JAM THUMBPRINT COOKIES

3/4 pound (3 sticks) unsalted butter, at room temperature
1 cup sugar
1 teaspoon pure vanilla extract
3 1/2 cups all-purpose flour
1/4 teaspoon kosher salt
1 egg beaten with 1 tablespoon water, for egg wash
7 ounces sweetened flaked coconut
Raspberry and/or apricot jam

Steps:

  • Preheat the oven to 350 degrees F.
  • In an electric mixer fitted with the paddle attachment, cream together the butter and sugar until they are just combined and then add the vanilla. Separately, sift together the flour and salt. With the mixer on low speed, add the flour mixture to the creamed butter and sugar. Mix until the dough starts to come together. Dump on a floured board and roll together into a flat disk. Wrap in plastic and chill for 30 minutes.
  • Roll the dough into 1 1/4-inch balls. (If you have a scale they should each weigh 1 ounce.) Dip each ball into the egg wash and then roll it in coconut. Place the balls on an ungreased cookie sheet and press a light indentation into the top of each with your finger. Drop 1/4 teaspoon of jam into each indentation. Bake for 20 to 25 minutes, until the coconut is a golden brown. Cool and serve.

2 ½ quarts strawberries, coarsely chopped
1 (12 ounce) package fresh or frozen cranberries, coarsely chopped
2 (2 ounce) packages powdered fruit pectin
1 teaspoon margarine
5 pounds white sugar

Steps:

  • Sterilize jars and lids in boiling water for at least 10 minutes. Let simmer while making jam.
  • In a large saucepan, combine strawberries, cranberries, pectin, and margarine. Bring to a boil. Stir in sugar, and return to a boil. Cook for 1 minute; remove from heat.
  • Quickly fill jars to within 1/2 inch from top. Wipe rims clean, and put on lids. Process in a boiling water bath for 5 minutes.

Number Of Ingredients 5

2 cups fresh or frozen cranberries
1 medium orange, peeled and broken into sections
1 carton (16 ounces) frozen sliced strawberries, thawed
3 cups sugar
1 pouch (3 ounces) liquid fruit pectin

Steps:

  • In a food processor, coarsely process cranberries and orange sections. Place in a Dutch oven with strawberries and sugar. Bring to a full rolling boil over high heat, stirring constantly. Boil for 1 minute. , Remove from the heat and stir in the pectin. Skim off the foam. Carefully ladle into hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process for 10 minutes in a boiling-water canner.

These cute little Thumbprint Cookies are easy to make with a dollop of your favorite jam! They're soft, chewy, and made with just 7 ingredients.

1 cup unsalted butter, room temperature
1/2 cup (104g) sugar (plus 3-4 tbsp for rolling)
2 large egg yolks
1 tsp vanilla extract
2 cups (260g) all purpose flour
1/4 tsp salt
1/2 cup jam, any flavor

Steps:

  • Preheat oven to 350°F (180°C). Line baking sheets with parchment paper or silicone baking mats. Set aside.
  • Cream the butter and sugar together in a large mixer bowl on medium speed until light in color and fluffy. You should be able to see the change in color happen and know it's ready.
  • Add the egg yolks one at a time and mix until well combined after each.
  • Add the vanilla extract and mix until well combined.
  • Add the flour and salt and mix until the dough is just well combined. Do not over mix.
  • Create 1 1/2 tablespoon sized balls of cookie dough. Gently roll into a ball, then roll in additional sugar (if using), then set the balls on the baking sheet.
  • Use the end of a spatula, your thumb or the bottom of a measuring spoon to press the centers of the cookies down. Do this immediately after rolling them to help prevent the cookies from cracking.
  • Fill the centers with jam. I used roughly 1/2 teaspoon per cookie.
  • Bake cookies for 10-13 minutes or until the edges JUST begin to brown. You don't want to overbake them and have dry cookies.
  • Allow cookies to cool on the baking sheet for 5-10 minutes, then move to a cooling rack to finishing cooling.

1 large mixing bowl
1 set of measuring cups
1 set of measuring spoons
1 sifter
1 small bowl
1 fork
1 cookie sheet
aluminum foil
1 teaspoon
1 spatula
2 potholders
1 wire cooling rack
2 cups all-purpose flour
2/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
4 tablespoons vegetable oil
1 teaspoon vanilla extract
1/3 cup jam, your favorite flavor

Steps:

  • Wash your hands and put on an apron. Take the sifter, and put these ingredients into it: the flour, the sugar, the baking powder and the salt.
  • Sift the ingredients into the mixing bowl.
  • Break the 2 eggs into the small bowl, trying not to get any pieces of eggshell in the cup. Now, in the same bowl, add the vegetable oil and the vanilla extract.
  • With a fork, mix everything in the bowl together. Pour this mixture over the ingredients in the mixing bowl. Use your hands to mush everything together and make a nice yellow ball of dough.
  • Have an adult help you turn on the oven and set it to 350 degrees.
  • Wrap the cookie sheet with aluminum foil, keeping it nice and smooth. Break off pieces of dough that are about the size of a cherry. Roll them into balls between the palms of your hands, and put them on the cookie sheet. Leave 2 inches of space between the dough balls. Don't worry if you don't use all the dough because you can make another batch.
  • Use your fingers to press the cookies and make them flat. Try to make them all about the same size. With the teaspoon put some jam in the center of each one.
  • Have an adult help you put the cookie sheet into the oven. Bake the cookies for 20 to 25 minutes - until they are golden brown.
  • Have an adult help you take the cookies out of the oven; then let the hot cookies cool for a few minutes. Next, have an adult help you slide them off the cookie sheet with the spatula, and put them on a wire rack. Let them cool some more while you make another batch with the rest of the dough.

1 lb fresh cranberries or 1 lb frozen cranberries
5 lbs sugar
2 (3 ounce) envelopes liquid fruit pectin

Steps:

  • Grind strawberries and cranberries in a food processor or grinder; place in a large kettle. Add sugar. Bring to a full rolling boil; boil for 1 minute. Stir in pectin; reutrn to a full rolling boil. Boil for 1 minute, stirring constantly. Remove from the heat. Cool for 5 minutes, skim of foam. Immediately pour into hot jars, leaving 1/4 inch headspace. Adjust caps. Process for 15 minutes in a boiling water bath.

1 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
3 to 3-1/2 cups all-purpose flour
1/3 cup sweetened shredded coconut
1 large egg
1 tablespoon water
1/3 cup apricot or red raspberry preserves
Confectioners' sugar, optional

Steps:

  • In a large bowl, cream the butter, sugar, vanilla and salt until light and fluffy. Gradually beat in enough flour to form a smooth dough., Preheat oven to 350°. Place coconut in a small bowl. In a separate bowl, whisk egg and water. Shape cookie dough into 1-in. balls; dip tops in egg mixture, then in coconut, pressing slightly to adhere. Place 1-1/2 in. apart on parchment-lined baking sheets, coconut side up., Press a deep indentation in center of each with the end of a wooden spoon handle. Fill with preserves., Bake 15-18 minutes or until bottoms are browned. Remove to wire racks to cool. If desired, dust tops with confectioner's sugar.
