Blistering tomatoes, onions, peppers and garlic in the oven gives this salsa an irresistible smokiness.

Number Of Ingredients 17

2 large tomatoes
cut into wedges
1 onion
peeled and cut into 6 wedges
white or yellow
1 bulb garlic
cut to expose ends of cloves
2 jalapeño peppers
Non-aerosol cooking spray
2 teaspoons light agave or honey
A pinch cinnamon
about ⅛ teaspoon
Salt and black pepper
1 teaspoon dried oregano
1 teaspoon pimenton/smoked paprika or paprika
1 lime
A small handful cilantro

Steps:

  • Preheat broiler to high
  • Arrange the tomatoes, onion, garlic and jalapeños on foil-lined tray and coat with cooking spray
  • Char the ingredients and cool
  • Squish the garlic from the skins and peel the peppers and seed them
  • Place the tomatoes, onions, garlic, peppers, agave, cinnamon, salt and pepper, oregano, paprika, juice of lime and cilantro in food processor
  • Process to form a thick salsa

2 lbs fresh tomatoes
1 large onion (sliced)
2 jalapeno peppers
1 ⁄4 cup fresh cilantro (chopped)
4 cloves of garlic (minced)
Sea salt and freshly cracked pepper (to taste)

Steps:

  • Preheat the broiler to high and move an oven rack near the top of the oven.
  • Place the tomatoes, onion slices, and jalapenos on a baking sheet.
  • Place into the oven under the broiler and lightly char the veggies on all sides. Remove from the oven and let cool.
  • Remove the stems from the jalapenos and the cores from the tomatoes.
  • Place the cooled veggies in the blender with cilantro, minced garlic, sea salt, and freshly cracked pepper, to taste.
  • Blend for about 10 seconds, or until desired consistency.
  • Taste and re-season with sea salt and freshly cracked pepper, to taste, if needed.
  • Pour into a container and chill.
  • Serve with chips. Enjoy.

1 cup wood chips, preferably hickory, soaked for 15 minutes
2 lbs medium plum tomatoes, cored and halved pole to pole (10 to 12)
2 large jalapeno chiles
2 teaspoons vegetable oil, plus additional for brushing cooking grate
3 tablespoons minced red onions
1/2 cup chopped fresh cilantro leaves
1 teaspoon smoked paprika
1 teaspoon sea salt
1/4 teaspoon fresh ground black pepper
2 tablespoons extra virgin olive oil
1 teaspoon sugar
1 -2 tablespoon fresh lime juice, to taste

Steps:

  • 1. Place wood chips in small disposable aluminum pan; set pan on edge of grill burner and position cooking grate. Ignite grill, turn all burners to high, cover, and heat until very hot and chips are beginning to smoke, about 15 minutes. (If chips ignite, use water-filled spray bottle to extinguish.) Scrape grate clean with grill brush.
  • 2. Place tomato halves and chiles in bowl; drizzle with vegetable oil and toss to coat evenly. Scrape grill and spray with grill spray. Place tomatoes cut side down on grill with lid down, checking often to make sure they are not burning. Grill tomatoes until evenly charred and beginning to soften, 4 to 6 minutes. Using tongs, flip tomatoes and grill until skin sides are charred and tomato juices bubble, 4 to 6 minutes more. While tomatoes are cooking, grill chiles until skins are blackened on all sides, 8 to 10 minutes, turning as needed.
  • 3. Transfer vegetables to platter and let cool in single layer, at least 10 minutes.
  • 4. Stem, peel, seed, and finely chop chiles. Pulse tomatoes in food processor until broken down but still chunky, about six 1-second pulses. Transfer tomatoes to bowl; stir in chiles, onion, cilantro, salt, pepper, olive oil, sugar and lime juice as needed to balance flavors. Let stand for 10 minutes and serve. (Salsa can be refrigerated in airtight container for up to 2 days; bring back to room temperature before serving.).

