GLUTEN-FREE CREAM OF CHICKEN SOUP REPLACER
The following recipe will replace one can of soup in recipes calling for condensed cream of chicken soup. If your recipe calls for two cans of soup, just double all ingredients. Use in your recipes exactly as you would canned soup.

- Stir chicken stock, milk, and cornstarch together in a small saucepan until cornstarch is dissolved. Cook over medium heat, stirring constantly, until bubbling, about 5 minutes. Reduce heat to medium-low; continue to cook and stir until mixture is very thick, about 5 minutes. Remove from heat.

HOMEMADE SUBSTITUTES FOR CONDENSED SOUPS
We've really been trying to avoid GMOs in my family. That tends to mean very few prepackaged foods unless they are organic. Organic condensed soup runs $2-3 a pop, which is LUDICROUS to me! So I came here (of course) and found Recipe#278160. These are my easier, lower fat versions.

Steps:
- Place saucepan over medium heat.
- For CREAM OF MUSHROOM or CREAM OF CELERY: melt butter and sauté veggies.
- For ALL: combine starch, liquid, and spices in a container with a tight fitting lid. Shake vigorously until well combined. Add to saucepan and stir constantly until thick.
- To finish CHEDDAR CHEESE: Remove saucepan from heat. Add cheese and stir until melted.

I swiped this from the Food networks low carb and loving it, green bean casserole recipe. Isolating the parts that recreate the Consensed cream of mushroom soup part and fiddled a bit with it.

- Heat the oil in a large pan over medium-high heat.
- Add onion, mushrooms, salt, garlic, and pepper and cook, stirring, about 2 minutes.
- Add the chicken broth and thyme and cook until almost all the liquid is evaporated, about 3 to 4 minutes.
- Add the sour cream, and toss to combine.

- In a medium bowl combine all ingredients and mix well with a wire whisk.
- Store in an airtight container.
- To make soup stir together 1/3 cup of the dry mix and 1& 1/4 cup water in a saucepan.
- Cook and stir until thickened.
- You can add 1 can of diced cooked chicken or turkey, frozen broccoli, or dried tomato powder or paste-- whatever you can think of.
- You can boil dried mushrooms in the water called for for a cream of mushroom soup.
- This mixture will make a total of 9 cans of condensed soup.

CONDENSED CREAM OF SOUP SUBSTITUTE
I use this recipe as a substitute for the canned cream of soups in recipes. I almost never keep that stuff on hand, because its full of sodium, and just yucky. The recipe calls for chicken broth. I use chicken broth for the cream of chicken soup substitute. To make a heartier soup, like the cream of mushroom, I use beef broth. Sometimes I like to add in a little shredded chicken, sliced mushrooms, celery, etc. Use your imagination. I've never tried this soup by itself, I only use it in recipes, and its a great substitute!!! The recipe always tastes better than when I use the canned stuff. Enjoy!

- Stir in flour; keep stirring until smooth and bubbly.

- Taste and add salt and pepper, as needed.
- Use in casseroles in place of condensed cream soups.
- Can be varied by using vegetable broth, sauteéd chopped celery, celery seed, or sauteéd chopped mushrooms.
