FRENCH SODAS (BLUEBERRY, STRAWBERRY OR RASPBERRY)

French Sodas (Blueberry, Strawberry or Raspberry) image

An Italian soda is a refreshing combination of flavored syrup and sparkling water mixed in a cup of ice. The addition of half-and-half turns an Italian soda into a cremosa/creamosa or French soda. Don't use milk because it will separate. If you've ever purchased either an Italian or French soda, you know how expensive they can be. Make your own!

Time 30m

Yield 4-6 approx servings

Number Of Ingredients 7

1 cup sugar
1 cup water
1/2 cup raspberries or 2 cups strawberries

  • Add whey and let it ferment for at least 3 days. Look for visible signs of fermentation via a slight fizziness. You can let it go longer if you’d like a less sweet soda as the bacteria will continue to feed on the sugars. I let mine go about 5 days but you can go as long as 10 days. Taste the soda as you go to get the sweetness you desire.
