1 lb pizza dough, store-bought or homemade
flour
tomato sauce
mozzarella cheese
fresh basil leaf
pepperoni
tomato, sliced
broccoli floret, sautéed
onion, sliced, sautéed
chocolate hazelnut spread
strawberry, sliced
banana, sliced

Steps:

  • Preheat oven to 450°F (230°C).
  • Place a parchment paper-lined baking sheet in the oven.
  • To make four personal-sized pizzas, divide pizza dough into fourths.
  • Roll out each piece of dough to desired thickness.
  • To par-bake the pizza rounds, arrange the pizza dough rounds on the hot baking sheet.
  • Bake for 3-4 minutes or until dough looks puffy and dry. Dough should not be golden brown.
  • Cool pizza rounds on a wire rack.
  • When cool, top your rounds with desired toppings.
  • Place prepared pizzas on a baking sheet and freeze, uncovered, for 3 hours so the toppings adhere to one another.
  • Wrap the now-frozen pizzas in plastic wrap and aluminum foil to prevent freezer burn. Label each pizza as desired and freeze for 1-2 months.
  • To bake frozen pizzas, preheat the oven to 450°F (230°C).
  • Unwrap pizza and place directly on rack or parchment-lined baking sheet.
  • Bake for 15-18 minutes, or until crust is brown and cheese is melted.
  • Cool for 5 minutes. Cut into slices before serving.

2 packages (6-1/2 ounces each) pizza crust mix
1-1/2 cups pizza sauce
1 pound ground beef, cooked and drained
1 medium onion, chopped
1 cup chopped green pepper
2 cans (2-1/4 ounces each) sliced ripe olives, drained
2 cups shredded part-skim mozzarella cheese

Steps:

  • Prepare both packages of pizza dough according to directions. On a floured surface, knead dough several times; divide into six portions. Roll each into an 8-in. circle. Place on greased baking sheets. Bake at 425° for 10 minutes. , Spread pizza sauce over crusts to within 1/2 in. of edge. Top with beef, onion, green pepper, olives and cheese. Return to the oven for 10-15 minutes or until crust is golden brown and cheese is melted.

This is my stock recipe for my personal pan sized pizzas which are about 6-7 inches in diameter. Each batch of dough makes 4 pizzas. The crust on these is crunchy, we don't like the thick pan style pizza here. Also, the thicker crusts don't bake up as well because the centers just don't heat as fast due to density. I make these 3 styles, Cheese, Pepperoni and 3 meat (pepperoni, Italian sausage and bacon crumbles which I buy at Sam's Club prepackaged). I think you'll like these, I get tons of orders for them. OH BUY SOME 8" CARDBOARD CAKE ROUNDS (available at most craft stores, and Walmart in the craft dept.) The pizzas need a hard surface to freeze on. So much better than store bought, you'll never go back.

4 1/2 teaspoons yeast
1/2 teaspoon sugar
1 1/2 cups hot water
3 1/2 cups flour
1 teaspoon salt
1 -2 teaspoon olive oil
1 teaspoon garlic powder
1 teaspoon basil
1 teaspoon oregano
1 teaspoon crushed red pepper flakes (omit if you don't like a kick of spice)
2 (14 ounce) jars pizza sauce (I buy the institutional sized cans at Sam's Club its so much cheaper, especially if you're making mo)
2 cups mozzarella cheese
1/2 teaspoon oregano
1 teaspoon crushed red pepper flakes
2 tablespoons cornmeal

Steps:

  • Dissolve yeast and sugar in hot water, set aside and let sit for 8 minutes.
  • In a large bowl mix flour and salt.
  • Pour yeast mixture over flour mixture and mix well with a heavy wooden spoon.
  • Turn out onto a floured surface, knead being careful to not add too much additional flour.
  • After the dough starts to really pull together work in enough olive oil to get a good elastic dough that is easy to work.
  • Work in the garlic, herbs and red pepper.
  • Knead for about 2 minutes more.
  • Divide into four equal parts, using a rolling pin to roll out into 6-7" circles, leave an edge or a crust around the edges so your toppings won't slide off.
  • Sprinkle a pizza pan with cornmeal, place 2 pizza dough rounds on the pan and bake at 500 degrees for 5 minutes.
  • Repeat with other 2 rounds.
  • Allow to cool on the counter, for about 10 minutes.
  • Top with pizza sauce and cheese. Ending with the herbs and pepper on the very top.
  • Place on cardboard rounds and wrap tightly with plastic wrap.
  • To bake after freezing, bake at 400 degrees for 12-15 minutes or until cheese is melted and bubbly.

My daughter has become sick recently, and as a result, has become lactose intolerant. She felt like she was missing out on dairy, etc. and she came up with these delicious little pizzas. She uses a vegetable derived cheese called Veggie Shreds. These pizzas are versatile- you can omit the chicken for a complete vegetarian version. You can also use real pizza dough if desired. Not lactose intolerant and looking for a great pizza recipe? Make using all regular ingredients for a delicious supreme pizza. Don't have spaghetti sauce in the house? Here's a trick- use a small amount of ketchup with a dash of italian seasoning- sounds weird, but tastes great nontheless! These pizzas can be popped into a toaster oven for a quick and nutritious snack. Enjoy!

