SHEET PAN SAUSAGE AND MUSHROOM PIZZA



Sheet Pan Sausage and Mushroom Pizza image

This giant rectangular pizza is made with from-scratch dough that's easy to work with and gets fluffy, chewy and unbelievably crisp in the oven. For our toppings, we opted for spicy sausage and meaty mushrooms -- a classic flavor profile that's universally loved. Putting the cheese underneath the sauce helps the thicker crust stay crisp. Tip: If you make a lot of pizza, invest in a black steel pan. It gets wonderfully hot and helps crisp up the crust.

4 cups all-purpose flour (see Cook's Note)
1 tablespoon sugar
2 teaspoons kosher salt
1 1/4 teaspoons active dry yeast
1 1/2 cups warm water (about 100 degrees F)
1/3 cup plus 2 tablespoons extra-virgin olive oil
One 15-ounce can crushed tomatoes
2 garlic cloves, grated
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
12 ounces hot Italian sausage, casings removed (about 4 links)
8 ounces cremini mushrooms, trimmed and thinly sliced
6 tablespoons freshly grated Parmesan
1 pound part-skim mozzarella, thinly sliced
Torn fresh basil leaves, for serving

Steps:

  • For the dough: combine the flour, sugar, salt and yeast in the bowl of a stand mixer fitted with the dough hook. Combine the warm water and 2 tablespoons olive oil in a liquid measuring cup. Turn the mixer to low and add the water mixture, mixing until a loose ball forms. (You can also do this by hand: Combine the dry ingredients in a large bowl. Make a well in the center, then add the water and oil and stir with a wooden spoon.)
  • Increase the speed to medium-high and knead the dough until smooth and slightly tacky, about 7 minutes. (If using your hands, gather the dough into a ball, turn it out onto a floured surface and knead, dusting your hands and the surface as needed with flour, until the dough is smooth and slightly tacky, about 5 minutes.)
  • Pour the remaining 1/3 cup olive oil into an 11-by-17-inch rimmed baking sheet or rectangular black steel pan. Transfer the ball of dough to the pan, turning to coat it with oil. Cover loosely with plastic wrap and let rise in a warm place until the dough fills about two-thirds of the pan, 1 1/2 to 2 hours.
  • Slide your hands under the dough and lift, gently stretching it to fit the pan. (It's OK if it doesn't stretch to the corners.) For the final rise, loosely cover with plastic wrap and set aside until slightly puffy, 30 to 45 minutes.
  • While the dough rises, position the oven racks in the upper and lower thirds of the oven. If you have a pizza stone, put it on the lower rack. Preheat the oven to its highest bake setting, 500 to 525 degrees F. Once the oven comes to temperature, heat for at least 1 hour before baking your pizza.
  • For the pizza: stir the crushed tomatoes, garlic, 1/2 teaspoon salt and a few grinds of black pepper together in a medium bowl or 2-cup liquid measuring cup until combined.
  • Heat the oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up the meat with a wooden spoon, until it is browned at the edges and no longer pink, about 5 minutes.
  • Transfer to a bowl with a slotted spoon, leaving the rendered fat in the pan. Add the mushrooms to the hot pan and cook, stirring occasionally, until most of the liquid has evaporated and the mushrooms are tender, about 4 minutes. Remove to a separate bowl to cool.
  • When the dough has risen and is ready for topping, sprinkle 3 tablespoons of the Parmesan evenly over it all the way to the edges. Arrange the mozzarella over the dough leaving a 1/2-inch border. Spoon the tomato sauce over the cheese leaving some of the cheese exposed. Sprinkle the cooled sausage and mushrooms over the sauce, then sprinkle with the remaining 3 tablespoons Parmesan.
  • Put the pizza pan directly on the pizza stone if using, and bake until the crust is browned at the edges and the cheese is bubbling and browned in spots, 15 to 20 minutes. Remove the pan to a wire rack to cool slightly before removing the pizza from the pan, about 10 minutes. Top with torn basil, cut into squares and serve.

