DAIRY-FREE COFFEE CREAMER (PALEO)
If you prefer a sweeter creamer, than simply add extra date syrup. Prefer it a bit more creamy? Substitute some of the milk with coconut cream. The creamer keeps for about 10 days in the refrigerator.?

Steps:
- Whisk together coconut milk and date syrup in a medium saucepan over medium heat. Cut vanilla bean in half, and scrape out seeds. Add seeds and vanilla bean to milk mixture. Turn off heat, cover the pot and steep for 30 minutes. After mixture has steeped, strain through a fine mesh sieve, pour into a glass bottle and store in the refrigerator. (If you don't have a vanilla bean on hand, simply replace it with 1 tablespoon of vanilla extract)
- For the date syrup: Place dates in a blender or food processor. Turn blender or processor on and slowly add in hot water. Leave the machine on for about 1 minute, until smooth. Pour into a glass jar and store in the refrigerator.

If you're vegan or just dairy-free, this creamer is a flavorful way to sweeten and lighten your coffee with just a few ingredients, including almond milk, maple syrup, and vanilla. You can leave out the corn starch, but it helps thicken it just a little to make it seem creamier.

- Combine almond milk, maple syrup, and cornstarch in a small saucepan. Whisk until all the cornstarch is dissolved. Continue to stir frequently over medium heat until the mixture comes to a slow boil. Remove from heat and whisk in vanilla.
- Store in an airtight jar in the refrigerator for up to 5 days. Shake before serving.

- In the cup attachment of a smoothie blender, soak the dates in the hot water for 10 minutes, until softened and cooled somewhat. (Never blend very hot liquids- explosion risk.) Add a splash of the coconut milk to the mixture. Place the top on the smoothie blender and pulse the dates until smooth. Pour through a fine sieve into a container and strain out any remaining pulp. Return the mixture to the blender cup, add the remaining coconut milk, the egg and cinnamon and blend until well combined. Pour into a storage container. The mixture can be kept refrigerated for up to a week.
