This is a fast and delicious way to prepare broccoli. In a pinch, you could use frozen broccoli although I prefer to use fresh when I can.

Number Of Ingredients 7

1 lb broccoli, cut into flowerets
2 tablespoons vegetable oil or 2 tablespoons olive oil
1 teaspoon chopped fresh basil or 1/4 teaspoon dried basil
1 teaspoon chopped fresh oregano or 1/4 teaspoon dried oregano
1/2 teaspoon salt
1 clove garlic, finely minced
2 roma tomatoes, seeded and chopped

Steps:

  • Cook broccoli in 1" of boiling water.
  • (I used the stems, too.) Boil about 6 minutes until crisp tender; drain and set aside.
  • Heat oil in skillet over med heat.
  • Stir in remaining ingredients.
  • Heat about 1 minute, stirring often, until hot.
  • Add broccoli and toss gently.

1 tbsp rapeseed oil
1 onion , finely chopped
1 large garlic clove , crushed
400g broccoli , chopped into small florets
300g frozen peas
200g chard , chopped
1l low-salt veg stock
½ small bunch of basil , chopped
small bunch of dill , chopped
1 lemon , zested and juiced
2 tbsp pumpkin seeds , toasted

Steps:

  • Heat the oil in a large saucepan. Add the onion and fry for 8 mins until soft and translucent. Add the garlic and cook for 1 min more. Tip in the broccoli, peas and chard, then pour over the stock and bring the mixture to the boil. Reduce the heat to a simmer, cover and cook for 25 mins.
  • Stir through the herbs, lemon zest and juice, then blitz the soup with a stick blender until completely smooth. Ladle into bowls and serve with the toasted pumpkin seeds scattered over the top.

1 lb fresh broccoli
2 tablespoons olive or vegetable oil
1 teaspoon chopped fresh or 1/4 teaspoon dried basil leaves
1 teaspoon chopped fresh or 1/4 teaspoon dried oregano leaves
1/2 teaspoon salt
1 clove garlic, finely chopped
2 plum (Roma) tomatoes, seeded, chopped

Steps:

  • Cut broccoli into flowerets; cut stems into 1x1/2-inch pieces (4 cups). In 10-inch skillet, heat 1 inch water to boiling. Add broccoli. Heat to boiling. Boil 5 to 7 minutes or until crisp-tender; drain and set aside. Wipe out and dry skillet with paper towel.
  • In same skillet, heat oil over medium heat. Stir in remaining ingredients. Cook about 1 minute, stirring frequently, until hot. Add broccoli; toss gently.

Chicken, Artichoke and Broccoli Bake With Herb Bread Crumbs image

This one-dish dinner is indeed a casserole - but it's bright and light, and nearly effortless. Toss canned artichokes with capers, garlic and chicken stock, pour over chicken breasts and broccoli florets, then let the oven do the work. Canned artichokes are the main flavor builder here so opt for the firmer water-packed variety, which hold their shape better during cooking. While the casserole bakes, toast the panko bread crumbs and season them with dill. Serve the chicken with a squeeze of lemon for brightness and a sprinkle of herby bread crumbs for crunch.

4 boneless, skinless chicken breasts (1½ to 2 pounds total)
1 small head broccoli (about 1 pound), tough stem discarded, head cut into 2-inch florets (about 4 cups)
5 tablespoons extra-virgin olive oil
Kosher salt and black pepper
2 (14-ounce) cans quartered artichoke hearts in water, drained (about 4 cups)
1/2 cup low-sodium chicken broth
2 tablespoons drained capers
2 tablespoons unsalted butter, melted
5 garlic cloves, thinly sliced
1/2 cup panko bread crumbs
2 tablespoons chopped fresh dill
Lemon wedges, for serving

Steps:

  • Heat oven to 400 degrees. In a 3-quart baking dish, combine chicken, broccoli florets and 2 tablespoons oil; season with salt and pepper. Toss to evenly coat, spread broccoli in an even layer and arrange chicken breasts on top.
  • In a large bowl, combine artichokes, broth, capers, butter, garlic and 2 tablespoons oil and season with salt and pepper. Gently toss, then spoon mixture over chicken and broccoli. Bake until chicken is cooked through and artichokes are golden in spots, 30 to 35 minutes.
  • Meanwhile, in a small skillet, heat remaining 1 tablespoon oil over medium. Add panko, reduce heat to medium-low and cook, stirring frequently, until golden and crisp, 8 to 10 minutes. Transfer to a bowl to cool, then stir in dill and season with salt and pepper.
  • Divide chicken and vegetables among shallow bowls and spoon over some of the pan juices. Squeeze with lemon and top with dill bread crumbs.
