CHEESY ROASTED GARLIC BREAD

Cheesy Roasted Garlic Bread image

Provided by Food Network Kitchen

Time 1h25m

Yield 6 servings

Number Of Ingredients 7

1 head garlic
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 sprigs fresh thyme plus 1/2 teaspoon finely chopped leaves
1/2 large baguette (about a 12-inch piece), split lengthwise
2 tablespoons grated Parmesan
2 tablespoons coarsely chopped fresh parsley

Steps:

  • Preheat the oven to 400 degrees F. Cut off the top third of the head of garlic, exposing the tops of the garlic cloves. Put the garlic on a piece of heavy-duty aluminum foil and drizzle with 1 tablespoon of the oil. Sprinkle with 1/4 teaspoon each salt and pepper and add the thyme sprigs. Wrap tightly with foil and roast until the cloves are golden brown and very soft, about 45 minutes.
  • Unwrap the garlic and let stand until cool enough to handle. Pour any garlic-flavored oil from the foil pouch into a small bowl; squeeze the roasted cloves into the same bowl, discarding the papery shells. Add the remaining 1 tablespoon oil, the chopped thyme and an additional 1/4 teaspoon each salt and pepper and mash with a fork until smooth.
  • Lay the bottom half of the bread on a piece of aluminum foil that is long enough to wrap the bread. Spread on half of the roasted garlic mixture and top with half of the Parmesan. Repeat with the remaining bread, garlic mixture and Parmesan. Press the halves together so the fillings are on the inside and wrap with the foil.
  • Bake until the bread is toasted and the cheese is melted, about 15 minutes. Separate the halves, sprinkle with chopped parsley and cut into 6 pieces.

SPICY CHEESY PULL-APART BREAD

Spicy Cheesy Pull-Apart Bread image

Provided by Valerie Bertinelli

Categories     appetizer

Time 1h25m

Yield 6 to 8 servings

Number Of Ingredients 9

Canola oil spray
One 16-ounce tube refrigerated flaky biscuits (8 biscuits)
2 cups grated low-moisture mozzarella (about 1 pound)
4 tablespoons (1/2 stick) unsalted butter
2 tablespoons thinly sliced scallions, white and green parts
1 tablespoon minced garlic
1 teaspoon crushed red pepper
1/2 teaspoon kosher salt
1/2 tablespoon white wine vinegar

Steps:

  • Preheat the oven to 375 degrees F. Lightly grease a 6-inch cast-iron skillet with canola oil spray.
  • Remove the biscuits from the package and lay them out on a clean work surface. Gently pull the layers apart at the middle to divide the biscuits in half. Gently pull each of the halves apart so you are left with four thin, round biscuits each (32 in all). Don't worry if any biscuits tear: just press the torn pieces back together.
  • Place 1 teaspoon of the mozzarella in the center of each biscuit round; you will use about 1 1/2 cups of the mozzarella for this. Fold the dough around the cheese and roll into balls. Arrange the balls in a circle around the edge of the prepared skillet, then work your way in until you have completely filled the cast-iron pan with the dough balls. If you start to run out of room as you get closer to the center of the skillet, gently push the dough from the center towards the edges of the pan to make more space.
  • Melt the butter in a medium skillet over medium-high heat. Once melted, stir in the scallions, garlic, red pepper and salt. Cook until the butter is just beginning to brown and the garlic is lightly toasted and very fragrant, 2 to 3 minutes. Remove the pan from the heat and stir in the vinegar. Pour the melted butter evenly over the top of the dough and sprinkle with the remaining 1/2 cup mozzarella.
  • Bake until the dough is cooked through and golden brown, 25 to 30 minutes. Remove from oven and let cool slightly, about 10 minutes. Serve in the skillet.

CHEESY GARLIC PULL APARTS

Cheesy Garlic Pull Aparts image

These are great for an appetizer or double the recipe and serve with a salad for dinner. They are gobbled up very quickly! Cooking time is approximate. I use a glass pie plate to bake in so I can see how the bottom of the biscuits are browning up. The top will get done before the bottom so I place an aluminum foil tent over it after around 8-10 minutes depending how brown the cheese is getting.

GARLIC STUFFED BREAD

Garlic Stuffed Bread image

Cheesy garlic stuffed bread with mozzarella and herbs. Delicious pull-apart bread suitable as a side for any barbecue or a light main course with a salad on the side.

