PRIME RIB AU JUS

Prime Rib Au Jus image

Provided by Sandra Lee

Time 2h55m

Number Of Ingredients 8

1 (4 to 5-pound) beef rib roast
5 cloves garlic, slivered
1/4 cup peppercorn and garlic marinade (recommended: McCormick's)
2 tablespoons spicy brown mustard
Salt and freshly ground black pepper
2 teaspoons Worcestershire sauce
1/2 cup red wine
1 cup beef broth

Steps:

  • Preheat the oven to 350 degrees F.
  • Using a paring knife make small slits into roast about 3-inches apart and press the garlic slivers into the slits. Using a pastry brush, coat the entire roast with the mustard. Sprinkle on the peppercorn and garlic marinade to completely cover the roast. Place on a rack in a roasting pan and cook until the thermometer inserted into the center reads 130 degrees F. Remove the roast from the oven, cover with foil and allow to rest for 10 to 15 minutes.
  • To make the Au Jus: Place the roasting pan over stovetop burners on medium low. Whisk in the worcestershire sauce and wine and scrape up the little brown bits from the bottom of the roasting pan. Reduce slightly and add the broth. Bring to a simmer and reduce slightly. Serve along with the sliced prime rib.

HOMEMADE ROAST BEEF SANDWICH AU JUS

Homemade Roast Beef Sandwich Au Jus image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 2h50m

Yield 4 servings

Number Of Ingredients 28

2 tablespoons olive oil
1 tablespoon black peppercorns
1 teaspoon kosher salt
4 sprigs fresh thyme
2 cloves garlic, smashed
2 sprigs fresh rosemary
1 large shallot, thinly sliced
2 tablespoons dry sherry
4 cups low-sodium beef stock
1 cup white wine vinegar
2 tablespoons sugar
1 teaspoon coriander seeds
1 teaspoon kosher salt
1 star anise
1 bay leaf
1 clove garlic
2 cups thinly sliced radishes (about 8 ounces)
4 crusty hoagie rolls
1 pound Homemade Roast Beef, thinly sliced, recipe follows
8 thick slices gruyere
Watercress, for serving
1 tablespoon fresh rosemary leaves, minced
1 tablespoon fresh thyme leaves, minced
2 teaspoons kosher salt
1 teaspoon ground black pepper
3 cloves garlic, minced
One 4-pound boneless beef eye round roast
2 tablespoons olive oil

Steps:

  • For the au jus: Heat the oil over medium heat in a medium saucepan. Add the peppercorns, salt, thyme, garlic, rosemary and shallots. Cook the shallots, stirring occasionally, until they become translucent, 6 to 8 minutes. Add the sherry and simmer, a few minutes. Add the stock and simmer, 20 to 25 minutes. Remove the saucepan from the heat and strain the liquid. Keep warm.
  • For the pickled radishes: Simmer 1/2 cup water, the vinegar, sugar, coriander seeds, salt, star anise, bay leaf and garlic. After 10 minutes of simmering, pour the mixture over the radishes in a heat-proof container and cool.
  • For the sandwich build: Place the bottom halves of the rolls on a work surface. Place the sliced Homemade Roast Beef on the bottom. Top with 1 slice gruyere each, some pickled radishes and watercress. Cover with the tops of the rolls. Cut each sandwich in half, dunk into the au jus and realize sometimes leftovers are just better.
  • Preheat the oven to 400 degrees F. Mix the rosemary, thyme, salt, pepper and garlic in a small bowl. Rub the mixture all over the roast, cover with plastic wrap and refrigerate, about 20 minutes.
  • Heat the oil in a large heavy skillet over high heat. Wipe off the excess garlic and herbs and add the roast to the pan. Sear the roast on all sides, 2 to 3 minutes per side. Transfer the roast to a roasting pan with a rack. Roast until an instant-read thermometer inserted into the center registers 125 degrees F, about 50 minutes. Transfer the roast to a cutting board and let rest, about 10 minutes. Thinly slice the roast and serve.

SUPER BEEFY AU JUS

Super Beefy Au Jus image

There's nothing that goes with a good prime rib or many other cuts of beef like a traditional au jus sauce. But how do you make it? Let Foodal show you how now, with our stepy-by-step instructions.

Provided by Mike Quinn

Yield 8 servings

Number Of Ingredients 9

1 tablespoon Oil
beef scraps and bones ((optional))
beef drippings from roasted meat ((optional))
8 cups low sodium beef stock ((2 32-ounce cartons))
1 cup dry red wine ((semi-dry also works))
2 carrots (coarsely chopped)
1 onion (divided into 8ths)
1/4 teaspoon freshly ground black pepper
salt (to taste)

Steps:

  • Add oil to a 6 or 8-quart heavy duty stock pot (thick bottomed) and brown the meat scraps and bones over medium high heat. This is optional but it creates a bit of fond that adds to the flavor.
  • Add the remaining ingredients minus the black pepper and salt (and the beef drippings if the roast is not ready). Bring to a boil, cover, and reduce to a high simmer for 30 minutes.
  • Uncover the pot and add the black pepper if desired. Bring to boil and allow the liquid to reduce to about 1/3 of the original quantity.
  • Remove from heat and scoop out the bones, beef scraps, and vegetables with a slotted spoon. Add the beef drippings prior to serving.

  • Preheat oven to 475°F. Grease a heavy-duty rimmed baking sheet with 1 tablespoon oil, using cut sides of garlic heads to help distribute the oil. Arrange garlic, onion, carrots, and celery in an even layer on baking sheet. Toss together turkey parts and remaining 1 tablespoon oil in a large bowl, and arrange in an even layer over vegetable mixture. Roast in preheated oven until turkey begins to brown, about 20 minutes.
  • Reduce oven temperature to 350°F. Roast, without stirring, until wings are deep golden brown, 50 minutes to 1 hour and 10 minutes, checking vegetables every 20 minutes and adding up to 1/2 cup cold water and gently shaking baking sheet to prevent scorching.
  • Transfer baking sheet to stovetop. Place turkey parts in a 6-quart Dutch oven; add parsley sprigs and bay leaves. Pour wine over vegetables on baking sheet, and heat baking sheet over 2 burners over medium-low. Using a flat wooden spatula or spoon, scrape up any browned bits on baking sheet. Push garlic halves around mixture to help scrape up more of the browned bits, and gently smash garlic and vegetables while wine reduces. Cook, stirring often, until wine mixture has reduced to about 1/4 cup and is thick, opaque, and sticky, 10 to 12 minutes. Scrape vegetables and wine mixture into Dutch oven with turkey parts. Return baking sheet to 2 burners on stovetop over medium-high, and pour 1 cup cold water onto baking sheet. Cook, scraping up any stubborn browned bits, until baking sheet is mostly clean and water has reduced slightly, 2 to 3 minutes. Pour mixture from baking sheet into Dutch oven.
  • Add 7 cups cold water to Dutch oven; bring to a boil over medium-high. Reduce heat to medium-low; simmer, uncovered, until liquid has reduced by about half and turkey begins to fall apart, 1 hour and 30 minutes to 2 hours, pressing down turkey parts often so they remain submerged. Set a fine wire-mesh strainer over a medium-size heatproof bowl. Working in batches, pour mixture in Dutch oven through strainer, mashing turkey parts and vegetables with the back of a spoon to extract as much of their juices as possible; reserve liquid (the jus) and solids separately.
