2 baked 9-inch round white cake layers, cooled
2 cups boiling water, divided
1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin, or any red flavor
1 pkg. (3 oz.) JELL-O Lime Flavor Gelatin
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1/4 cup fresh raspberries

Steps:

  • Place cakes, top-sides up, in clean 9-inch round pans; pierce with large fork at 1/2-inch intervals.
  • Add 1 cup boiling water to each flavor dry gelatin mix in separate small bowls; stir 2 min. until completely dissolved. Pour red gelatin over 1 cake and lime gelatin over remaining cake. Refrigerate 3 hours.
  • Dip bottoms of cake pans in warm water 10 sec.; unmold. Fill and frost cake layers with COOL WHIP. Refrigerate 1 hour. Top with berries.

1 package (8 ounces) chopped mixed candied fruit
1-1/4 cups golden raisins
1 cup chopped walnuts, toasted
3 cups all-purpose flour, divided
2 cups butter, softened
2 cups sugar
6 large eggs, room temperature

Steps:

  • Preheat oven to 275°. Line bottoms of four greased 9x5-in. loaf pans with parchment; grease parchment., In a small bowl, toss candied fruit, raisins and walnuts with 1/2 cup flour. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Gradually beat in remaining flour. Fold in fruit mixture., Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pans 10 minutes before removing to wire racks to cool.

My mother has been making this fruit cake at Christmas time for as long as I can remember. My whole family loves it. I know there are a lot of people out there that have issues with fruit cake, but this recipe has converted even the most reluctant.

1 ½ cups candied pineapple chunks
3 cups golden raisins
1 ½ cups candied cherries
1 cup dried currants
2 ounces candied orange peel
2 ounces candied citron peel
½ cup orange juice
2 cups butter
4 cups confectioners' sugar
8 eggs, separated
4 cups pecans, chopped
3 cups sifted all-purpose flour

Steps:

  • Chop pineapple, raisins, and cherries. Combine chopped fruit with currants, orange peel, and citron; soak in orange juice overnight.
  • Preheat oven to 275 degrees F (135 degrees C). Place a small pan of water in the oven. Line one 5x9 inch loaf pan and two 3x8 inch loaf pans with parchment or doubled waxed paper.
  • In a large bowl, cream butter and confectioner's sugar. Stir in beaten egg yolks. Stir in fruit, juice, and pecans. Mix in sifted flour.
  • In a clean bowl, beat the egg whites to peaks. Fold into batter. Fill pans 2/3 full.
  • Bake for 2 to 2 1/2 hours until golden brown, or until toothpick comes out clean when inserted.

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F and line a standard 12-cup muffin tin with cupcake liners.
  • Add the brown sugar, granulated sugar, and unsalted butter to a large bowl and cream together using a hand or stand mixer.
  • Beat in the vanilla, eggs, sour cream and buttermilk.
  • In a separate bowl, stir together the all-purpose flour, unsweetened cocoa, instant coffee, baking powder, baking soda and salt.
  • Add the dry ingredients into the wet and stir just to combine.

  • Spoon the colored frosting into a piping bag fitted with a star tip. Start by piping a center star and then work your way around the top of the cupcake, moving slowly in as you go, to form a triangular shape, like a tree.
  • Top with your favorite holiday sprinkles and dust with the confectioner's sugar for a snowy effect.

1 1/2 cups milk
2 1/2 cups all-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
3/4 cup unsalted butter (room temperature)
1 1/4 cups granulated sugar
3 large eggs (room temperature)
1 tsp vanilla
6 large egg whites
2 cups granulated sugar
2 cups unsalted butter (room temperature)
6 oz white chocolate (chopped, melted, cooled)
3.75 oz white chocolate (finely chopped)
1.5 oz heavy cream
5 drops bright white color gel
12 white chocolate Lindt truffles
white chocolate shavings

Steps:

