FROZEN CHOCOLATE-BANANA POPS



Frozen Chocolate-Banana Pops image

These creamy frozen pops take frozen bananas to another level. A small amount of cocoa and cream produces a smooth, mellow chocolate flavor. The peanuts complete the experience by adding nuttiness and a kiss of salt.

4 large ripe bananas
3 tablespoons unsweetened cocoa powder
3 tablespoons heavy cream
3 tablespoons maple syrup
1/2 cup salted, roasted peanuts, finely chopped
Special equipment: six 3- to 4-ounce ice-pop molds

Steps:

  • Break the bananas into chunks, and puree in a food processor until the mixture is smooth and creamy. Add the cocoa powder, cream and maple syrup, and puree until combined. Spoon the banana mixture into ice-pop molds, and freeze until firm, 8 hours or overnight.
  • Spread the peanuts on a plate. Run hot water over the ice pops to help loosen them, then unmold, roll them in the peanuts and serve (or keep them frozen on a parchment-lined baking sheet until ready to serve).

These creamy pops taste just like a sweet summer drink on a stick. The cocoa nibs add crunch and a touch of bitterness that contrasts nicely with the sweetness of the coconut milk and pineapple.

1/2 cup coconut milk
1/3 cup sugar
Kosher salt
1/2 a 4-pound pineapple, peeled and cored
2 tablespoons cocoa nibs

Steps:

  • Cook the coconut milk, sugar and a pinch of salt in a small saucepan over medium heat, stirring occasionally, until the sugar is completely melted, about 5 minutes. Let cool completely at room temperature, at least 30 minutes.
  • Meanwhile, roughly chop 3/4 of the pineapple half (you should have a heaping 2 cups of chopped pineapple). Cut the remaining pineapple into 1/3-inch pieces (about the size of a large corn kernel).
  • Puree the cooled coconut milk mixture and roughly chopped pineapple in a blender until completely smooth, scraping down the sides partway through if needed. Transfer the mixture to a large liquid measuring cup with a pouring spout. Stir in the remaining pineapple pieces and the cocoa nibs.
  • Pour the mixture into the molds, leaving 1/4 inch of space at the top (the mixture will expand). Insert the sticks. Freeze until solid, 5 hours to overnight. Unmold, and enjoy immediately.

  • Remove from the heat before stirring in the Vanilla, and the Coco Pops.
  • Using a moist spoon, press the mixture into a greased square pan or tub.
  • Leave to set for 30 minutes and cut into 8 pieces.

  • First make the chocolate coating - in a small saucepan, add the agave syrup and organic coconut oil and heat gently over a low heat until warmed.
  • Add the brown rice puffs to a large bowl then drizzle the chocolate coating over top. Stir really well until the brown rice puffs are completely coated. It may seems like you don't have enough chocolate coating, but keep stirring, it will cover it all!
  • If you prefer a softer and chewier texture transfer the cocoa pop mixture into a baking paper line container and put it straight in the fridge until it sets (about 20 minutes or so). Then break it up (it will crumble apart easily) and store in an airtight container in the fridge.
