups) milk
250 g (2.5 packed cups) strong cheddar, grated
1/4 tsp salt
1/4 tsp pepper
320 g (11 oz) canned tuna (albacore tuna if possible) (drained and flaked)
330 g (11.5 oz) canned sweetcorn (, drained)
150 g (1 cup) frozen petit pois
chopped parsley to serve

Steps:

  • Heat oven to 180C/350f.
  • Boil a large pan of water, add the pasta and cook for 10 minutes.
  • Whilst the pasta is cooking, melt the butter in a saucepan, add in the onion and cook on low for 6-8 minutes until the onions are very soft.
  • Turn up the heat to medium and stir in the flour. Cook for 1-2 minutes. Slowly add the milk, using a whisk to stir (just stir, don't whisk) it in.
  • Once all the milk is incorporated, continue to heat whilst stirring until the sauce thickens. Then stir in 2/3 of the cheese until melted. Season with the salt and pepper.
  • Drain the pasta and pour into a 20x30cm baking dish. Pour over the white sauce, then add the tuna, sweetcorn and petit pois.
  • Mix together, then sprinkle on the remaining cheese.
  • Bake in the oven for 15-20 mins until the cheese is golden brown. Top with a sprinkling of parsley before serving.

This classic tuna pasta bake recipe is a student favourite and is tasty enough for a midweek family meal too. This easy recipe will show you how to make a tuna pasta bake that's really flexible, so you can customise it to suit what's in your store cupboard.

600g/1lb 5oz pasta shapes such as fusilli, penne or farfalle
50g/2oz butter
50g/2oz plain flour
600ml/20fl oz milk
½ tsp mustard powder
200g/7oz extra-mature cheddar, grated
100g tin sweetcorn, drained
100g/3½oz peas
3 spring onions, sliced
2 x 185g tins tuna in spring water, drained

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4.
  • Cook the pasta in a saucepan of plenty of boiling water according to packet instructions. Drain and set aside.
  • Meanwhile, for the sauce, melt the butter in a saucepan over a low heat and stir in the flour with a wooden spoon. Cook for 1 minute, or until the mixture darkens slightly. Slowly stir in the milk, stirring until smooth after each addition of milk. Stir in the mustard powder and continue to cook until the mixture thickens enough to coat the back of the spoon. Remove the pan from the heat and stir in most of the cheese, and all the sweetcorn, peas and spring onion. Season with salt and pepper. Stir the cooked pasta into the sauce.
  • Spoon the tuna into the bottom of an ovenproof dish. Pour over the pasta and sauce. Tap the dish gently so the sauce pours into every nook and cranny. Sprinkle over the remaining grated cheese.
  • Bake for 15-20 minutes, or until the sauce is bubbling and the top is a golden-brown. Serve immediately.

TUNA & SUNDRIED TOMATO PASTA BAKE

An easy storecupboard supper, that can be out of the oven and on the dinner table in 25 minutes

500g dried rigatoni (or any other short pasta)
2 x 400g cans chopped tomatoes
4 thyme sprigs, leaves only
300ml double cream
280g jar sundried tomatoes, drained and quartered
198g can no-added-salt sweetcorn, drained
3 x 120g cans tuna in spring water, drained
100g cheddar, grated
50g parmesan, grated

Steps:

  • Heat the grill to its highest setting and put a large saucepan of salted water on to boil. Tip in the pasta and cook for 1 min less than the pack suggests.
  • Meanwhile, make the sauce by simmering the tomatoes in a pan with a little seasoning and the thyme for about 5 mins. Pour in the cream, stir and simmer for another 4-5 mins.
  • Drain the pasta, reserving a little of the cooking water, and tip back into the saucepan. Pour over the creamy tomato sauce, the sundried tomatoes, sweetcorn and tuna. Layer into a baking dish (ours was 22 x 29cm), scattering over the grated cheddar between layers. Sprinkle the Parmesan on top and put under the grill for 5 mins until bubbling and golden.

