NO-FUSS HAM PATTIES



No-Fuss Ham Patties image

Folks always want more whenever I make these ham patties. They're fast and easy to make, too.

1 egg, lightly beaten
3 tablespoons sweet pickle relish
8 tablespoons dry bread crumbs, divided
1-1/2 teaspoons ground mustard
10 ounces ground fully cooked ham
2 to 4 tablespoons whole milk, optional
3 tablespoons butter

Steps:

  • In a large bowl, combine the egg, pickle relish, 6 tablespoons bread crumbs and mustard. Crumble ham over mixture and mix well. Gradually add milk if mixture is too thick. Shape into four patties. Sprinkle each side with remaining bread crumbs. , In a large skillet, cook patties over medium heat in butter for 4-5 minutes on each side or until a thermometer reaches 160°.

This is one of my all-time favorite recipes, and I get asked for it a lot. Invite some family over, because this makes a lot! Tip: You'll want to prep/chop all your ingredients before you start, otherwise you'll be running around like crazy.

1 lb ham, cubed (about 1/2-inch pieces)
2 lbs smoked sausage, sliced (about 1/4-inch coins)
1 large sweet onion, chopped
1/2 cup green pepper, chopped
1/2 cup fresh parsley, chopped
2 celery ribs, chopped
5 garlic cloves, chopped
3 tomatoes, chopped
1 teaspoon dried thyme
2 bay leaves
salt and pepper
2 cups long-grain rice, uncooked
4 1/2 cups water

Steps:

  • In a large dutch oven with a tight cover (to be used later), brown the ham and sausage, then pour off some of the fat. Be patient with the browning, it takes a while but it's worth it.
  • Add the onion and cook until it's soft (about 3 minutes).
  • Add the green pepper, parsley, celery, garlic, tomatoes, thyme, and bay leaves. Season with salt and pepper.
  • Bring to a boil and cook/stir for about 5 minutes.
  • Add the rice and the water. Cover and allow to simmer on low heat for 25 minutes.
  • Don't uncover the pot until the end of the cooking when you check for doneness. You'll know it's done when the rice is tender and the liquid is absorbed. Fluff and serve.

1/4 cup KRAFT Zesty Italian Dressing, divided
1 pkg. (13 oz.) OSCAR MAYER Natural Uncured Turkey Sausage, cut diagonally into 1/4-inch-thick slices
6 slices OSCAR MAYER Baked Cooked Ham, finely chopped
1 can (14-1/2 oz.) diced tomatoes, undrained
1/2 tsp. dried Italian seasoning
4 cups cooked penne rigate pasta
1 can (16 oz.) chickpeas (garbanzo beans), rinsed
1 cup KRAFT Shredded Mozzarella Cheese, divided
2 Tbsp. chopped fresh basil

Steps:

  • Heat oven to 350°F.
  • Heat 1 Tbsp. dressing in large skillet on medium-high heat. Add sausage; cook and stir 4 min. or until evenly browned. Add ham, tomatoes, Italian seasoning and remaining dressing; stir. Cook 3 to 4 min. or until heated through, stirring frequently.
  • Add pasta, chickpeas and 1/2 cup cheese; mix lightly. Spoon into 2-qt. casserole sprayed with cooking spray.
  • Bake 10 to 15 min. or until heated through. Sprinkle with remaining cheese; let stand 5 min. or until melted. Sprinkle with basil.

6 cups milk
6 cups soft bread crumbs
1-1/2 teaspoons pepper
4 pounds ground fully cooked ham
8 pounds bulk pork sausage
GLAZE:
6 tablespoons ground mustard
4 cups packed brown sugar
1-1/2 cups white vinegar

Steps:

  • In a several large bowls, combine the eggs, milk, bread crumbs and pepper. Crumble ham and pork over mixture and mix well. , Shape into four loaves; place each in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 45 minutes., In a large saucepan, combine the glaze ingredients. Bring to a boil; cook and stir until sugar is dissolved. Pour 1/2 cup over each ham loaf; bake for 30 minutes. , Pour remaining glaze over loaves; bake 5-10 minutes longer or until a thermometer reads 160°. Let stand for 5 minutes before slicing.

1 mango, pitted and peeled
1 (12-ounce) bottle your favorite BBQ sauce
Salt and freshly ground black pepper
1/4 cup molasses
2 tablespoons Dijon mustard
6 links sausage with fresh mozzarella, or your favorite type of sausage
3 (3/4-inch thick) slices smoked country ham
3 (3/4-inch thick) slices unsmoked country ham

Steps:

  • Heat grill to high.
  • Scrape mango flesh into a blender. Add BBQ sauce and blend until combined. Season with salt and pepper, to taste.
  • Whisk molasses and Dijon together in a small bowl.
  • Place sausage on grill and grill until cooked through. Place both types of ham on grill and brush with either the mango BBQ Sauce or molasses-Dijon glaze. Grill, brushing with either sauce, on each side for about 2 minutes or until sauce caramelizes. Remove from grill and cut into slices.
  • Arrange ham slices and sausage on a serving platter.