Two 16-ounce balls homemade or store-bought pizza dough, at room temperature
3/4 cup frozen peas, defrosted
Pinch fine sea salt
Extra-virgin olive oil, for drizzling
1/2 cup basil pesto
2 balls burrata cheese
2 tablespoons freshly grated Parmesan cheese
15 basil leaves
Freshly ground black pepper, for sprinkling
1/4 cup organic tomato paste
1 1/2 tablespoons extra-virgin olive oil
1/2 teaspoon fine sea salt
1/4 teaspoon freshly cracked black pepper
1 1/2 cups shredded low-moisture, part-skim mozzarella
4 to 5 slices prosciutto
8 basil leaves
1/2 cup arugula
Flaked sea salt, for sprinkling

Steps:

  • Preheat the oven to 550 degrees F, or to as high as your oven will go.
  • Drizzle 1 to 2 tablespoons oil over a 13-x-18-inch sheet pan. Place one ball of on the sheet pan and gently stretch out towards the edges; it should stretch to within 1 inch of the edge of the pan all the way around. If the dough resists stretching and springs back, set it aside for a few minutes to relax, then try again. Repeat this with the other ball of dough on a second sheet pan.
  • For the pesto, pea and burrata pizza: Combine the peas and salt in a small bowl and mash with a fork. Set aside.
  • Drizzle one stretched pizza crust with 1 to 2 tablespoons oil, then bake it until the edges start to turn golden and the middle puffs up slightly, about 7 minutes. Remove the crust from the oven and top with the pesto, peas and another drizzle of oil. Bake until browned around the edges and bubbling, about 5 minutes longer.
  • Remove the pizza from the oven. Tear the burrata into chunks and dot it over the pizza. Sprinkle with the Parmesan, basil and black pepper. Slice and serve.
  • For the Margherita with prosciutto pizza: Stir the tomato paste, oil, salt and pepper together in a small bowl. Spread the mixture over the other stretched pizza dough in a thin even layer. Sprinkle with the mozzarella.
  • Place in the oven and bake until puffed and golden around the edges, 8 to 10 minutes. Remove from the oven and top with the prosciutto, basil leaves and arugula. Drizzle with a little more oil and sprinkle with pepper and flaked salt. Slice and serve.

Steps:

  • Allow the dough to sit for 20 minutes covered at room temperature. Then roll out the dough to approximately 9 x 13 inches - the size of a quarter sheet pan.
  • Preheat the oven to 500°F and position the oven rack in the upper 1/3 position.
  • Add 2 tablespoons olive oil to the sheet plan, and gently press the dough into the oiled pan. Drizzle the remaining olive oil over the dough. Spread the sauce on top, then add the mozzarella cheese, cherry tomatoes and basil.

Steps:

  • Make the dough and let rise, covered, on an 11-by-17-inch rimmed baking sheet coated with 3 tablespoons olive oil instead of in a bowl. At the end of the rising time, preheat the oven to 450˚ F (use the convection setting, if available) with a pizza stone, baking steel or inverted large baking sheet on a rack in the lower third of the oven.
  • Gently stretch and press the dough to cover the pan as much as possible. Let stand 30 minutes, then gently press and stretch the dough again, if needed, to cover the pan.
  • Top the dough with the pizza sauce, half of the mozzarella, the Canadian bacon, pineapple, bell pepper and red onion, then sprinkle with the remaining mozzarella.

1 1/2 cups (355 grams) warm water (90 to 110 degrees F, just warm to the touch)
3 tablespoons extra-virgin olive oil, plus more for the bowl
2 small heads garlic, peeled (about 1/2 heaping cup cloves)
2 sprigs fresh rosemary plus 2 teaspoons chopped
2 sprigs fresh thyme plus 2 teaspoons chopped
1 dried bay leaf
1 cup extra-virgin olive oil
1/4 teaspoon crushed red pepper flakes

Steps:

