HOMEMADE KFC CRISPY STRIPS
The Colonel used to sell chicken nuggets that were tasty but he thought why not prepare fresh chicken strips of all white meat and that is how the Colonel's Crispy Strips were born. Extra crispy with the ultimate in crunch. This recipe is perfect for chicken tenders that are increasingly popular sold at Costco and other stores.

- Cut 6 chicken Breasts into strips, or you can buy chicken tenders in the store. Marinate them overnight. Preheat the shortening in a deep-fryer to 350℉ (180℃). Beat 1 egg and 1 cup of milk. Dip the chicken into the egg mixture. Dip the the chicken into the coating and then double dip the chicken into the egg mixture again. Dip into the bread crumbs in the end. Fry in fryer a few at a time until they are golden brown about 5 minutes or until they float. Remove the chicken to a rack and allow to drain for 5 minutes. The Colonel has on occasion sold Hot and Spicy Strips that run for short promotions. The difference is the second dip, it is dipped into hot sauce then breaded again and then fried, just like the original crispy strips. For the barbecue strips make the strips the original way and then dip into the Honey Barbecue Dipping Sauce.

Steps:

- Marinate them overnight. I suggest (CopyCat) Kentucky Fried Chicken Marinade #75408.
- Preheat the shortening in a deep-fryer to 350 degrees.
- Beat 1 egg and 1 cup of milk.
- Dip the chicken into the egg mixture.
- Dip the the chicken into the coating and then double dip.
- Fry in fryer a few at a time till they are golden brown about 5 minutes or until they float.
- Remove the chicken to a rack and allow to drain for 5 minutes.
CRISPY CHICKEN STRIPS

- Submerge the chicken strips in the buttermilk for 15 to 20 minutes (or longer if you'd like).
- In another bowl, combine the flour and seasoning salt (or other seasonings if you prefer). Mix this together well. Next, gradually drizzle 1/4 to 1/2 cup of the buttermilk into the flour mixture and stir lightly with a fork as you add it to achieve clumps.
- Heat about 1 inch vegetable oil in a large skillet over medium-low to medium heat.
- Remove a few of the buttermilk-soaked chicken strips and place them in the flour mixture, turning them over to coat thoroughly. Place them on a plate. Continue coating the chicken strips until they are all ready to cook.
- When the oil is sufficiently heated, begin cooking the strips a few at a time. Cook them for about a minute and a half or so on each side. When golden and crispy and the chicken is done, remove them to a paper-towel-lined plate. Do not allow them to burn.
- Serve with your favorite dipping sauce. Yum!
CRISPY FRIED CHICKEN
Steps:
- Season the chicken pieces with Essence. Pour 2 cups of the buttermilk over the chicken and cover with plastic wrap. Place the chicken in the refrigerator and marinate for 1 hour.
- Heat the oil in a large cast iron skillet. Remove the chicken from the refrigerator and drain. Season the flour with Essence. In a shallow bowl, whisk the eggs with the remaining buttermilk. Dredge each piece of chicken in the seasoned flour. Dip each piece of chicken in the egg wash, letting the excess drip off. Dredge the chicken pieces back in the seasoned flour, coating each piece of the chicken completely. Carefully lay the chicken in the hot oil. Fry the chicken for 4 to 6 minutes on each side, or until golden brown and the juices run clear. Remove the chicken from the oil and drain on a paper-lined plate. Season the chicken with salt and pepper.
- Combine all ingredients thoroughly.
EXTRA-CRISPY FRIED CHICKEN STRIPS
These extra-crispy fried chicken tender strips are sure to satisfy even your pickiest eater! Enjoy with dipping sauces like honey or honey mustard, or eat them plain!

- Combine flour, salt, and pepper in a medium bowl. Mix eggs and water together in a small bowl.
- Place some chicken strips in the flour mixture to coat, then gently shake to remove any excess flour. Coat strips in egg. Return to the flour mixture and coat again; repeat with egg mixture. Coat once more in the flour mixture, placing strips on a plate while you continue with remaining chicken.
- Let strips sit for 5 minutes to allow flour to set.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C); oil is ready if you drop some water in and it sizzles.
- Working in batches if needed, place strips in the hot oil. Cook for 8 minutes. Turn over and continue to cook until golden brown, no longer pink in the centers, and juices run clear, about 8 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Place strips on a paper towel-lined plate to drain excess grease.

