POTATO CHIPS

Potato Chips image

Make your own potato chips using your microwave. A tasty and easy alternative to store-bought potato chips (not to mention economical)! A mandoline would make slicing the potato into paper thin slices a breeze.

Time 35m

Yield 4

Number Of Ingredients 3

1 tablespoon vegetable oil
1 potato, sliced paper thin (peel optional)
½ teaspoon salt, or to taste

Steps:

  • Pour the vegetable oil into a plastic bag (a produce bag works well). Add the potato slices, and shake to coat.
  • Coat a large dinner plate lightly with oil or cooking spray. Arrange potato slices in a single layer on the dish.
  • Cook in the microwave for 3 to 5 minutes, or until lightly browned (if not browned, they will not become crisp). Times will vary depending on the power of your microwave. Remove chips from plate, and toss with salt (or other seasonings). Let cool. Repeat process with the remaining potato slices. You will not need to keep oiling the plate.

HOMEMADE CHIPS

Homemade Chips image

Provided by Anne Burrell

Time P1DT20m

Yield 4 servings

Number Of Ingredients 5

1 cup sherry vinegar
2 tablespoons kosher salt, plus extra for seasoning
2 tablespoons sugar
2 large baking potatoes, such as Idaho, peeled and shaved into thin slices with a veggie peeler or mandoline
Peanut or veggie oil, for frying

Steps:

  • In a large container, combine the vinegar, kosher salt, sugar and 2 cups water. Whisk or shake to combine. Toss in the potatoes and refrigerate for 24 hours.
  • In a large wide pot, heat the oil for deep frying to 350 degrees F.
  • Remove the potatoes from the vinegar solution and gently pat dry to remove any excess water.
  • Set up a sheet tray lined with paper towels to land the chips on when they come out of the oil.
  • Working in batches, fry the potatoes until they are brown and crispy. Be careful not to overcrowd the oil, overcrowding will result in greasy limp chips rather than crispy crunchy ones.
  • When the chips come out of the oil, land them on the paper towel setup and give them a sprinkey dink of salt. Let cool and then store them in an airtight container (if you don't eat them all at once!).

HOMESTYLE POTATO CHIPS

Homestyle Potato Chips image

Making homestyle potato chips is fun and easy. Guaranteed they won't last long! A food processor with a slicing attachment is very helpful. Experiment with the thickness; you may like them thicker or thinner. I like to use olive oil because it has less trans fats, but you can use safflower, corn, or peanut oil as well as vegetable oil.

MY HOMEMADE POTATO CHIPS

My Homemade Potato Chips image

There's no need to set up a deep fryer to make great potato chips - the oven is just fine. Part of the charm of homemade chips is that they're a little thicker and have more of a bite than chips from a bag. And best of all, you can serve them warm! Here's an opportunity for the yin-yang thing: warm potato chip with crème fraîche, a small slice of smoked salmon, smoked trout, or a bit of caviar, and a shot of very chilled vodka. Instant celebration.

Yield Makes 6 to 8 servings

Number Of Ingredients 4

2 medium Yukon Gold or Idaho potatoes, peeled and sliced into 1/8-inch slices on a mandoline or other handheld slicer
3 tablespoons olive, canola, or peanut oil
N/A Salt
N/A freshly ground pepper

Steps:

  • Preheat the oven to 400°F. Slice the potatoes into a bowl and immediately toss them with the oil. Season lightly with salt and arrange them in a single layer on a baking sheet. Bake in the oven until golden brown - about 12-15 minutes. Season again lightly with salt and pepper when they come out of the oven. Transfer to a rack to cool for maximum crispness.
  • Weighing your options
  • If you want to be a little more daring, don't limit yourself to salt and pepper - you can season with ancho chile powder, ground cumin, minced herbs, toasted sesame seeds, ground nori (toasted black seaweed sheets used to roll sushi) - really anything you like. Just be sure to season immediately after the chips come out of the oven, while there is still some residual oil for the spices to adhere to.

BEST EVER OVEN CHIPS

Best ever oven chips image

Make your own crispy, golden oven chips and save yourself some money. They're also much easier to cook than their fried counterparts

Provided by Barney Desmazery

Categories     Side dish, Snack, Supper

Time 1h

Number Of Ingredients 7

1kg large Maris Piper potatoes , peeled
1 tbsp white or malt vinegar
75ml vegetable oil
2 tsp plain flour
2 tsp cornflour or potato flour
½ tsp baking powder
small pinch cayenne

Steps:

  • Trim all the rounded edges off the potatoes to make a rectangular block, then cut this into thick batons (save any offcuts to make mash). Drop into a pan of cold salted water with the vinegar and bring to the boil. Simmer for 6-8 mins until the potatoes are just cooked and tender - test with the tip of a knife. Drain carefully, trying not to break any of the chips, and leave to cool completely. Can be prepared up to two days ahead and chilled until needed.
  • Heat the oven to 220C/200C fan/gas 9. Pour the oil into a sturdy, rimmed baking tray or shallow roasting tin and heat in the oven. Mix the flours with the baking powder, cayenne and some salt in a shallow dish and gently toss the chips in the floury mixture to coat, then leave in the mixture until needed.
  • Carefully remove the pan from the oven - the oil should be shimmering - and lay the chips in a single layer in the pan. Use a thin, flexible spatula to gently turn the chips so they are all coated, then roast for 20 mins. Turn the chips again, then roast for another 10 minutes. Turn one final time, then cook for a futher 10 minutes until crisp and deep golden all over. Drain the chips onto kitchen paper and serve straight away.
