This easy to follow recipe produces a rich, velvety coffee-flavored elixir that is the main ingredient of drinks such as White Russians, Mudslides and Chunky Monkeys. 2 cups water
1 1/2 cups dark brown sugar
1 1/2 cups granulated sugar
1/2 cup instant coffee
1 3/4 liters high quality vodka
2 teaspoons pure vanilla extract
1 whole vanilla bean

Steps:

  • Combine the brown sugar, granulated sugar and water in a small sauce pan. Simmer for 10 to 15 minutes until sugar is dissolved.
  • Remove from the heat. Stir in the coffee. Allow to cool completely.
  • Pour into a large plastic container with a lid. Add the vodka, vanilla flavoring and vanilla bean.
  • Cover and let stand for two to three weeks or until fully aged. Kahlua, when properly stored, can last safely for up to a few years.

4 cups water
1 cup instant coffee crystals (such as Folgers® Classic Roast)
2 cups light brown sugar
2 cups lightly packed dark brown sugar
1 (750 milliliter) bottle 190 proof grain alcohol (such as Everclear®)
2 teaspoons vanilla extract
1 vanilla bean, split lengthwise and halved

Steps:

  • Combine water and instant coffee in a pot; bring to a boil. Stir light brown sugar and dark brown sugar into coffee, reduce heat, and simmer, stirring every 15 minutes, for 3 hours. Remove from heat and cool completely.
  • Pour coffee mixture into a clean, large glass jar. Add grain alcohol, vanilla extract, and vanilla bean; cover with a tight-fitting lid. Let sit in a dark place, shaking occasionally, for 1 month. Divide into bottles, leaving a piece of vanilla bean in each.

Scott Baird, the mixologist at 15 Romolo's recipe makes kahlua with more flavor, thicker and richer by adding dark rum to vodka or light rum as well as whole coffee beans before filtering. It takes a full 3 weeks so start now if its for christmas gifts :) He suggests using Pampero rum for the dark, but any good dark will do. Standing time of 3 weeks is not included

1 (750 ml) bottle vodka or 1 (750 ml) bottle white rum
1 1/4 cups dark rum
1 1/2 cups sugar
3/4 lb whole coffee beans
1 tablespoon cocoa, nib (optional)
1 vanilla bean
cinnamon stick, slice of orange peel (optional)

Steps:

  • Combine all of the ingredients in a sealable container. Shake hard to combine.
  • Label with the date and let sit in a cool, dark place for three weeks. Shake or stir the mixture several times a week.
  • Strain through cheesecloth or a fine mesh strainer into a clean vessel. Use like you would Kahlua or any other coffee liquor.

This recipe was given to me by a very nice cocktail waitress at a little neighborhood Mexican restaurant called Dave and Dar's in Denver about 25 years ago. The restaurant is long gone, but te recipe still lingers.

3 cups sugar
3 cups water
4 tablespoons instant coffee powder
1 tablespoon vanilla extract
1 pint grain alcohol (190 proof Everclear)

Steps:

  • Bring sugar and water to a boil.
  • Stir until sugar is completely dissolved.
  • Add coffee.
  • Let cool to room temperature.
  • Add vanilla and grain alcohol.
  • Bottle and let set for at least one week, and preferably a month or longer, before serving.
  • Note: I have also had it after allowing it to age for 15 minutes, and it was still pretty good, but definitely a little rough around the edges.

Steps:

  • Moisten the top edge of a coffee cup with a little rum.
  • Place a little sugar on a dish, and dip the cup into the sugar to coat rim. Add the rum and the Kahlua, and mix together.
  • Add the hot coffee, and stir quickly to mix.
  • Top with whipped cream.
  • The whipped cream prevents the alcohol from escaping.

2 ounces pure vanilla extract
1 bottle Monarch 151 rum (Fifth)

Steps:

  • Bring to boil water and sugar.
  • Remove from heat and add instant
  • coffee. Bring to boil again.
  • Remove from heat and add vanilla extract (very important you use pure extract NOT imitation). Cool before adding rum.
  • Put in bottles and cork.
  • Makes about 3 fifths.
  • NOTE: Since this is made with 151 rum, it has a lot more alcohol (75.5%).