A family favourite, this filling and warming supper is ready in under half an hour - and uses lots of storecupboard ingredients

2 x 185g cans tuna in olive oil, drained well, 1 tbsp oil reserved
2 x 400g cans chopped tomato with garlic and herbs
350g dried pasta shapes
300g broccoli, chopped into small florets
200g pack light soft cheese
100g cheddar, finely grated
25g breadcrumb
salad, to serve (optional)

Steps:

  • Heat the reserved oil from the tuna in a very large saucepan. Tip in the tomatoes plus 200ml water and simmer while you cook the pasta, following pack instructions. Add the broccoli for the final 3 mins, then drain, reserving some of the cooking water.
  • Heat the grill. Stir the soft cheese into the tomato sauce until melted, then mix with the pasta, broccoli and drained tuna, along with a little of the reserved cooking water if the sauce looks a bit thick. Season with salt and pepper.
  • Tip into an ovenproof dish and sprinkle on the cheddar and crumbs. Grill, not too close to the heat, for about 4-6 mins until golden and bubbling. Serve with a big side salad, if you like.

600g rigatoni
50g butter
50g plain flour
600ml milk
250g strong cheddar, grated
2 x 160g cans tuna steak in spring water, drained
330g can sweetcorn, drained
large handful chopped parsley

Steps:

  • Heat oven to 180C/fan 160C/gas 4.
  • Boil 600g rigatoni for 2 mins less time than stated on the pack.
  • To make the sauce, melt 50g butter in a saucepan and stir in 50g plain flour.
  • Cook for 1 min, then gradually stir in 600ml milk to make a thick white sauce.
  • Remove from the heat and stir in all but a handful of the 250g grated cheddar.
  • Drain the pasta, mix with the white sauce, two 160g drained cans tuna, one 330g drained can sweetcorn and a large handful of chopped parsley, then season.
  • Transfer to a baking dish and top with the rest of the grated cheddar.
  • Bake for 15-20 mins until the cheese on top is golden and starting to brown.

2 tablespoons unsalted butter
8 ounces cavatappi or other short spiral pasta
1 3/4 cups low-sodium chicken broth
1 cup thinly sliced shallots (from 3 to 4)
Kosher salt and freshly ground pepper
1 pound asparagus, trimmed and cut into 1 1/2-inch pieces (3 cups)
5 ounces baby arugula (4 packed cups)
1/2 cup freshly grated Parmesan, plus more for serving
1/2 teaspoon finely grated lemon zest, plus 4 teaspoons fresh juice
2 cans (5 ounces each) oil-packed tuna, drained
Extra-virgin olive oil, for drizzling

Steps:

  • Combine butter, pasta, broth, 2 cups water, and shallots in a large straight-sided skillet or stockpot; season with salt and pepper. Bring to a boil, then reduce heat to medium-high and cook, stirring frequently, until very al dente, about 5 minutes.
  • Stir in asparagus; cook until crisp-tender, 1 to 2 minutes. Add arugula, Parmesan, and lemon zest; stir to combine. Fold in tuna and lemon juice. Serve immediately, drizzled with oil and sprinkled with more pepper and Parmesan.

500g pasta
120g can tuna in olive oil
1 large onion , chopped
500ml milk
4 tbsp flour
150g extra mature cheddar , grated
½ tsp mustard powder
325g can sweetcorn , drained
2 tomatoes , halved and sliced

Steps:

  • Put the pasta in a large pan of boiling water and cook following pack instructions. Meanwhile, put the oil from the can of tuna in a saucepan with the onion and fry for 5 mins. Pour the milk on top of the onions and whisk in the flour. Keep cooking, whisking all the time, until the sauce thickens. Off the heat, stir in the tuna, 100g of the cheese and the mustard powder.
  • When the pasta is cooked, drain it and tip into the sauce along with the sweetcorn. Season, then pile into a large ovenproof dish.
  • Heat the grill to high. Tuck the tomato slices in and around the pasta so they stick out, then scatter the remaining cheese over the top. Grill for 5-10 mins until golden, crispy and bubbling.
