HOW TO MAKE HOMEMADE SRIRACHA SAUCE
Not only is making your own hot sauce (also known as rooster sauce) at home possible, it's really fun and there's hardly any work involved. Serve it on just about anything.

Steps:
- Chop jalapeno and serrano peppers, retaining seeds and membranes, and place into a blender with garlic, brown sugar, salt, and water. Blend until smooth, pulsing several times to start.
- Transfer puree into a large glass container such as a large jar or pitcher. Cover container with plastic wrap and place into a cool dark location for 3 to 5 days, stirring once a day. The mixture will begin to bubble and ferment. Scrape down the sides during each stirring. Rewrap after every stirring and return to a cool, dark place until mixture is bubbly.
- Pour fermented mixture back into blender with vinegar; blend until smooth. Strain mixture through a fine mesh strainer into a saucepan, pushing as much of the pulp as possible through the strainer into the sauce. Discard remaining pulp, seeds, and skin left in strainer.
- Place saucepan on a burner and bring sauce to a boil, stirring often, until reduced to your desired thickness, 5 to 10 minutes. Skim foam if desired.
- Remove saucepan from heat and let sauce cool to room temperature. Sauce will thicken a little when cooled. Transfer sauce to jars or bottles and refrigerate.

HOMEMADE SRIRACHA
Steps:
- Bring a large pot of water to a boil over high heat. Add the chiles and let cook 2 to 3 minutes, then drain and cool. Wearing clean kitchen gloves, cut off and discard the stems and set aside the chiles.
- Heat the oil in a skillet pan over medium-high heat, then fry the shallots until translucent. Add the tomatoes and bring to a simmer, then turn off the heat and let cool.
- Pour the tomato mixture into a blender and add the chiles, vinegar, fish sauce, sugar and garlic and blend until smooth. Transfer to a clean jar or bottle and store in the fridge for up to 10 days.
HOW TO MAKE KETCHUP
Steps:
- Heat a 4-quart sauce pot over medium high heat. Add olive oil and onions, sauté until translucent, about 8 minutes. Add garlic and sauté until fragrant, about 2 minutes. Add tomatoes, tomato paste, sugar, molasses and cider vinegar. Bring to a slow boil, lower to a simmer and using a spoon crush the whole tomatoes. Add remaining ingredients and continue to simmer, uncovered for 45-55 minutes, stirring occasionally, until very thick. Make sure to keep an eye on it and stir it to keep it from scorching. Use an immersion blender to puree the ketchup. If you don't have an immersion blender, transfer it carefully to a blender or food processor and process until smooth. (Optional: Strain through a fine mesh strainer.) Chill in refrigerator for at least 2 hours. The ketchup will continue to develop flavor and thicken. Enjoy on everything! Notes:1. Keep refrigerated in an airtight container up to a month.2. Sweeteners and spices and be adjusted to taste.3. Possible flavor additions: balsamic vinegar reduction, Sriracha, roasted garlic or roasted red pepper.
HOMEMADE SRIRACHA KETCHUP
My new love is sriracha! As I was eating some fries the other day I was dipping in ketchup then sriracha sauce, they tasted so good combined I thought I need to make this. So I have a recipe for home-made ketchup added my sriracha sauce and now I have a new condiment fav!! Adjust sriracha to your liking. ;)

Steps:
- 1. Place all ingredients in a saucepan and bring to a simmer, stirring occasionally for 1 hour till mix becomes thick. Remove onion and cinnamon stick and discard. At this point taste, I added a bit more sriracha sauce because I like it hot. Let cool for 1/2 hour then refrigerate. Can be refrigerated for one week.
- 2. Great for gifting, or bring to cookouts. When cooking hamburgs and hotdogs I like a lot of different condiments. This is perfect! If ya cant stand the heat this is still a wonderful recipe for homemade ketchup without the sriracha.
SUNNY'S HONEY-SRIRACHA DIPPING SAUCE
Steps:
- In a sauce pot on medium heat, add the sriracha, ketchup, orange juice, brown sugar, honey, a little pinch of salt and plenty of grinds of black pepper. Once it bubbles, reduce the heat to low and allow the sauce to simmer until thickened, about 15 minutes.
- Serve hot right away or at room temperature, or refrigerate and serve cold. Great for wings, veggies, fries or other dippables.

- In the bowl of a food processor, combine carrot, broccoli, parsnip, beet, and garlic until thoroughly chopped, stopping to scrape down the sides as necessary. Add the eggs, seasonings, and breadcrumbs and continue to process until a thick paste forms.
- Spread the mixture out on a parchment lined baking sheet so it is about 1/4 inch thick. Cover with plastic wrap and refrigerate 30 minutes or up to overnight.
- Preheat the oven to 400ºF. Line a large baking sheet with parchment or a silicone baking mat. Place about 3/4 cup breadcrumbs in a shallow bowl.
- Use a cookie cutter or small biscuit cutter to cut the mixture into shapes. Gently toss each nugget in the extra breadcrumbs, pressing to adhere. Place the coated nuggets on the prepared baking sheet. Cut out the shapes closely to avoid too much waste. There will still be a lot of leftover veggie mixture. You can carefully reshape this and cut out more nuggets if you’d like, though they may not hold together as well and will likely need to be baked in batches.

- Put the garlic cloves in a small saucepan and add cold water just to cover. Bring to a boil, immediately drain, cool the garlic under running water, and return it to the saucepan. Cover with cold water and repeat the blanching process. Thinly slice the blanched garlic and combine with the jalapeños and vinegar in a larger pot. Bring to a boil, cook for 3 minutes, and remove from the heat. Add the brown rice syrup and salt and stir to combine. Let the mixture sit undisturbed for 1 hour to steep and cool.
- Whiz the mixture in a powerful blender until smooth (it's okay if all the seeds don't blend in). Return the pureed sauce to the pot, bring to a boil, lower the heat, and simmer for 10 to 15 minutes, skimming off any foam, until the sauce is slightly reduced and has some body.
- In a small bowl, dissolve the arrowroot with 1 tablespoon of lukewarm water. Whisk into the simmering sauce and cook for 2 minutes more, or until the sauce is nicely thickened (it should be slightly thinner than ketchup). Remove the sauce from the heat, let it cool slightly, and stir in the fish sauce. Store in a screw-top jar or bottle in the refrigerator for up to 6 months.