  • Heat milk and chocolate until melted and combined, cool to room temperature.*
  • Preheat oven to 350F. Grease and flour three 6" cake rounds and line with parchment.
  • In a medium bowl, whisk flour, baking powder, and salt until well combined. Set aside.
  • Using a stand mixer fitted with a paddle attachment, cream butter and sugar on med-high until pale and fluffy (approx 3mins). Reduce speed and add eggs one at a time fully incorporating after each addition. Add vanilla.
  • Alternate adding flour mixture and milk mixture, beginning and ending with flour (4 additions of flour and 3 of milk). Fully incorporating after each addition.
  • Bake for about 40mins or until a toothpick inserted into the center comes out mostly clean.
  • Place cakes on wire rack to cool for 10mins then turn out onto wire rack and cool completely.
  • Place egg whites and sugar into the bowl of a stand mixer, whisk until combined.**
  • Place bowl over a pot with 1-2" of simmering water and stir constantly with a whisk until the mixture is hot and no longer grainy to the touch or reads 160F on a candy thermometer (approx. 3mins)
  • Place bowl on your stand mixer and whisk on med-high until the meringue is stiff and cooled (the bowl is no longer warm to the touch (approx. 5-10mins)).
  • Switch to paddle attachment. Slowly add cubed butter and mix until smooth.***
  • Add melted, cooled white chocolate and whip until smooth.
  • Place chopped chocolate and cream in a microwave safe bowl. Microwave in 5-10 second increments, stirring in between, until smooth and combined. Add a few drops of bright white color gel to get the desired color. Set aside to thicken and cool completely.
  • Place one layer of cake on a cake stand or serving plate. Top with 1 cup of buttercream and spread evenly. Repeat with remaining layers and crumb coat the cake. Chill for 20mins.
  • Frost and smooth the sides with the remaining frosting. Use a scalloped cake comb to create the textured effect on the sides. Smooth the top. Chill for 30mins until frosting is cold and firm.
  • Using a small spoon, place dollops of ganache around the top edges of the chilled cake, allowing some to drip down. Fill in the top of the cake with more ganache and spread evenly with an offset spatula. Chill to set ganache (5 mins).
  • Pipe dollops on top using an Ateco or Wilton 1M tip, top each with a Lindt White Chocolate Truffle if desired. Sprinkle chocolate shavings along the bottom and to fill in the top.

1 2-layer-size cake mix
1 cup frosting
12 ounce vanilla- or chocolate-flavored candy coating, chopped
12 ounce semisweet, dark, or white baking chocolate, chopped
34 lollipop sticks
0.25 cup butter, softened
2.667 cup powdered sugar
2 tablespoon milk
0.5 teaspoon vanilla

Steps:

  • Prepare desired-flavor cake mix according to package directions. Use any suggested pan size and bake according to package directions. Cool in pan on a wire rack. Line trays or baking sheets with parchment or waxed paper; set aside.
  • Remove cooled cake from pan and crumble into a very large mixing bowl. Add desired-flavor frosting. Beat with an electric mixer on low speed until combined. Using a small scoop, drop mixture into 1 1/2-inch mounds onto prepared trays; roll mounds into balls and freeze for 30 minutes.
  • In a small microwave-safe dish heat 1 ounce of the coating (about 1/4 cup) on 50% power (medium) for 60 seconds until melted and smooth, stirring once. Dip one end of each lollipop stick into melted chocolate and poke sticks into balls (this helps the balls stay on the sticks). Freeze for 30 to 60 minutes more or until balls are firm.
  • Place remaining candy coating and chopped chocolate in a small saucepan. Heat over medium-low heat until melted and smooth, stirring frequently. Working in batches, dip balls into melted chocolate mixture. Allow excess to drip off; place balls on clean waxed paper-lined trays or baking sheets.** After coating is set, transfer to storage containers and store, covered, in refrigerator. Let stand at room temperature at least 30 minutes before serving. Basic Butter Frosting
  • In a medium mixing bowl beat butter with an electric mixer on medium speed until smooth. Gradually add 2/3 cup powdered sugar, beating well. Slowly beat in 2 tablespoons milk and vanilla. Gradually beat in the remaining 2 cups powdered sugar. If needed, beat in additional milk, 1 teaspoon at a time, to make a frosting of spreading consistency.

