3 cups water
1 cup old-fashioned oats
1 cup raisins
1/2 cup dried cranberries
1/2 cup ground flaxseed
1/2 cup 2% milk
1 teaspoon vanilla extract
1 teaspoon molasses
Optional: Sliced almonds, whole milk and additional molasses

Steps:

  • In a 3-qt. slow cooker, combine all ingredients. Cover and cook on low for 7-8 hours or until liquid is absorbed and oatmeal is tender. If desired, top with sliced almonds, whole milk and additional molasses.

This is a healthy take on the traditional no bake cookies. So good and good for you! I am always asked for this recipe every time I make them. They are a hit with the kids and the adults, and always go quick! I store them in the freezer because I think they taste best frozen, but not necessary.

½ cup mini semi-sweet chocolate chips
½ cup ground flax seed
½ cup crunchy peanut butter
⅓ cup honey
1 teaspoon vanilla extract

Steps:

  • Combine oats, chocolate chips, flax seed, peanut butter, honey, and vanilla extract together in a bowl; form into balls using your hands. Arrange energy bites on a baking sheet and freeze until set, about 1 hour.

I wish I could remember where I got this-it was somewhere on the Internet! But it's fabulous, filling, delicious & very nutritious! I know the ingredients seems small for one serving, but I find it to be enough. Feel free to double up, though, if you're really hungry!

1/4 cup old fashioned oats
1/2 cup milk (I use skim)
1/2 banana, sliced
1/4 teaspoon vanilla
1/4 teaspoon cinnamon
2 tablespoons ground flax seeds
Splenda sugar substitute, for topping (I use two packets) (optional)

Steps:

  • Mix first 5 ingredients in a microwave safe bowl.
  • Microwave on high for 2 minutes
  • Stir oatmeal, and add flaxseed (it will thicken the oatmeal so don't worry if the mixture seems thin at first!)
  • Top with optional Splenda packets. I also top mine with more sliced banana & low carb vanilla yogurt. Raisins or nuts would be good, too!

My everyday recipe for oats that makes four days worth of breakfast! Not to sweet but an excellent preworkout fuel! Reheats perfectly in the microwave oven.

2 cups nonfat milk
2 cups water
1 cup steel cut oats
1/8 cup packed brown sugar
1/4 teaspoon kosher salt
1/2 cup ground flax seeds

Steps:

  • Combine water, fat free milk, brown sugar, and salt in sauce pan.
  • Heat over medium it to the stage just before a boil, stirring regularly (5 to 7 minutes).
  • Add oats stir, cover and reduce heat to low.
  • Give it a stir every 5 minuets or so until the liquid is absorbed, about 20 to 25 minutes.
  • Slowly add the ground flax stirring constantly to avoid clumps.
  • Let sit covered for 5 minutes, then serve.

1 1/2 cups all-purpose flour
1 cup quick-cooking oats
1/4 cup flaxseed, finely ground in a spice grinder, or pre-ground flaxseed
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
12 tablespoons (1 1/2 sticks) unsalted butter, softened
1 cup granulated sugar
3/4 cup packed dark brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Whisk the flour, oats, flaxseed, baking soda, salt and cinnamon in a bowl.
  • Beat the butter, granulated sugar and brown sugar in a large bowl with a mixer on medium-high speed until fluffy, about 4 minutes. Beat in the eggs one at a time, beating well after each addition. Beat in the vanilla. Reduce the mixer speed to low; add the flour mixture and beat until just combined, scraping down the bowl as needed. Stir in the chocolate chips.
  • Drop heaping tablespoonfuls of dough onto the prepared baking sheets, about 2 inches apart. Bake until golden brown, 10 to 12 minutes. Let the cookies cool 3 minutes on the baking sheets, then transfer to racks to cool completely.

Steps:

  • Cream butter and sugars.
  • Add egg and vanilla and mix.
  • Mix in a separate bowl: flour, baking powder, baking soda, wheat germ (optional), cinnamon, cloves, and salt.
  • Add mixed dry ingredients to butter/sugar/egg/vanilla and mix.
  • Stir in oats and flax seed until moist dough forms.
  • Fold in chocolate chips (optional).
  • Cook on greased cookie sheet in 1 inch balls (use cooled tablespoon or ice cream scoop to place on sheet) 10-15 minutes at 350ºF (adjust cooking time as necessary for cookie moistness and oven strength).

This is the Banana bread I make for days I skip breakfast, or want I something kinda sweet before bed. I really came up with this through trial and error. I wanted a banana bread that was healthy enough that I didn't hate myself when I went back for another slice. The oat flour and ground flax I use are the Bob's Red Mill brand. This can easily be made into muffins.

1/2 cup oat flour
1 cup rolled oats
1/4 cup ground flax seeds
1/4 cup brown sugar, packed

1 cup mashed banana (two large)
2 eggs, beaten
1/2 cup milk
1/4 cup vegetable oil
2 teaspoons vanilla

Steps:

  • 1. preheat oven to 350 degrees ferenhight.
  • 2. In a large mixing bowl thouroughly combine the wet ingrediants.
  • 3. In a seperate bowl thouroughly combine the dry ingrediants.
  • 4. pour wet ingrediants into dry ingrediants and stir until completely mixed.
  • 5. spray a pan with baking spray. I use a glass deep dish pie pan, about 9".

Is anyone else as obsessed as I was with Nature's Path instant Flax n' Oats oatmeal? Well, worry no more if you run out! This one is a taste-alike with easy ingredients and can be mixed up ahead of time or super-fast!

Number Of Ingredients 6

1/3 cup rolled oats, plus
1 tablespoon rolled oats (or use quick oats, see note)
2 -3 teaspoons whole flax seeds
2 teaspoons unbleached cane sugar
1/16 teaspoon sea salt
1/3 cup boiling water, more if needed

Steps:

  • Notes on oats: I use a more finely-rolled, organic oat. Otherwise use quick oats or try grinding your rolled oats a bit.
  • Mix together the first four ingredients. If doubling, tripling, etc., mix each in its own bowl / bag. I know this seems silly but if you do it all together and then divide into servings, the sugar and salt will end up mostly in the last one!
  • If saving for future, keep in small containers or plastic baggies.
  • When ready to eat, pour into a bowl. Add fully boiling water- start with 1/3 cup, and stir it well. If you like it thinner, add more just a spoonful at a time, stirring till you get the consistency you want.
  • Cover and wait just a minute for the oats to soak up all the water. (This is optional, but reccommended.)
  • Devour! I like to top mine with berries; stir in diced apple or pear BEFORE adding water; try different nuts, etc. This is just a base really, but a darn good one!
