Old Fashioned Baked Beans image

Deliciously thick, sweet, smoky and savory, these from-scratch Old Fashioned Baked Beans are sure to be a hit at your next BBQ, picnic, potluck or family dinner!

1 pound dried navy beans
8 ounces thick cut bacon (, diced)
1 medium yellow onion (, finely chopped)
2 cloves garlic (, minced)
1/2 cup plain tomato sauce or ketchup
1/4 cup molasses
1/2 cup brown sugar
2 tablespoons apple cider vinegar
1 tablespoon prepared yellow mustard
2 teaspoons Worcestershire sauce
1 teaspoon smoked paprika
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 bay leaf

Steps:

  • Place the dried beans in a pot of water covered by a few inches of water and let soak overnight. Drain the beans, place them back in the pot with fresh water and bring to a boil. Simmer for one hour, then drain, reserving the liquid. See NOTE.
  • In a Dutch oven or other oven-proof pot fry the bacon until crispy then add the onions and cook until soft and translucent, 5-7 minutes. Add the garlic and cook for another minute.Stir in the tomato sauce, molasses, brown sugar, apple cider vinegar, mustard, Worcestershire sauce, smoked paprika, salt, pepper and bay leaf.Add 1 1/2 cups of the reserved bean water and the beans.Bring everything to a simmer for a minute or two to heat it up. In the meantime preheat the oven to 325 degrees F.
  • Transfer the Dutch oven with the lid on to the middle rack of the oven. Bake for 2 to 3 hours or until the beans are tender and the sauce has thickened, removing the lid during the last 20-30 minutes to help the sauce thicken. NOTE: If at any point during the cooking process too much liquid evaporates and the beans get dry, add a little more of the reserved bean water. The beans themselves can vary from batch to batch and you may end up either needing to add more liquid if the beans are too dry or you may need to bake the beans longer with the lid off if there is too much liquid. Adjust as needed.Add more salt the pepper to taste.Serve immediately or let cool completely and refrigerate until ready to serve. Can be reheated on the stovetop or in the microwave.
  • SLOW COOKER METHOD: Follow steps 1 and 2 and then pour everything into the slow cooker. Cook on LOW for 6-7 hours or on HIGH for 3-4 hours or until the beans are tender. Open the lid for the last 30 minutes or longer until the sauce has thickened. If the beans are too thick at any point and too much liquid has evaporated, stir in a little extra water.

1 pound bacon
1 large yellow onion, finely diced
4 (14-ounces each) cans Pork and Beans
1/2 cup dark molasses
1/4 cup light brown sugar
1/4 cup ketchup
2 tablespoons prepared yellow mustard
2 teaspoons Worcestershire sauce

Steps:

  • Preheat the oven to 350ºF.
  • Dice the bacon, then add to a large skillet over medium-high heat. Cook until crisp. Remove from the pan using a slotted spoon to a plate lined with paper towels.
  • Add the onions to the pan with the bacon drippings and saute until translucent and soft.
  • In a large bowl, combine the beans, molasses, brown sugar, ketchup, mustard and Worcestershire sauce. Stir in the cooked onions and the bacon.
  • Pour the beans into a 3-quart baking dish. Bake, uncovered, for 45 minutes, or until heated through and bubbling.

Skip store-bought cans, because you can't beat the sweet, savory and smoky taste of homemade baked beans with bacon and molasses. The perfect picnic, potluck or cookout dish!

1 lb. dried navy or great Northern beans, rinsed and sorted
½ lb. bacon, chopped
1 medium onion, diced
½ cup ketchup
¾ cup molasses
2 tablespoons apple cider vinegar
2 teaspoons dry mustard
2 cups chicken broth
Kosher salt and freshly-ground black pepper
Optional garnish: chopped fresh parsley, chives or sliced green onions

Steps:

