A staple at our house for years. Easy enough for Sunday football but tasty enough for a dinner party.

Steps:
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Place butter in a microwave-safe bowl. Heat in the microwave until melted, 30 seconds to 1 minute. Dip the bottom of each mushroom cap in melted butter and place on a rimmed baking sheet.
- Stir Monterey Jack cheese, garlic powder, and thyme into the remaining melted butter. Stir in wine and soy sauce. Add enough bread crumbs to make a wet and sticky mixture.
- Spoon bread crumb mixture into each mushroom cap, mounding it slightly to use up all the filling.
- Broil in the preheated oven until brown and bubbly, 3 to 4 minutes. Cool slightly before serving, about 5 minutes.

CREAMY MUSHROOM SOUP

Steps:
- Heat 2 tablespoons butter in a pot over medium-high heat. When the butter has melted, add a third of the mushrooms to the pot. Cook, stirring occasionally, until dark golden brown, about 5 minutes. Season with salt and pepper, then remove them from the pot and reserve for serving.
- In the same pot, melt the remaining 2 tablespoons butter. Reduce the heat to medium and, when the butter has melted, add the rest of the mushrooms, along with the garlic, celery, thyme and onion. Cook, stirring frequently, until the vegetables are soft, 5 to 6 minutes. Sprinkle the vegetables with the flour and stir to combine. Season with salt and pepper, then cook, stirring constantly, for 3 minutes, allowing the flour to cook.
- Slowly pour in the sherry, stirring all the time, then slowly add the stock. Keep stirring to reduce the likelihood of lumps. Bring to a simmer and cook, stirring occasionally, until slightly reduced and thickened, about 20 minutes.
- Using an immersion blender, puree until the mushrooms are mostly broken up into small barley-sized bits. (NOTE: You may use a blender, though allow the soup to cool until warm before pureeing.) Add the cream and heat until the pot is simmering. Add the balsamic, then taste and adjust the seasonings.
- Serve warm in bowls with the reserved mushrooms on top. Garnish with parsley and crusty chunks of warm bread.
HOLIDAY MUSHROOMS
This dish is always requested at Christmas and Easter.I always make two because one is never enough!

Steps:
- Clean and slice mushrooms.
- Layer about a third of mushrooms in a 2-quart baking dish; layer with a third of bread crumbs and drizzle with a third of melted butter.
- Sprinkle with salt and pepper to taste.
- Repeat for second layer.
- Cover with remaining mushrooms.
- Sprinkle with salt and pepper and wine.
- Cover and bake in 325 degree oven for about 35 minutes.
- Mix remaining crumbs and butter and spoon over mushrooms.
- Bake, uncovered 10 minutes or until crumbs are toasted.

- Use a small spoon to gently scrape away the gills from each mushroom. You'll be surprised how much you'll scrape out of those little mushrooms, and more space equals more filling!
