- Preheat the oven to 400 degrees F. Cut off the top third of the head of garlic, exposing the tops of the garlic cloves. Put the garlic on a piece of heavy-duty aluminum foil and drizzle with 1 tablespoon of the oil. Sprinkle with 1/4 teaspoon each salt and pepper and add the thyme sprigs. Wrap tightly with foil and roast until the cloves are golden brown and very soft, about 45 minutes.
- Unwrap the garlic and let stand until cool enough to handle. Pour any garlic-flavored oil from the foil pouch into a small bowl; squeeze the roasted cloves into the same bowl, discarding the papery shells. Add the remaining 1 tablespoon oil, the chopped thyme and an additional 1/4 teaspoon each salt and pepper and mash with a fork until smooth.
- Lay the bottom half of the bread on a piece of aluminum foil that is long enough to wrap the bread. Spread on half of the roasted garlic mixture and top with half of the Parmesan. Repeat with the remaining bread, garlic mixture and Parmesan. Press the halves together so the fillings are on the inside and wrap with the foil.
- Bake until the bread is toasted and the cheese is melted, about 15 minutes. Separate the halves, sprinkle with chopped parsley and cut into 6 pieces.
SPICY CHEESY PULL-APART BREAD

- Preheat the oven to 375 degrees F. Lightly grease a 6-inch cast-iron skillet with canola oil spray.
- Remove the biscuits from the package and lay them out on a clean work surface. Gently pull the layers apart at the middle to divide the biscuits in half. Gently pull each of the halves apart so you are left with four thin, round biscuits each (32 in all). Don't worry if any biscuits tear: just press the torn pieces back together.
- Place 1 teaspoon of the mozzarella in the center of each biscuit round; you will use about 1 1/2 cups of the mozzarella for this. Fold the dough around the cheese and roll into balls. Arrange the balls in a circle around the edge of the prepared skillet, then work your way in until you have completely filled the cast-iron pan with the dough balls. If you start to run out of room as you get closer to the center of the skillet, gently push the dough from the center towards the edges of the pan to make more space.
- Melt the butter in a medium skillet over medium-high heat. Once melted, stir in the scallions, garlic, red pepper and salt. Cook until the butter is just beginning to brown and the garlic is lightly toasted and very fragrant, 2 to 3 minutes. Remove the pan from the heat and stir in the vinegar. Pour the melted butter evenly over the top of the dough and sprinkle with the remaining 1/2 cup mozzarella.
- Bake until the dough is cooked through and golden brown, 25 to 30 minutes. Remove from oven and let cool slightly, about 10 minutes. Serve in the skillet.

CHEESY GARLIC PULL APARTS
These are great for an appetizer or double the recipe and serve with a salad for dinner. They are gobbled up very quickly! Cooking time is approximate. I use a glass pie plate to bake in so I can see how the bottom of the biscuits are browning up. The top will get done before the bottom so I place an aluminum foil tent over it after around 8-10 minutes depending how brown the cheese is getting.

- Melt butter in small bowl. Stir garlic, parsley and garlic powder into butter. Pour butter mixture into pan.

- Preheat the oven to 200 degrees Celsius/ 400 degrees Fahrenheit. Cut 6 pieces of aluminum foil large enough for you to be able to loosely pack the bread rolls in the foil.
- Cut diamond shapes into the bread rolls, but do not cut them all the way through.
- Pour 2 tablespoons of the olive oil into a small bowl and lightly brush between the cuts in the rolls. They don't have to be soaked in oil, just a few fine strokes between the cuts should be enough.
- Grate the mozzarella on the rough grater and add it to a bowl. Grate the garlic cloves through a fine grater and add them to the bowl as well. Chop the fresh parsley finely. Add to the cheese bowl together with the remaining 4 tablespoons olive oil, salt, and pepper to taste. Mix well.
- Divide the mixture into 6 heaps, I feel that helps when deciding how much filling comes into each bread roll. Stuff the rolls with the help of a teaspoon or with your fingers.
- Wrap each bread roll in a piece of aluminum foil. Make sure that the rolls are only loosely wrapped, meaning that the foil doesn't touch the top of the rolls where the cheese is. Otherwise, the melting cheese will stick to the foil.
- Place on a baking tray and bake for 10 minutes. Remove the foil from the rolls and bake them for further 5 minutes or until the cheese is nicely melted and the tops of the rolls are crispy and golden brown.
- Serve immediately with a salad or as a side dish for grilled meats and vegetables.

- Preheat oven to 400 degrees F. Peel the outer layers of the whole head of garlic. Making sure to leave the garlic cloves intact.
- Use a sharp knife and cut the top 1/4 of the head of garlic. You want to be able to expose the garlic. Drizzle with olive oil and sprinkle with salt and pepper. Cover with aluminum foil. Bake for 40 minutes. Set aside to cool.
- Once the garlic is cool enough to handle, squeeze in a large mixing bowl. Add room temperature butter, parsley, parmesan cheese, salt and pepper. Mix until smooth.
- Make 1/2 inch wide cuts in your bread. Make sure to cut about 90% of the way down, leaving the bottom of the bread connected. Spread compound butter in between the slices, and across the top of the crust. Sprinkle the shredded mozzarella cheese on top of the bread and cover with aluminum foil.
- Set your oven to 400 degrees F and bake the loaf for 35-40 minutes.
- Remove from the oven and serve warm. You can cut through the bottom of the bread with a knife or pull off a slice with your hands!
