HOMEMADE EGG NOODLES (KIELKE)
Traditional Mennonite egg noodle recipe used for soups or Kielke with cream gravy.

Steps:
- Put all ingredients in a mixing bowl and mix on low until the dough is slightly sticky. Add about 1/4-1/2 cup more of flour and knead it by hand on the counter until all of the flour is incorporated. Then roll the dough out into a long loaf and cut sections about 1.5 inches wide. Then flatten the sections and flour both sides. Set your pasta machine to the thickest setting, and roll each section through, sprinkling flour on it before placing the next flattened section on top. Then roll each flattened piece out again on a thinner setting, cut the pile in half, and roll it once more on an even thinner setting (if the dough is not thin enough, it will not cut the soup noodles properly, kielke noodles do not have to be as thin). Sprinkling flour on them as you go so the pieces don't stick together. Then cut the piles of rolled out dough into sections wide enough to fit through the pasta maker, and start rolling! (Use the thicker setting for kielke noodles). Make sure you're sprinkling more flour on the noodles as you cut them so they don't clump together. Once the noodles are all cut and ready, place them in a pot of boiling water, stirring frequently so they don't clump together, and boil for about 3 minutes. When done, strain your noodles and rinse with cold water to stop the cooking process. Serve and enjoy!

- In a large bowl, stir together the flour and salt. Add the beaten egg, milk, and butter. Knead dough until smooth, about 5 minutes. Let rest in a covered bowl for 10 minutes.
- On a floured surface, roll out to 1/8 or 1/4 inch thickness. Cut into desired lengths and shapes.
- Allow to air dry before cooking.
- To cook fresh pasta, in a large pot with boiling salted water cook until al dente.

Steps:
- Measure flour into bowl; make a well in the center and add egg yolks, whole egg and salt.
- With hands, thoroughly mix egg into flour.
- Add water, 1 tablespoon at a time, mixing thoroughly after each addition.
- (Add only enough water to form dough into a ball.).
- Turn dough onto well-floured board; knead until smooth and elastic, about 10 minutes.
- Cover; let rest 10 minutes.
- Divide dough into 4 equal parts.
- Roll dough, 1 part at a time, into paper-thin rectangle, keeping remaining dough covered.
- Roll rectangle around rolling pin; slip out rolling pin.
- Cut dough cross-wise into 1/8-inch strips for narrow noodles and 1/4-inch for wide noodles.
- Shake out strips and place on towel to dry, about 2 hours.
- When dry, break dry strips into smaller pieces.
- Cook in 3 quarts boiling salted water (1 tablespoon salt) (We use chicken broth.) 12 to 15 minutes or until tender.
- Drain thoroughly.

- On a large, clean work surface, mound flour; make a well in the center and add egg yolks, eggs, 2 tablespoons water and salt.
- Use a fork to beat eggs in the well; gradually incorporate flour.
- Once flour is incorporated, form a round ball and begin kneading the dough; discard any dried bits.
- Lightly flour work surface and knead dough until smooth and elastic; form a flat rectangle, wrap tightly with plastic wrap, refrigerate 20 minutes to 6 hours, to rest.
- Unwrap dough and flatten to about 1/2 inch thick.
- Set the rollers of a hand cranked or electric pasta machine to it's widest opening; run dough through, fold dough lengthwise and repeat.
- Do this 4 or 5 times until dough is smooth and elastic; cut dough in half.
- Set pasta machine to next smaller setting and roll one piece of dough through once (keep other piece covered by a clean kitchen towel); decrease setting and roll through again, repeating until it has run through on the lowest setting.
- Repeat with other piece of dough.
- Cut dough into 7 inch long pieces; roll up each piece and cut into 1/2 inch wide strips.
- Boil noodles in a large pot of salted water for 2 minutes; drain and serve.

- In a small bowl, whisk the eggs and the salt together. Place the flour in a large bowl, and make a well in the center. Add the egg/salt mixture and stir with a fork to combine. Add 1 teaspoon of water and stir to combine. If the dough feels dry or crumbly, add more water a few drops at a time. Dig your hands into the dough and knead for 2 or 3 minutes to combine thoroughly, adding more water or flour if needed to create a smooth dough that's slightly tacky. Transfer the dough to a flour-dusted pastry cloth and divide it into thirds. Turn the mixing bowl over the dough to cover it and let it rest for 30 minutes. Take one portion of dough and dust it liberally (and the pastry cloth) with flour; roll it into a large circle that's as paper-thin as you can get it. If the dough seems too stretchy and doesn't want to roll, let it rest for another 30 minutes. Repeat rolling the other two portions of dough. Set the rolled dough rounds aside on paper towel to dry. The dried dough should feel slightly leathery: rough on the surface but still pliable. When it reaches this point, roll each round into a cylinder and cut the dough into 1/2-inch strips. Unfurl the noodles and place them on a rimmed baking sheet to dry, preferably overnight, tossing occasionally to ensure even drying. To store your homemade egg noodles, place them in a zip-top plastic bag; they'll keep well for 6 months. Cook the noodles for 5 to 8 minutes in well-salted boiling water.
- Dry and cook.

- In a medium bowl, mix the flour and salt together.
- In a small bowl, whisk the eggs, oil and water together. Form a depression in the flour mixture and add the egg mixture. Mix well.
- Turn the dough onto a floured board. Knead for 8-10 minutes or until dough is smooth and elastic.
- Divide the dough in half with a sharp knife. With a rolling pin, roll each dough piece to 1/16 to 1/8" thick. Cover the dough with a cloth and let rest 20 minutes.
- Using a sharp knife, slice the dough into strips 3/8" wide. Drop the noodles one at a time into the simmering soup. Cook until tender.

BEST-EVER HOMEMADE EGG NOODLES
Yes you *can* make homemade noodles, it is that easy! I make mine on my Kitchen Aid stand mixer, the kneading time takes only about 3 minutes, but these are still wonderful made by hand --- the prepared noodles need about 25-30 drying time before using --- these make the *best* chicken soup! :)

- In a large bowl combine the flour with salt.
- Add in eggs, milk and soft butter; mix to combine, then knead until smooth (this should take you about 5-6 minutes).
- Cover with a clean tea towel and allow to rest for 10 minutes in the bowl.
- Flour your work surface.
- Place the dough on the surface.
- Using a lightly-floured rolling pin roll out to about 1/8-inch thickness or as thin as possible.
- Using a pizza cutter slice the dough into desired size strips (I do mine about 1/2-inch).
- Allow the strands to air-dry on the counter uncovered before cooking (this should take about 30 minutes or until no longer moist and sticky).
- If not using the noodles right away, toss with a small amount of flour and store covered in refrigerator until ready to use.
- The cooking time for fresh noodles takes much lesss time than dry.

- Knead well.
- Roll dough out very thin.
- Flour both sides of dough.
- Cut in half and form two rolls.
- Cut off narrow strips.
- Cook for a few minutes in a large pot of boiling water.
- Traditionally served with hot Cream Gravy made with 1/2 cup cream and 1-2 tablespoons melted butter and a pinch of salt.