- Trim any excess skin and fat from the chicken pieces.
- Preheat the shortening in a deep-fryer to 350 degrees.
- Combine the beaten egg and milk in a medium bowl.
- In another medium bowl, combine the remaining coating ingredients (flour, salt, pepper and MSG).
- When the chicken has marinated, transfer each piece to paper towels so that excess liquid can drain off.
- Working with one piece at a time, first dip in egg and milk then coat the chicken with the dry flour mixture, then the egg and milk mixture again, and then back into the flour.
- Be sure that each piece is coated very generously.
- Stack the chicken on a plate or cookie sheet until each piece has been coated.
- Drop the chicken, one piece at a time into the hot shortening.
- Fry half of the chicken at a time (4 pieces) for 12-15 minutes, or until it is golden brown.
- You should be sure to stir the chicken around halfway through the cooking time so that each piece cooks evenly.
- Remove the chicken to a rack or towels to drain for about 5 minutes before eating.

CRISPY CHICKEN STRIPS

- Pour the buttermilk into a wide, shallow bowl. Cut each chicken breast in half horizontally and pat dry with kitchen paper. Turn them over in the buttermilk, leave in the dish and chill for 1 hr. Meanwhile, for the salad, mix the carrot with the lemon juice and olive oil. Mix the sauce ingredients together in another bowl and set both aside.
- Heat a large, non-stick frying pan, tip in the breadcrumbs and toast in the dry pan for 2-3 mins until pale brown, stirring regularly so they don't burn. Tip into a bowl and break up any large clumps.
- Heat oven to 230C/210C fan/gas 8. Tip the crumbs onto a large plate, then lift the chicken breasts from the buttermilk, and roll them in the crumbs, making sure they are coated evenly.
- Heat ½ tbsp of oil in a non-stick frying pan. Fry the chicken for 1-2 mins over a medium-high heat, then turn it over, adding the rest of the oil and fry for 1 min more.
- Transfer the chicken to a baking sheet and bake for 5 mins, then rest for 5 mins and cut into strips. Serve the chicken and the carrot salad with the sauce and baked potatoes.

KFC HOT 'N SPICY CRISPY STRIPS CLONE
If you love those crispy strips here's a recipe that is sure to be to your tastes. These are nearly taste the same as crispy strips that are available in Australia.

Steps:
- Trim any excess skin or fat from the chicken breasts.
- Slice the chicken breasts into nice size strips (approximately 1/2 inch x 3-4 inches).
- Combine the water, salt and MSG for the marinade in a large bowl and let it sit and marinate for 20 minutes.
- Turn the strips once while they are marinating.
- Combine the beaten egg and milk and a bit of pepper in a medium size bowl.
- In a small plastic bag combine the remaining ingredients (flour, salt, pepper, paprika, Mexican chili and MSG) and shake.
- At this time you can start to preheat the oil in a deep-fryer to 220°C.
- When the chicken has been marinating for 20 minutes, transfer each piece to paper towels so that excess liquid can drain off.
- Using about ten strips at once, place the chicken in the bag with the flouer and shake the bag until the strips of chicken are coated.
- Place them on a plate.
- Once they have been coated with the flour mixture dip them in the egg and milk mixture individually and them back into the bag for another shake.
- Be sure to try and get as much coating on each strip.
- If you wish you can coat them again if you want a thicker coating.
- Drop the strips, 5-6 at a time into the hot oil.
- They should only take a couple of minutes depending on how you like your chicken.
- Be sure to stir when frying so the strips don't stick together.
- Remove the chicken from the oil and allow them to drain on paper towels for a couple of minutes.
- Enjoy your homemade takeaway!

FRIED CHICKEN TENDERS
Nice and crispy and a tad spicy, the perfect appetizer. The trick to perfect fried chicken is to control the temperature of your oil. Too hot and the food burns before it's fully cooked, too cool and it won't get crispy and it will get very greasy. Use a deep-fry thermometer and a heavy pot so that when you add the food the temperature won't drop too drastically. Brining the chicken is the best way to make it juicy and flavorful, but I wouldn't recommend doing it overnight as that's too long. Two hours should do it.

- Combine the water, kosher salt, and sugar in a container to form a brine. Add the chicken tenders and let this marinate in the fridge for 2 hours.
- Combine the flour, garlic powder, onion powder, paprika, seasoned salt, black pepper and cayenne pepper in a container and mix very well to combine.
- Mix the eggs and milk in another container.
- Preheat your oil to 350 degrees.
- Dredge the chicken tenders in the flour mixture and pat off excess.
- Dip the tenders in the egg mixture and drain excess.
- Dredge the chicken tenders in the flour a second time and set them on a plate. Put them in the fridge to dry out for about 20 minutes. This will help the coating stick to the chicken better.
- Once the oil is hot, fry the tenders in small batches for about 5 minutes and then drain on paper towels.
- Serve with your favorite dipping sauces!