  • Place beans in a large bowl or pot. Cover with water by 2 inches. Cover and let stand overnight. Drain and rinse the beans.
  • Place the beans in a large pot and cover with fresh water (about 1 quart). Bring to a boil, then reduce the heat so that the liquid is at a gentle simmer. Cover the pot and simmer the beans until tender, about 1 ½ hours. Drain and rinse.
  • Preheat oven to 325° F.
  • In a large Dutch oven over medium heat, cook bacon until crisp, about 7-8 minutes. Use a slotted spoon to remove the bacon to a paper towel-lined plate; reserve 2 tablespoons of drippings in the pot (discard any excess).
  • Add the onion to the drippings in the pot and season with a pinch of salt. Cook over medium-high heat until the onion softens, about 5 minutes.
  • Stir in the beans, bacon, ketchup, molasses, vinegar, dry mustard, ½ teaspoon kosher salt and ¼ teaspoon of black pepper. Add enough of the broth to cover the beans (if necessary, add water as well to cover the beans).
  • Cover and bake until the beans are tender, about 2 hours, stirring the pot halfway through.
  • Taste and season with additional salt and pepper, if necessary. Garnish with chopped fresh parsley, chives or sliced green onions.

3 ounces pancetta, diced
5 slices thick-cut bacon, diced
1 small onion, finely chopped
1 tablespoon minced peeled ginger
2 cloves garlic, minced
2 1/2 teaspoons chili powder
1 15-ounce can whole tomatoes, crushed by hand
3 tablespoons molasses
1 tablespoon Worcestershire sauce
1 tablespoon apple cider vinegar
1 teaspoon mustard powder
Kosher salt and freshly ground pepper
2 15-ounce cans pinto beans, drained and rinsed
1 15-ounce can navy beans, undrained
2 hamburger buns or 3 slices white sandwich bread, torn into pieces

Steps:

  • Preheat the oven to 375 degrees F. Cook the pancetta and about two-thirds of the bacon in a large skillet over medium heat, stirring occasionally, until crisp, about 10 minutes. Transfer the bacon and pancetta to a bowl using a slotted spoon. Reserve the drippings in the skillet.
  • Add the onion to the skillet and cook, stirring occasionally, until soft and golden, about 8 minutes. Add the ginger, garlic and chili powder and cook, stirring, 1 minute. Add the tomatoes and their juice, the molasses, Worcestershire sauce, vinegar, mustard powder, 1/2 teaspoon salt, and pepper to taste. Increase the heat to medium high, bring to a simmer and cook until slightly thickened, about 5 minutes. Add the pinto beans, then add the navy beans and their liquid and return to a simmer. Stir in the pancetta-bacon mixture. Transfer to a 2-quart baking dish.
  • Pulse the buns with the remaining uncooked bacon in a food processor until finely ground. Sprinkle the crumbs evenly over the bean mixture. Cover and bake 45 minutes, then uncover and bake until the crumbs are golden brown, about 20 more minutes.

6 slices bacon
2 (16 ounce) cans baked beans
1 onion, diced
¼ cup yellow mustard
¾ cup ketchup
1 cup packed brown sugar
1 Granny Smith apple - peeled, cored and diced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Cook bacon in a large skillet or in the microwave until much of the grease has been released, but the bacon is still flexible. Drain on paper towels and set aside.
  • In a 9 inch square baking dish, stir together the baked beans, onion, mustard, ketchup, brown sugar and apple. Top with slices of bacon.
  • Bake uncovered for 45 minutes in the preheated oven, until the bacon is crisp and beans are bubbling hot.

6 slices bacon, cut into 3/4 inch pieces
2 onions, peeled and chopped (1 pound)
3 (28 ounce) cans boston-style baked beans
1/2 cup catsup
2 tablespoons firmly packed brown sugar
1 tablespoon dry mustard

Steps:

  • In 6-quart pan over medium-high heat, stir bacon often until browned and crisp, 6 to 8 minutes.
  • Remove to paper towel and drain all but 1 1/2 tablespoons fat in pan.
  • Add onions to pan and stir often until they begin to brown and stick to bottom of pan, 7 to 9 minutes.
  • Add beans and their liquid, catsup, brown sugar, dry mustard,and cooked bacon; mix well.
  • Pour into a shallow 3-quart casserole.
  • Bake beans, uncovered, in a 350°F oven until they are bubbling in the center, 30 to 40 minutes.
  • Serve hot.