  • For the dough: Combine the bread flour, whole wheat flour, sugar, yeast and salt in the bowl of a stand mixer. Mix with the dough hook attachment to combine. Add the water and olive oil and mix on low speed just until the dough comes together. Increase the speed to medium-high and mix, adding just enough additional flour so that the dough no longer sticks to the bowl, until the dough is smooth and slightly sticky, 7 to 10 minutes. (Alternatively, mix by hand and knead on a lightly floured surface.) Place the dough in an oiled bowl and turn it once or twice to coat it in the oil. Cover the bowl with plastic wrap and let rise at room temperature until it has doubled in size, 1 to 2 hours.
  • For the garlic oil: Meanwhile, combine the garlic cloves, rosemary sprigs, thyme sprigs, bay leaf and oil in a small saucepan. Bring to a simmer over the lowest heat and cook until the cloves are light golden and completely tender, about 30 minutes. Let cool. Remove the herbs and stir in the red pepper flakes.
  • For the pizza: Preheat the oven to 450 degrees F.
  • Punch the dough down. Brush a half-sheet pan with the olive oil (not the garlic oil) and pat out the dough to the edge. (This might seem like a lot of olive oil, but it'll make it good.) Set aside to rise, uncovered, for another 20 minutes or so.
  • Combine the tomatoes, eggplant, bell pepper, squash and zucchini in a large colander. Sprinkle with 1 teaspoon salt and toss well. Let drain in the sink while the dough rises.
  • Brush the dough with 2 tablespoons garlic oil and spread the marinara over the top in a very thin layer. Sprinkle with the chopped rosemary and thyme (reserved from making the garlic oil). Fish the garlic cloves from the oil and smooth and scatter them over the top. Pat the vegetables dry, then alternate the slices of the tomatoes, eggplant, bell pepper, yellow squash and zucchini over the sauce, shingling them in a pretty pattern. Tear the burrata in small shreds over the top. Drizzle with another tablespoon or two of the garlic oil. Bake the pizza on the bottom rack of the oven until the bottom crust is crisp and the top is golden, about 25 minutes.
  • Scatter the basil and arugula over the top. Drizzle with 2 tablespoons of the garlic oil and sprinkle with the Parmesan and flaky salt.

It's time for a pizza party and with my sheet pan pizzas: you'll be able to satisfy all of your guests' cravings whether they go for veggie pizza, classic pepperoni or my personal favorite-- barbecue chicken pizza. Prepared pizza dough dressed up with other store-bought ingredients means this meal comes together quickly.

Three 1-pound balls refrigerated pizza dough, at room temperature (see Cook's Note)
Olive oil, for greasing the pans
3/4 cup favorite barbecue sauce, plus more for garnish (I like smoky Kansas City sauce)
2 cups shredded cooked chicken breast
1/4 cup thinly sliced red onion
1/4 cup fresh cilantro leaves, chopped, plus more for garnish
2 cups shredded Colby-Cheddar cheese blend
2/3 cup pizza sauce
Half a 4-ounce package sliced turkey pepperoni
2 cups shredded Italian blend cheese
1/4 cup torn fresh basil leaves
2/3 cup pizza sauce
Half an 8-ounce package sliced mushrooms
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
2 cups fresh baby spinach
2 cups shredded Italian blend cheese

Steps:

  • Preheat the oven to 450 degrees F. Grease 3 large rimmed baking sheets. Place one dough ball in each baking sheet, and stretch and press the dough to fit into the pan.
  • For the BBQ Chicken Pizza: Toss 1/4 cup of the barbecue sauce with the chicken. Spread the remaining 1/2 cup barbecue sauce over one pizza dough. Top with the chicken, red onion, cilantro and cheese.
  • For the Pepperoni Pizza: Spread the pizza sauce over another pizza dough. Top with pepperoni and cheese.
  • For the Veggie Pizza: Spread the pizza sauce over the third pizza dough. Top with mushrooms, both bell peppers, spinach and cheese.
  • Bake all of the pizzas until the crusts are browned and crispy and the cheese is melted, rotating the pans as needed to cook the pizzas evenly, 20 to 25 minutes. Let the pizzas stand 5 minutes before cutting. Drizzle the BBQ Chicken Pizza with additional barbecue sauce and sprinkle with cilantro, if desired. Sprinkle the Pepperoni Pizza with fresh basil.
