Chewy Rice Noodles in Hoisin Sesame Sauce image

Thick and chewy rice noodles coated in a slightly sweet, savoury, and really satisfying hoisin sesame sauce. Mix it all up and slurp away! You'll only need 1 pot, 1 bowl, 8 Ingredients, and 15 minutes (or less) to make this dish.This has easily become a staple weekday meal for this busy days since it's so easy to put together. These noodles can also be made gluten-free by using gluten-free hoisin sauce.

2 tbsp hoisin sauce (, use gluten-free hoisin sauce if needed)
1 tbsp Chinese sesame paste (see notes for sub)
2 tbsp warm water
1 tbsp maple syrup (or other sweetener)
1 clove garlic (minced)
1 tsp sesame seeds
130 g dry thick rice noodles (I used 10mm thick ones)
Bokchoy or other vegetables of choice like mustard greens (spinach, etc. (optional))
Soy sauce ( or tamari, to taste (optional))
Chili garlic sauce
Chopped scallion

Steps:

  • Place all the sauce ingredients in a bowl. Mix until well incorporated. Set aside.
  • Note: it's important that you have the sauce ready before cooking the noodles since you'll want to immediately add in the freshly cooked noodles to the sauce right after cooking.
  • Heat a small pot with water. Once it boils, add in the veggies (if using). Cook until tender. Set aside.
  • In the same pot, cook the noodles until chewy.
  • The noodles will turn into a solid white colour when ready. Best to try it too to see if it's cooked enough to your liking! I prefer mine really chewy.
  • Remove from the pot and then drain out the water.
  • Immediately transfer the noodles to the sauce.
  • Mix the noodles well to coat evenly. Feel free to add soy sauce and chili sauce, if you'd like, to taste.
  • Top with the chopped scallion and the blanched veggies (if using).
  • Enjoy and slurp away!

2 tablespoons sesame seeds
1 pound carrots, peeled and sliced 1/4-inch-thick on the diagonal
3 tablespoons hoisin sauce
2 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh chives

Steps:

  • Toast the sesame seeds in a large dry skillet over medium-high heat, stirring, until lightly browned, about 2 minutes. Transfer to a small dish and set aside.
  • To the same skillet, add the carrots, hoisin, butter, a pinch of salt, a few grinds of pepper and 1/2 cup water. Bring to a simmer over medium-high heat. Lower the heat to medium, cover and cook until the carrots are tender and easily pierced with a fork, about 20 minutes.
  • Uncover the skillet and raise the heat to medium-high. Simmer until the liquid has reduced to a glaze, about 2 minutes. Remove the pan from the heat. Adjust the seasoning with additional salt and pepper. Serve sprinkled with the toasted sesame seeds and chives.

This recipe is easy to make and tastes great. Amounts can be adjusted to suit individual tastes to make it more or less sweet and spicy. Black bean paste can be used in placed of the peanut butter. Goes well with chicken, pork, beef, wild game and dim sum.

1 teaspoon vegetable oil
2 teaspoons minced fresh ginger
1/4 cup hoisin sauce
1/2 cup fresh squeezed orange juice (from 2 oranges)
1/2 cup low sodium chicken broth
1 teaspoon toasted sesame oil
2 scallions, white and green parts sliced 1/8 inch thick on bias
table salt
ground black pepper

Steps:

  • Put oil in clean skillet and heat over medium heat until shimmering. Add ginger and cook, stirring constantly, until fragrant, about 15 seconds. Add hoisin sauce, orange juice, broth, and any juices from resting meat and bring to simmer, scraping bottom of skillet with wooden spoon to loosen browned bits. Simmer until liquid is reduced to 1 cup, 2 to 3 minutes. Stir in sesame oil and scallions. Adjust seasonings with salt and pepper, pour sauce over pork, and serve immediately.

My father would make this super spicy chicken dish ("Hacked Chicken") where the chicken was gently poached without seasonings and then topped with a super spicy sauce. I always loved that dish; the chicken was like a blank canvas and this jarringly spicy topping just woke it up. In college, I created this dorm room hybrid, bulking it up for my roommates with a pound of pasta, and I randomly added hoisin sauce (because I had a jar of it). The dish looks to recreate that contrast of something searching for flavor and a sauce that offers nothing but. The textures of the pasta only amplify the dish. These are really great eaten right out of the bowl or made and left to marinate for a few hours or overnight. To that end, they make great leftovers, if you have any. A note about the chicken stock: I love enriching stock with chicken, so make sure you reserve and use the poaching stock from this recipe for a soup, risotto or pan sauce.