1/2 green pepper, diced
1/2 red pepper, diced
1/2 onion, diced
2 -3 mushrooms, chopped
1 chicken breast, thinly sliced into chunks
salt (to taste)
pepper (to taste)
1 dash adobo seasoning (optional)
1 teaspoon garlic powder
2 garlic cloves, minced
1 tablespoon olive oil
2 thomas sahara mini whole wheat pita bread
1/2 cup spaghetti sauce
1 teaspoon sugar
salt (to taste)
1 cup soy mozzarella cheese
red pepper flakes (optional)

Steps:

  • In a small frying pan, heat olive oil over a medium-high heat. Saute peppers, onions, mushrooms, snd minced garlic till slightly cooked. Season chicken with salt, pepper, and garlic powder- add to pan and saute with vegetable mixture until chicken is cooked and slightly browned. Remove from heat.
  • Split pitas in half. Spoon on about 1 tablespoons of sauce onto each half. Spread over pita. Sprinkle cheese on top. Spoon some of the supreme mixture on top of cheese, and sprinkle a little of the red pepper flakes on top, if desired.
  • Bake mini pizzas at 400 F for 5-10 min., or until cheese is melted. Watch carefully to make sure pizzas do not over cook. Enjoy!

1 (1/4 ounce) package active dry yeast
1 tablespoon white sugar
2 1/2 cups warm water
2 tablespoons olive oil
1 tablespoon salt
1/2 cup whole wheat flour
5 1/2 cups white flour

Steps:

  • In a large mixing bowl, dissolve yeast and sugar in warm water. Let sit until creamy (about 10 minutes).
  • Stir in olive oil, whole wheat flour, salt and 4 cups of white flour into yeast mixture.
  • Mix in remaining flour 1/2 cup at a time, stirring well after each addition.
  • When dough has pulled together, put onto lightly floured surface and knead until smooth and elastic (about 4 minutes).
  • Lightly oil another large mixing bowl, place dough in bowl and turn to coat.
  • Cover with damp cloth and put in warm place until dough has doubled in size (about 1 hour).
  • Deflate the dough and put onto lightly floured surface. Divide dough into 3 equal parts and form into rounds. Cover rounds and let them rest for about 10 minutes. Preheat oven to 425 degrees F.
  • Use a rolling pin to roll the dough into desired shape. Cover dough with your favorite toppings and bake for about 20 minutes or until crust and cheese are golden brown.

FROZEN POCKETLESS PIZZA

I started making these yummy little pizzas so I could have a quick hot lunch in just minutes in the toaster oven but not the gazillion saturated fat-grams in most pizzas. We often serve them as an impromptu appetizer. I especially like these, because their crust gets very crispy - the way I love it! Take this basic idea and add your favorite toppings. I always add onion, and red peppers.

Number Of Ingredients 10

10 pocketless pita breads
28 ounces ragu traditional pizza sauce
8 ounces part-skim mozzarella cheese (low-fat)
40 slices pepperoni, heated and patted dry to remove fat
crushed red pepper flakes
spicy pizza seasoning
canned mushroom, drained
diced red peppers or green pepper
canned sliced jalapeno
sliced olive

Steps:

  • On paper plate, place layer of paper towels.
  • Place single layer of pepperoni, repeat with paper towel, until all pepperoni are on paper towels, ending with paper towel on top.
  • Microwave on Defrost setting just until pepperoni is warm and has released it's fat.
  • Do not overcook.
  • Press top paper towel to remove as much fat as possible.
  • Pick up paper towels and gently shake over a clean paper towel to release pepperoni into a pile.
  • Set aside.
  • Place poctketless pita on several large cookie sheets so that they do not overlap.
  • Using equal ingredients on each pita, place in this order: Spread sauce over pita.
  • Sprinkle seasonings over sauce.
  • Sprinkle with cheese.
  • Top with 4 slices of pepperoni.
  • (Optional: Sprinkle any or all optional veggie ingredients over pepperoni.) Place cookie sheets in the freezer and freeze about 2 hours or until pizza is completely frozen.
  • To store: I use pocketless pita bag sitting upright and stack pizzas, separating them with square of waxed paper.
  • Keep frozen until ready to cook.
  • Bake in preheated toaster oven about 14-15 minutes, or until crust is golden and cheese is melted.
  • Toaster ovens vary, so check it after about 12-13 minutes.
  • Let them cool for 2-3 minutes and cut into eight mini-slices.

This tried-and-true method preserves a fresh, crisp crust even through the freezing process! The secret's in the cheese; when applied to the crust before any toppings or sauce, the cheese seals the crust against the moisture in the sauce. Do not thaw before baking!