8 ounces cream cheese
1 1/2 cups sugar
2 teaspoons lemon zest, grated
1 teaspoon vanilla
4 eggs
2 cups flour

1/2 cup raisins
1/2 cup golden raisin
1/2 cup mixed deluxe candied fruit
1/2 cup maraschino cherry, drain on paper towel

Steps:

  • With electric beaters, cream butter and cream cheese.
  • Add sugar mix well.
  • Beat in zest and vanilla.
  • Add eggs, one at a time beat well after each addition.
  • Reserve 1/4 cup flour.
  • Sift remaining flour with baking powder and blend into creamed mixture.
  • In a small bowl combine both kinds of raisins, candied fruit and maraschino cherries; toss with the 1/4 cup flour. (The cherries I like to leave whole--I think they look nice when the cake is cut, but its up to you to either leave them whole or chop them.).
  • Stir fruit into batter.
  • Pour into greased and floured 10-inch bundt or tube pan.
  • Bake 300°F for 70-80 minutes or until toothpick comes out clean. Let cool in pan for 10 minutes then turn out onto wire rack to cool completely.
  • I have made this cake in loaf pans (2) (Bake time for loaf is 45-55 minutes) which allows me to cut them into smaller servings and I put them on my Christmas goodie trays. This cake freezes well.

1 (18 ounce) box white cake mix
3 eggs (or as indicated for cake mix)
1/2 cup vegetable oil (or as indicated for cake mix)
1 cup water (or as indicated for cake mix)
1 (3 ounce) package red Jell-O
1 (3 ounce) package green Jell-O
2 cups boiling water
1 (8 ounce) container Cool Whip

Steps:

  • Prepare cake mix using the directions on the cake box.
  • Pour the batter into 2 round pans (8 or 9 inch).
  • Bake as directed on cake box.
  • Cool 10 minutes.
  • Remove from pans; cool completely.
  • Place cake layers top sides up back into the two clean pans.
  • Prick each layer with a utility fork at 1/2 inch intervals.
  • Pour 1 cup of boiling water over red flavor gelatin, stir until gelatin is dissolved.
  • Spoon over one of the cake layers.
  • Do the same with the green Jello.
  • Refrigerate 3 to 4 hours.
  • Dip the bottom of one pan into warm water for 10 seconds; invert onto a plate, gently shaking to loosen.
  • Remove pan; spread with 1 cup of whipped topping,.
  • Remove other layer the same way; put on top of first layer.
  • Top with remaining whip cream.
  • Garnish with gumdrops cut to resemble holly. Use green dye for leaves.

1 1/2 cups sugar
12 large egg whites, room temperature

1 teaspoon cream of tartar
1 teaspoon pure vanilla extract
1/2 teaspoon coarse salt
1/4 teaspoon pure coconut extract
Coconut Glaze
2 cups unsweetened large-flake coconut
Angel Lollipops, for garnish

Steps:

  • Preheat oven to 325 degrees, with rack in the lower third of oven. Sift together flour and 3/4 cup sugar 4 times.
  • Beat egg whites and warm water with a mixer on low speed until foamy, about 3 minutes. Add cream of tartar, vanilla, salt, and coconut extract. Raise speed to medium, and beat until soft peaks form, about 3 minutes. With machine running, add remaining 3/4 cup sugar, 1 tablespoon at a time. Raise speed to high, and beat until peaks are stiff and glossy, but not dry, about 2 minutes.
  • Working in 3 batches, sift flour mixture over egg-white mixture, gently folding in each addition with a rubber spatula, being careful not to deflate egg whites.
  • Slowly pour batter into a 10-inch angel food cake pan. Gently run a knife through center of batter to release any air bubbles, and smooth using an offset spatula. Bake until cake is golden brown and springs back when touched, 40 to 45 minutes.
  • Invert pan onto a wire rack. Let cake cool in pan, about 1 hour. Carefully run a knife around sides of cake to loosen, and turn out onto a large plate or cake stand.
  • Pour coconut glaze onto cake, and spread evenly using an offset spatula to cover completely. Gently press coconut onto cake. Let stand until set, about 1 hour. Garnish with lollipops.