2 tablespoons sesame seeds
2 cups chicken stock
4 small boneless, skinless chicken breasts
Kosher salt
12 ounces dried vermicelli (or angel hair) pasta
1/4 cup hoisin sauce
1/4 cup low-sodium soy sauce
3 tablespoons grated ginger
2 tablespoons sesame oil
1 tablespoon apple cider vinegar
1 teaspoon hot sauce (Tabasco recommended)
6 scallions, thinly sliced

Steps:

  • Place the sesame seeds in a dry skillet over medium heat and toast until lightly browned, 2 to 3 minutes. Remove from the heat and set aside.
  • Cook the chicken. In a medium skillet, bring the chicken stock to a simmer over medium-high heat. Submerge the chicken breasts in the stock, then reduce the heat to low and poach until the meat is completely cooked through and the internal temperature in the thickest part of the chicken breast registers 165 degrees F on a meat thermometer, 8 to 10 minutes. Transfer the chicken to a cutting board and let rest for 5 to 10 minutes. Use a sharp knife to cut the meat into 1/4-inch-thick slices. Set aside. Let the chicken stock cool and reserve for another use.
  • Make the pasta. In a medium pot, bring 4 quarts of water to a boil over medium-high heat. Line a sheet pan with a clean kitchen towel and set aside. Season the water with salt until it tastes like sea water. Plunge the pasta in the water and cook until cooked but still chewy ("al dente"), 4 to 6 minutes. Place a colander in the sink. Reserve a little pasta water, then drain the pasta thoroughly. Shake the colander a few times to remove excess water. Spread the pasta on the towel so it cools more quickly. Gently use a second towel to cover and pat the pasta dry. (Removing the excess moisture assures that the sauce will have a full flavor effect on the noodles.)
  • Make the sauce. In a large bowl, combine the hoisin sauce, soy sauce, ginger, sesame oil, vinegar and hot sauce. Adjust the seasonings. Stir in half of the scallions. Set aside.
  • Add the pasta to the sauce and toss to coat evenly. Add some of the reserved water if necessary. Transfer the pasta and sauce to a large serving bowl. Set aside.
  • Arrange the chicken on top of the pasta. Top the pasta with the reserved sesame seeds and remaining scallions.

PORK LOIN ROAST WITH HOISIN-SESAME SAUCE

I found this recipe on one of my favorite blogs, Kirsten's Home Cooking Adventures. This is a fabulous way to make a pork roast! Full of flavor and really easy to put together. Makes an easy weeknight meal.

2 1/2 lbs pork loin roast
olive oil, as needed
salt and pepper
1 tablespoon minced fresh ginger
1/4 cup hoisin sauce
1/2 cup orange juice
1/2 cup low sodium chicken broth
1 teaspoon toasted sesame oil
2 green onions, sliced

Steps:

  • Salt and pepper roast liberally and brown in a saute pan with olive oil on all sides.
  • Place into a roasting pan and bake at 350 for about 40 minutes (until internal temp is about 140).
  • Remove and cover with foil and let stand for about 10 minutes before carving.
  • Meanwhile, drain most of the oil from the saute pan and retain any brown bits.
  • Saute ginger until fragrant, then add remaining sauce ingredients (except green onions). Simmer until thickened, then add green onions.
  • Cut pork into slices and top with sauce and additional green onion slices for garnish. Serve immediately.

Simply delicious. Even my picky kids approved! I used black sesame seeds and it works out well. I think the white sesame seeds would offer a better color contrast in the dish. Frankly, I don't think the water chestnuts would be missed. Take care not to over cook, the veggies will be mushy and the chicken tough.   • Preheat oven to 400 degrees.
  • Line a baking pan with foil.
  • Put the tenderloin (s) into the baking sheet.
  • Spread hoisin sauce over the pork tenderloin (s) rubbing the sauce into the meat lightly with your fingers.
  • Sprinkle the toasted sesame seeds over the pork tenderloins, turning the tenderloin to cover completely.
  • Roast in the middle of the oven for about 20 to 30 minutes.
  • The shorter time will yield a slightly pinkish middle, the longer time will be more well-done.

  • Sauce can be thickened with cornstarch-- if there isn't enough juice from cooking the tenderloin, just add a bit of hoisin sauce and warm with the pork juices.