Provided by Adina

Categories     Appetizer

Time 35m

Number Of Ingredients 6

6 crusty bread rolls (Note)
6 tablespoons olive oil (divided)
2 mozzarella balls
4 garlic cloves
5 tablespoons chopped parsley
fine salt and pepper

Steps:

  • Preheat the oven to 200 degrees Celsius/ 400 degrees Fahrenheit. Cut 6 pieces of aluminum foil large enough for you to be able to loosely pack the bread rolls in the foil.
  • Cut diamond shapes into the bread rolls, but do not cut them all the way through.
  • Pour 2 tablespoons of the olive oil into a small bowl and lightly brush between the cuts in the rolls. They don't have to be soaked in oil, just a few fine strokes between the cuts should be enough.
  • Grate the mozzarella on the rough grater and add it to a bowl. Grate the garlic cloves through a fine grater and add them to the bowl as well. Chop the fresh parsley finely. Add to the cheese bowl together with the remaining 4 tablespoons olive oil, salt, and pepper to taste. Mix well.
  • Divide the mixture into 6 heaps, I feel that helps when deciding how much filling comes into each bread roll. Stuff the rolls with the help of a teaspoon or with your fingers.
  • Wrap each bread roll in a piece of aluminum foil. Make sure that the rolls are only loosely wrapped, meaning that the foil doesn't touch the top of the rolls where the cheese is. Otherwise, the melting cheese will stick to the foil.
  • Place on a baking tray and bake for 10 minutes. Remove the foil from the rolls and bake them for further 5 minutes or until the cheese is nicely melted and the tops of the rolls are crispy and golden brown.
  • Serve immediately with a salad or as a side dish for grilled meats and vegetables.

  • Combine the garlic cloves, parsley, and olive oil in a small food processor until the garlic breaks down into small pieces. If you're using sliced mozzarella, stack the cheese slices and cut into 1 inch squares.
  • Heat the butter over medium heat in a small saucepan. When the butter melts, add the chopped garlic to the butter along with a pinch of salt and allow the mixture to cook for 2 minutes, stirring as necessary so the garlic does not brown. Remove from heat.
  • Position a rack in the center of the oven and preheat the oven to 375ºF. Using a sharp serrated knife, make 1 inch diagonal cuts across the loaf of bread making sure you don't cut the bread all the way through. Use a spoon to drizzle the garlic butter into the the cuts of the bread. Stack 3-4 cheese squares and place them in the cuts. Place the garlic bread on a sheet of foil and fold up the sides. Use a second piece to cover the top (we'll be removing this later). Allow the bread to bake for 10 minutes. Remove the top piece of foil and allow the bread to bake for another 10 minutes or until the cheese melts completely. Serve warm.

  • In a bowl, combine the hot melted butter, garlic and diced green onion, stir and allow to sit for just a minute or two.
  • Slice the bread in a crisscross pattern - do not cut all the way through - just to about the bottom inch or so of bread. I begin slicing diagonally one way about an inch apart, then rotate the loaf and slice the opposite way diagonally. If the bread flattens, don't worry - it's quite forgiving, it will be fine.
  • Slowly pour the butter mixture into the crevices of the bread. Go slow so you can cover the whole bread. If you have a very large loaf of bread, you can add some more butter or add olive oil to the mixture to make it go further. (about 1/4 cup). It goes pretty far though, so you should be okay with the original recipe.

  • In a small bowl, combine cheeses and garlic, mix. Stuff cheese blend evenly into all of the slits, nooks and crannies. After stuffing all of the cheese it should be coming out the top- keep stuffing!

  • Slice bread into ¾-inch sections, taking care to not slice all the way through the bottom of the bread. You want the loaf to stay intact with the sections fanning out, just like hasselback potatoes. Grease a long piece of aluminum foil with a drizzle of olive oil. If your bread is really wide, use a long piece of extra-wide heavy duty foil.
  • Spread some butter onto each piece of bread. Sprinkle the garlic powder and 2 teaspoons of the Italian herb mix in between each piece. Stuff a couple tablespoons of cheese between each piece. Carefully transfer the stuffed bread to the aluminum foil, positioning it lengthwise on the foil.
  • Drizzle some olive oil over the top of the bread and sprinkle it with the remaining ½ teaspoon of the herb mix. Wrap the bread up from the short side and then at the ends, leaving a little "breathing room" inside the foil (i.e., don't wrap it tightly).

  • Make a series of diagonal slits in your loaf of bread, but don't cut all the way through - leave an inch or two connected at the bottom of the loaf. Rotate the loaf and make a series of diagonal slits in the other direction, so you create a bunch of diamonds. Gently use your hands to separate the bread.
