- Peel and chop garlic.
- Cut tomatoes into wedges and seed.
- Put tomatoes and garlic into blender, season and puree.
- Pour the tomato-garlic paste into the jar, cover the jar with airtight lid and put it into fridge.
- Can be eaten straight away, but keeps in the fridge for up to 3 months. Enjoy!
GARDEN TOMATO PASTE
I make this every year with my surplus of plum tomatoes- you need to spend a few hours close to the stove, but it's worth it! Very handy to have in small amounts in the freezer.

- Wash tomatoes and remove cores; coarsely chop- no need to peel.
- In a large heavy saucepan, combine tomatoes with remaining ingredients.
- Bring to a boil, reduce heat and simmer, covered, stirring occasionally, about 25-30 minutes or until all ingredients are soft.
- Press through a foodmill (preferable) or sieve.
- Return to a clean heavy saucepan and cook over very low heat for about 3 hours, stirring occasionally, until very thick.
- May take a bit longer.
- Cool and pack into ice cube trays.
- Freeze and transfer to freezer bags.

HOMEMADE SUN-DRIED TOMATO PASTE
This is a wonderful paste that enhances many preparations. Small jars of puree can cost quite a lot and pureeing small amounts yourself is not practical. Instead, purchase a large jar of sun-dried tomatoes and make a big batch. You can add a TBS or two of this to purchased spaghetti or pizza sauce, or smear it as it is on pizza crusts. It's also great on sandwiches, chicken and eggs. It also freezes well. I freeze mine on cookie sheets in dollops, then when frozen drop into a zip lock baggie. That way I can take out and use what I want, when I want.

- Stir for a few minutes, then drain.
