HOLIDAY SNOWBALL COOKIES (SPONSORED)

Steps:
- PREHEAT oven to 375°F.
- BEAT butter, sugar, vanilla extract and salt in large mixer bowl until creamy. Gradually beat in flour; stir in morsels and nuts. Shape level tablespoons of dough into 1 1/4-inch balls. Place on ungreased baking sheets.
- BAKE for 10 to 12 minutes or until cookies are set and lightly browned. Remove from oven. Sift powdered sugar over hot cookies on baking sheets. Cool on baking sheets for 10 minutes; remove to wire racks to cool completely. Sprinkle with additional powdered sugar, if desired. Store in airtight containers.
RUM PECAN SNOWBALLS
My first makings of this were between Thanksgiving and New Years, so I tend to associate it with that holiday season...However, there's absolutely nothing wrong with making them for any party, any time of the year

Steps:
- Preheat oven to 325°F.
- Beat together the Crisco, confectioner's sugar, milk and rum extract until creamy.
- In another bowl, combine the flour, oats and pecans.
- Add this dry mixture to the other creamed mixture and mix it well.
- Shape dough into balls by the teaspoonful and place on an ungreased cookie sheet.
- Bake in the preheated 325°F oven for 15-18 minute.
- While still warm from the oven, roll them in confectioner's sugar; then finish cooling on a wire rack.
- When completely cool, roll in the confectioner's sugar again.
- Store in an airtight container.
- Variation: Turn this into a new recipe by swapping out the pecans for walnuts to create Rum Walnut Balls instead.

HOLIDAY CONFETTI SNOWBALLS
One of my elementary children's parents made these for me this Christmas season, as a thank you for driving their child to school, and I could not stop eating them. Ran out and had to get the recipe so I could make more! I am so hooked on these wonderful cookies, its not funny!

- Heat oven to 350°F.
- Beat butter, sugar and vanilla in large bowl until well blended. Gradually blend in flour. (Mixture will be crumbly, but will hold a shape if squeezed.)
- Stir in candies. Shape mixture into 1-inch balls.
- Place on ungreased cookie sheet.
- Bake 10 to 12 minutes or until set but not browned.
- Cool slightly; remove from cookie sheet to wire rack.
- While still slightly warm, roll in powdered sugar.
- Cool completely.
- Store in tightly covered container. Roll again in powdered sugar just before serving.

PEANUT BUTTER SNOWBALLS
After reading the last two reviews, I checked the ingredients. I made a mistake in the amount of powdered sugar. I did correct it.These cookies are fantastic for any occasion. My aunt tinted the coconut different pastel colors for her daughters wedding. This is my Aunts recipe. It has been in the family for more that 40 years. These also freeze well. I'm not sure how many cookies this recipe makes but I will guess on the amount. We use Jiff extra crunchy.

- Mix throughly 1 cup of powdeed sugar, peanut butter, Rice Krispies melted butter.and vanilla.
- Batter will be stiff.
- Form into balls.
- Mix 1 cup of powdered sugar and canned milk.
- Roll balls in powdered sugar and canned milk mixture.
- Then roll in shredded coconut.
- Refrigerate.

- Heat oven to 400°F
- In large bowl, with mixer on high, beat butter and sugar until light and fluffy, about 2 minutes.
- Beat in vanilla and salt. Reduce mixer speed to low, and beat in flour (dough will be very dry). Beat in oats, crushed candy canes, and 12-15 drops of red food coloring. Shape heaping teaspoons of dough into balls, place on ungreased baking sheets 1/2 inch apart, and bake 15 to 18 minutes per batch.
- Place icing sugar in large bowl. Roll hot cookies in sugar, let cool completely, and repeat.

- Heat oven to 350 degrees. Have baking sheets ready.
- To make cookie: beat butter, powdered sugar, and vanilla in a large bowl with electric mixer until smooth. On low speed, gradually beat in flour. Chill 30 minutes or until firm.
- To make filling: mix candy and 1/4 cup of the powdered sugar. Mix cream cheese and milk until smooth. Stir in remaining 1/2 cup powdered sugar, 3 tablespoons of candy mixture, and 1 drops food coloring.
- Roll dough into 1-inch balls. Place 2 inches apart on baking sheets. Make deep hole in the center of each ball using fingertip or handle of a wooden spoon. Fill each hole with 1/4 teaspoon of the filling. (I find the easiest way to do this is with a pastry bag) Bake 12 to 14 minutes until set, but not brown (do not let filling bubble over top of cookies). Roll in remaining candy mixture while still hot. Cool on wire racks.

SNOWBALLS II
Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Cream the butter with 1/2 cup of the confectioners' sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.
- Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it's better to undercook them than to overcook them. While cookies are still hot, roll them in confectioners' sugar. Once they have cooled, roll them in confectioners' sugar once more.