Ham sausage is flavorful and juicy. Homemade ham sausage is even tastier! Below are instructions for making it in a ham-maker, but look at the article above to learn how to make it using a sausage-stuffer, and how to make it with no special equipment at all.

¼ cup water, divided
6 tsp. salt
1 and ½ tsp. Morton Tender Quick Cure
2 cloves garlic
2 tsp. black pepper
3 and ½ lbs. pork, in ½-inch cubes
1 and ½ lbs. ground pork

Steps:

  • Pour half of the water into a small bowl. Dissolve the salt and cure in it.
  • Put the remaining water into a blender and add the garlic. Blend to puree the garlic. Add the pepper to the garlic and water mixture.
  • Put the pork cubes and ground pork into a large bowl. Add the cure mixture and the garlic-water mixture.
  • Mix well using your hands until the meat sticks to your hands, adding more water, 1 teaspoon at a time, to make it stickier if needed. It should stick to your inverted hand when it's done.
  • You can use a sausage stuffer to put this mixture into casings (see article above) or you can use the saran wrap method here. We are proceeding with the Ham Maker instructions.
  • Place the meat mixture into the Ham Maker and use the spring loaded lid to pack the meat tightly.
  • Get a large pot. Put enough water in the pot so that, when you add the Ham Maker, the water level will be slightly above the the level of the meat in the Ham Maker.
  • Heat water to a low simmer (around 185 to 190°F on a candy thermometer, but small infrequent bubbles is what you're looking for).
  • Place the Ham Maker in the water and insert a thermometer into the meat using the hole in the top of the Ham Maker. Cook until internal meat temperature is 160°F, around 1.5-2 hours.
  • Once it reaches the temperature, remove the Ham Maker from the pot of water and put it into the fridge to cool completely. It's best to leave it for we hours to make sure it's really cold.
  • Once fully cooled, run Ham Maker under warm water. This helps to loosen the ham sausage.
  • Take out thermometer, take off lid and spring. Turn the Ham Maker upside down allowing the ham sausage to slide out.
  • Slice and serve.

1 lb garlic flavored sausage, like kielbasa
7 ounces smoked ham, finely chopped
2 large onions, finely chopped
1 large green pepper, seeded & finely chopped
1 medium carrot, finely chopped
4 garlic cloves, minced
1 bay leaf
3/4 teaspoon fresh thyme or 1/4 teaspoon dried crumbled thyme
1/2 teaspoon ground cumin
8 -9 cups chicken stock or 8 -9 cups low sodium chicken broth
1 (1 lb) can peeled tomatoes
1/2-3/4 lb dried lentils (depending on desired thickness)
12 large spinach leaves, washed, trimmed & finely shredded

Steps:

  • Heat oil in 6-8 quart saucepan over medium heat. Add sausage and cook until almost all fat is rendered.
  • Transfer sausage to platter and drain off all but 2 tablespoons grease from saucepan.
  • Add ham, onion, green pepper and carrot. Cover and cook 15 minutes, stirring occasionally.
  • Stir in the garlic, bay leaf, thyme and cumin.
  • Cover and cook 5 minutes.
  • While that's cooking, thinly slice sausage; add to pan with chicken stock, tomatoes and lentils.
  • Reduce heat to low. Cover partially and simmer gently until lentils begin dissolve, about 2 hours.
  • (Can be prepared up to 3 days in advance and refrigerated, or frozen for several months.).
  • Discard any fat from the surface, taste and adjust seasoning with salt and pepper.
  • Simmer just until warmed through, then add spinach.
  • Serve while warm.

  • Place meats on a baking sheet, cover with plastic wrap and freeze 1 1/2 hours. Should be very firm, not frozen solid. Place all meat grinder parts in freezer and refrigerate mixing bowl at least 30 min prior to using.
  • Rinse casing well to remove salt and run warm water all the way through the casing. Let casing soak in warm water (90˚F water) for at least 1 hour or until soft and slick. Keep casings in water until ready to use.
  • Remove 1/3 of meat from the freezer, dice into 1/4 thick pieces with a sharp knife and transfer to your chilled mixing bowl. Chop remaining meat into 2" pieces so that it can easily go through the meat grinder. Set up your meat grinder (if using KitchenAid mixer, set to speed 4 using the large holes grinding plate) and grind meat into chilled bowl then grind bacon.
  • Sprinkle seasonings over meat and toss by hand 30 seconds to distribute then add 1 cup water and mix meat by hand for 1 minute (or with paddle attachment on speed 1 for 1 minute), just until a light film forms on the outside of the bowl and the mixture binds to itself and can hold a patty shape. Cover and refrigerate your sausage mixture while you clean your grinder and set up your sausage maker attachment. Seasoning Tip: To test your meat for seasoning, form a small patty and saute it on a skillet to sample.

Remove the foil and bake for 45 minutes longer, or until the strata is bubbling and the top is golden and crusty. Let cool for 15 minutes before serving.
