- Preheat oven to 450 degrees F (230 degrees C).
- Spread pesto on pizza crust. Top with tomatoes, bell peppers, olives, red onions, artichoke hearts and feta cheese.

HOMEMADE MEDITERRANEAN PIZZA WITH PESTO SAUCE
The flavors of the Mediterranean come alive in this gourmet pizza. Pesto as the base lays the foundation for an amazing healthy-ish recipe. You'll love the sweet taste of sun-dried tomatoes, the brininess of kalamata olives, the tanginess of feta cheese, the creaminess of fresh mozzarella, and of course ground lamb.

- Add the ground lamb with spices in a medium-size bowl. Mix until thoroughly combined.
- Roll into small balls about 3/4 of an inch around.
- Heat a cast iron skillet over medium-high heat and when hot add the olive oil. Place the lamb meatballs in the skillet giving space between them.
- Cook for about 4 minutes turning them a couple of times until they are browned.
- Remove from the pan and set aside for adding to the pizza.
- Preheat the oven to its hottest setting - 550°F is preferred (or as hot as your oven will go) and place a pizza stone in the oven to preheat as well.
- On a floured surface, flatten out the ball of dough. With a rolling pin, begin from the center and roll out in all directions until you have the desired thickness.
- Place the pizza dough on a piece of parchment paper.
- Spoon on the pesto sauce to the rolled-out dough and smear around leaving one inch of the outer crust free of sauce.
- Add the lamb meatballs, sundried tomatoes, olives, and cheeses.
- Remove the pizza stones from the oven. Carefully place the parchment paper with the pizza onto the stone.
- Baked in the oven for 10-15 minutes or until the crust and cheeses are both golden brown.
- Remove from the oven and add the spinach. Slice and serve.

- Preheat oven to 425°. Place dough on a lightly floured surface; let rest for 10 minutes. Knead in 1/4 cup cheese, basil and oregano. Roll into a 12-in. circle; place on a greased 14-in. pizza pan. EASY MEDITERRANEAN PIZZA
This is a great recipe for a different kind of pizza. It's heavy on the flavors, but you don't feel stuffed after eating it. The recipe was actually born of an experiment performed by myself and a friend on a Sunday night. Be creative, though... last time I made it, I spread pine nuts over the surface and it was terrific!

- Preheat oven to 350 degrees F.
- Brush pizza shell with olive oil.
- Spread pesto sauce thoroughly over the surface of the shell, leaving the edge as a crust.
- Top with olives, sundried tomatoes, artichoke hearts, wilted spinach leaves and cover with cheeses.
- Place pizza directly on oven rack for 10 minutes, or until cheese is melted from centre to edge.
- Allow to cool for 5 minutes before slicing.

PIZZA WITH HOMEMADE SAUCE

Steps:
- Tip the flour into a bowl, then stir in the yeast and 1 tsp salt. Make a well in the centre and pour in 200ml warm water (make sure it's not too hot) along with the oil. Stir together with a wooden spoon until you have a soft, fairly wet dough.
- Tip the dough out onto a lightly floured surface and knead for 5 mins until smooth. Cover with a tea towel and set aside for an hour or so or until the dough has puffed up and doubled in size. You can also leave the rough, unkneaded dough in the bowl, cover with a tea towel and leave in the fridge overnight and the dough will continue to prove on its own.
- Meanwhile, make the tomato sauce. Put the oil in a small pan and fry the garlic briefly (don't let it brown), then add the passata and simmer everything until the sauce thickens a little. Leave to cool.
- Once the dough has risen, knead it quickly in the bowl to knock it back, then tip out onto a lightly floured surface and cut into two balls. Roll out each ball into a large teardrop that is very thin and about 25cm across (teardrop shapes fit baking sheets more easily than rounds).
- Heat oven to 240C/220C fan/ gas 9 with a large baking sheet inside. Lift one of the bases onto another floured baking sheet. Smooth the sauce over the base with the back of a spoon, scatter over half the mozzarella, drizzle with olive oil and season. Put the pizza, still on its baking sheet, on top of the hot sheet in the oven and bake for 8-10 mins until crisp.