3 tablespoons red wine vinegar

Steps:

  • Grill the tomatoes, corn, peppers and onion, covered, over medium heat for 10-12 minutes or until tender, turning occasionally. Allow vegetables to cool slightly. Remove corn from cobs; transfer to a large bowl. Chop the remaining vegetables and add to corn., In a small bowl, whisk the cilantro, oil, vinegar, garlic, salt, sugar and pepper. 1 cup soaked mesquite wood chips
2 medium onions
12 garlic cloves, peeled
3 teaspoons barbecue seasoning, divided
2 pounds tomatillos, husks removed (about 12)
2 pounds plum tomatoes (about 8)
6 jalapeno peppers
1-1/2 cups cider vinegar
1-1/4 cups packed brown sugar
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/3 cup minced fresh cilantro

Steps:

  • Add wood chips to grill according to manufacturer's directions. , Cut onions in quarters; place in a small bowl. Add garlic and 1-1/2 teaspoons barbecue seasoning; toss to coat. Arrange on grilling grid; place on greased grill rack. Grill, covered, over medium heat 10-15 minutes or until tender, turning occasionally., Meanwhile, cut tomatillos, tomatoes and jalapenos in half; place in a large bowl. Add remaining barbecue seasoning; toss to coat. Grill in batches, covered, over medium heat 4-6 minutes or until tender, turning occasionally., When cool enough to handle, chop vegetables. Transfer to a Dutch oven; stir in vinegar, brown sugar, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes or until slightly thickened. Immediately stir in cilantro. , Carefully ladle hot mixture into 4 hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

6 ripe tomatoes , halved
1 garlic clove , crushed
juice 1 lime
1 tbsp extra-virgin olive oil
2 tsp chipotle paste
1 red onion , finely chopped
20g pack coriander , roughly chopped

Steps:

  • Heat grill to high. Put peppers onto a baking sheet, skin-side up, grill until skins are black, then put into a bowl and cover. Leave until cool, then peel skins away.
  • Scoop out and discard tomato seeds. Put tomatoes into a food processor with garlic, lime juice, oil and chipotle paste. Add peppers, then pulse until chunky. Stir onion and coriander through, then serve.

Smoky, Spicy Tomatillo Salsa Verde Aka Canned Green Hell! image

I wanted to preserve my Recipe #97531 and came up with this. Adding the lemon, lime juice and vinegar for acidity to preserve the salsa. Green tomatoes can be used in place or along with the tomatillos. After opening the canned salsa you can drain some of the liquid so not to watery. Do NOT thicken with flour or cornstarch. FYI- don't like heat replace the hot chili's with bell pepper that you roasted.

3 lbs tomatillos, cut into quarters
2 habanero peppers, seeds and all
2 onions, diced
3 garlic cloves
2 -4 chipotle chiles in adobo
1 cup fresh parsley (I used all three) or 1 cup fresh basil (I used all three)
1/4 cup bottled lemon juice
1 -2 teaspoon cumin (optional)
1/4 cup vinegar
2 teaspoons salt
1 teaspoon black pepper
1 lime, very fine shredded zest and juice

Steps:

  • Prepare canner, jars and lids.
  • In a food processor place the first 6 ingredients, pulsing till very small pieces. It will be a tight fit. You can start to pulse to give more room then add additional ingredients.
  • In a large stainless saucepan combine all the ingredients.
  • Bring to a boil, reduce heat to medium high heat, stirring often to prevent sticking.
  • Cook for 10 minutes.
  • Ladle hot salsa into hot jars leaving 1/2 inch head space.
  • Wipe rims, center lids and screw on band to fingertip tight.
  • Place jars in canner, cover and bring canner to a boil.
  • Process for 15 minutes.
  • Turn off heat, remove lid of canner and let jars sit for 5 additional minutes.
  • Remove jars, cool, label and store.

8 large dried guajillo chiles or New Mexico chiles, stemmed, seeded, coarsely torn
2 cups hot water
1/2 medium onion, halved lengthwise through core end
3 garlic cloves, peeled
1 to 2 chipotle chiles and 1 to 2 teaspoons adobo from canned chipotles in adobo
1/4 cup chopped fresh cilantro
2 teaspoons fresh lime juice
Coarse kosher salt

Steps:

  • Place torn chiles in bowl. Add 2 cups hot water; soak at least 2 hours or overnight. Drain chiles, reserving soaking liquid.
  • Heat small nonstick skillet over medium heat. Add onion and garlic to dry skillet; cook until browned in spots, about 6 minutes for garlic and 10 minutes for onion. Trim core from onion. Place onion and garlic in blender. Add drained chiles, 1 cup soaking liquid, 1 chipotle chile, 1 teaspoon adobo, cilantro, and lime juice; puree until smooth. Add remaining chipotle and 1 teaspoon adobo, if desired; puree. Transfer to bowl. Season to taste with coarse salt. DO AHEAD: Can be made 1 week ahead. Cover and chill.