1 lb applewood-smoked bacon
2 (28 ounce) cans brown sugar baked beans (Bush's Homestyle)
1/3 cup ketchup
1/8-1/4 teaspoon garlic powder
1 small onions or 1 medium onion, chopped

Steps:

  • BAKED BACON:.
  • Preheat oven to 375°F.
  • Line a half sheet with aluminum foil and put a cooling rack on top. Arrange slices in rows, with fat edges slightly overlapping lean edges.
  • Bake 375 degrees without turning 20-25 minutes (depending on thickness) but remove from oven before it begins to crisp. If needed, cook more, 2 minutes at a time.
  • Remove bacon to double layer of paper towel and blot excess grease.
  • Lay bacon on cutting board and cut into bite-size pieces before completely cool. (I cut across the entire pile of bacon with one slice.).
  • BAKED BEANS:.
  • Set oven to 350°F.
  • Mix the Baked Beans ingredients in a 3-quart casserole dish or half buffet tray. Add the cut-up cooked bacon and mix a little.
  • Bake uncovered for 1 hour.
  • Allow to cool 1 hour before serving.

1 pound dry white beans, like navy, pea or cannellini (see note)
2 whole cloves
1 small onion, halved lengthwise and peeled
2 garlic cloves, smashed and peeled
1 bay leaf
1 teaspoon salt, more to taste
1/4 cup ketchup
1/4 cup molasses
3 tablespoons apple cider vinegar
1 1/2 teaspoons dry mustard powder
1/4 teaspoon Tabasco sauce, or to taste
1/4 teaspoon freshly ground black pepper
6 slices thick-cut bacon
Chopped red onion, for garnish

Steps:

  • Cover beans with water to top them by 2 inches and refrigerate overnight, or bring to boil in water to cover, cool 1 hour.
  • Drain and rinse beans. Put them in a pot. Stick whole cloves into onion halves and add to pot along with garlic and bay leaf. Cover with enough water to top them by 1 inch. Simmer beans, partly covered, until just tender, about 1 to 2 hours depending upon age and size of beans; do not overcook. Add boiling water if beans look dry during cooking; they should be surrounded by just a little liquid.
  • Remove onion, cloves, garlic (if desired) and bay leaf from pot. Stir in the salt.
  • In a small bowl, mix together ketchup, molasses, vinegar, mustard powder, Tabasco and pepper. Pour mixture into beans and stir well. Add a slice of bacon to pot and bring everything to a simmer. Let simmer over low heat until beans are thickened, about 30 to 45 minutes. Remove bacon slice, if desired. Season with more salt if needed.
  • Just before serving, reheat beans, if necessary. Fry remaining bacon in large skillet and drain on paper-towel-lined plate. Transfer beans to heated gratin dish or baking pan and top with bacon and red onion. Serve hot.

1-1/2 teaspoons salt
4 quarts cold water, divided
1 cup chopped red onion
1/2 cup molasses
6 bacon strips, cooked and crumbled

Steps:

  • In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. 1 tablespoon olive oil
2 brown onions or 2 yellow onions, finely chopped
6 whole cloves
2 (16 ounce) cans cannellini beans, rinsed and drained
1 (28 ounce) can italian diced roma tomatoes
2 tablespoons light molasses
2 tablespoons brown sugar
3 bay leaves
salt and black pepper
1 lb bacon, bones or 1 lb pork neck bones
6 slices bacon, trimmed

Steps:

  • Preheat oven to 180°C (350F). Heat oil in a large ovenproof casserole dish over medium heat.
  • Add onions and cook, stirring, for 3 minutes or until tender. Add cloves, beans, tomatoes, molasses, sugar and bay leaves. Season with salt and pepper.
  • Stir well, then bring to the boil. Reduce heat and simmer for 10 minutes.
  • Add bacon/pork bones and cover with lid or foil. Bake for 45 minutes, or until beans are tender and sauce is thick. Remove and discard bacon bones, and cloves (if you can find them).
  • Cook bacon in a frying pan over medium-high heat for 2 to 3 minutes on each side. Serve beans topped with crispy bacon and on toast (or with barbecue), if desired.
