FILIPINO-STYLE BANANA KETCHUP



Filipino-Style Banana Ketchup image

Sweet floral bananas stand in for tomatoes in this spicy condiment that is unique to the Philippines, where a tomato shortage and concurrent banana surplus during World War II led to the invention of ketchup made with the tropical fruit. Use the ketchup like you would a chutney: as a dip for vegetables, as a spread on sandwiches, or as a sauce for grilled or roast chicken or pork.

2 tablespoons vegetable oil
1/2 cup finely chopped yellow onion
1 tablespoon minced peeled ginger
1/2 teaspoon ground turmeric
1/4 teaspoon ground allspice
2 cloves garlic, minced
1 jalapeno, stemmed, seeded and minced
1 tablespoon tomato paste
4 very ripe bananas, mashed until smooth (about 2 cups)
1/2 cup white wine vinegar
1/2 cup packed light brown sugar
2 tablespoons soy sauce
2 tablespoons dark rum (optional)

Steps:

  • Heat the oil in a small saucepan over medium heat. Add the onion and cook, stirring until softened, about 5 minutes. Stir in the ginger, turmeric, allspice, garlic and jalapeno and cook, stirring until fragrant, about 1 minute. Add the tomato paste and cook, stirring until lightly caramelized, about 1 minute. Add the mashed bananas, vinegar, brown sugar, soy sauce and rum, if using, and simmer, stirring occasionally, until slightly thickened, about 10 minutes. Scrape the sauce into a bowl, press a sheet of plastic wrap on the top and let cool. Refrigerate in an airtight container for up to 2 weeks.

Born out of a short supply of tomato ketchup and an abundance of bananas in the Philippines during World World II, banana ketchup was created as a sweeter, fruitier facsimile of its tomato counterpart.

2 tablespoon peanut or vegetable oil
1/2 cup finely chopped sweet onion (about 1 small onion)
2 teaspoons minced garlic (about 2 medium cloves)
1 tablespoon finely chopped seeded jalapeño from (about 1 small jalapeño)
2 teaspoons freshly grated ginger
1/2 teaspoon ground turmeric
1/4 teaspoon ground allspice
1 1/4 cups mashed ripe bananas (about 4 large bananas)
1/2 cup white vinegar
2 tablespoons honey
2 tablespoons rum
1 tablespoon tomato paste
1 tablespoon soy sauce
1/2 teaspoon salt, plus more to taste
Water, as needed

Steps:

  • Heat oil in a medium saucepan over medium heat until shimmering. Add onions and cook, stirring occasionally, until onions have softened, about 5 minutes. Add garlic, jalapeño, ginger, turmeric, and allspice and cook until fragrant, about 30 seconds.
  • Stir in bananas, vinegar, honey, rum, tomato paste, soy sauce, and salt; bring to simmer. Reduce heat to low, cover, and cook for 15 minutes, stirring often. Remove from heat and let cool for 10 minutes.
  • Transfer ketchup to a food processor fitted with a steel blade and process until smooth, about 1 minute. Thin with water as needed to reach a ketchup-like consistency. Season with additional salt to taste. Transfer to an airtight container and store in refrigerator for up to 2 weeks.

2 ounces sultanas
3 ounces onions, coarsely chopped
2 -3 cloves garlic (big, fat ones)
3 fluid ounces tomato paste
1 1/3 cups cider vinegar or 1 1/3 cups malt vinegar
4 bananas, very large and extremely ripe and cut into chunks
3 -4 cups water
1/2 cup packed dark brown sugar
1 1/2 teaspoons salt
1/2 teaspoon cayenne pepper
2 fluid ounces golden syrup or 2 fluid ounces light corn syrup
2 teaspoons ground allspice
3/4 teaspoon ground cinnamon
3/4 teaspoon nutmeg, freshly grated if possible
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground cloves
2 tablespoons dark rum

Steps:

  • Combine the raisins, onions, garlic, tomato paste and 1/3 cup vinegar in the container of a food processor; process the mixture until smooth, and then transfer the mixture to a large, heavy saucepan.
  • Add the banana chunks and another 1/3 cup vinegar to the food processor container; process the mixture until smooth and then transfer the banana mixture to the saucepan.
  • Add the remaining 2/3 cup vinegar, 3 cups water, brown sugar, salt and cayenne pepper.
  • Bring the mixture in the saucepan to a boil over medium-high heat, stirring frequently.
  • Reduce the heat to low and cook the ketchup, uncovered, stirring occasionally, for 1¼ hours.
  • If the ketchup threatens to stick to the bottom of the pan at any point, add some of the remaining water, up to 1 cup.
  • Add the corn syrup, allspice, cinnamon, nutmeg, pepper and cloves to the ketchup.
  • Cook the ketchup over medium-low heat, stirring frequently, for 15 minutes longer, or until it is thick enough to coat a metal spoon.
  • Stir in the rum.
  • Remove the ketchup from the heat and let it cool a few minutes.
  • Force the ketchup through a fine sieve to strain it, pressing down hard on the solids.
  • Remove the ketchup from the heat and let it cool to room temperature.
  • Store covered, in the refrigerator, for up to 1 month.

Homemade ketchup is a great way to use up excess tomatoes from the garden

Number Of Ingredients 14

4 good-size onions , very roughly chopped
250g celery , very roughly chopped
5 tbsp vegetable or olive oil
4 garlic cloves , sliced
1 tsp ground coriander
1 short cinnamon stick
1 tsp allspice
½ tsp ground black pepper
2 tsp celery salt
2kg ripe tomatoes , roughly chopped
3 tbsp tomato purée
½ tsp Tabasco sauce
200ml white wine vinegar
200g golden caster sugar

Steps:

  • Put the onions and celery into a food processor and whizz until finely chopped. Heat the oil in a very large saucepan, add the onions and celery, cover, then soften over a low heat for 5 mins. Add the garlic, cook 5 mins more, then tip in the spices and cook for 1 min.
  • Now stir in all remaining ingredients and bring to the boil. Keep on a bubbling simmer, uncovered, for 1 hr until the tomatoes are squashy and the liquid has reduced by several inches. Discard the cinnamon stick.
  • Whizz the mix with a stick blender until smooth, then sieve into a bowl. The ketchup will thicken a little when it cools, but if yours seems very runny (this will depend on the juiciness of your tomatoes), put it back on the heat and cook a little longer, stirring often, until reduced. Keep the ketchup in an airtight container in the fridge for up to 3 months, or freeze in batches. If you like, keep in sterilised bottles or jars for up to 6 months - see tip, below.
