HOISIN FRIED RICE
Chinese fried rice with a twist. Rice, vegetables, scrambled egg with a hint of Hoisin that makes this simple recipe outstanding.

Steps:
- Turn the stove to high. Place wok with nothing in it on the heat, about 3-4 minutes. Pour in vegetable oil and heat until the oil shimmers, and is very hot.
- Meanwhile in a small bow, beat the eggs; add salt and pepper to taste. Set aside.
- Once the oil in the wok is ready, add the garlic and ginger, and stir fry until fragrant. Make sure not to burn your garlic or it will get bitter. Add the white part of the green onion, and stir fry 1 minute.
- Add the rice, breaking up the lumps using a wooden spatula, and stir fry until rice is loosened.
- Pour in the light soy sauce, Hoisin sauce, pepper and mixed vegetables to stir fry and mix well. Continue to stir the rice for 5 or so minutes until the rice begins to get browned and appear dry.
- Push the rice to one side and pour the beaten egg into the empty side of the wok. Scramble until dry. Mix into rice.
- Fry another minute, remove to a serving platter and sprinkle with chopped green onions and a sprinkle of sesame seeds if you like.

- Marinate the chicken with the Marinade for about 10 minutes. Mix all the ingredients in the Sauce in a small bowl, stir to combine well.
- Heat up a wok with the oil. When the wok is heated, add the garlic and stir-fry until aromatic. Transfer the broccoli into the wok and do a few quick stir. Add the chicken and continue to stir-fry. Add the mushroom, carrot, and the Sauce (stir it before using) and stir to mix well with the other ingredients in the wok.
- When the sauce thicken and the chicken is cooked, add a pinch of salt and sugar to taste (optional), dish out and serve immediately with steamed rice.

HOISIN CHICKEN ON FRIED RICE
For an easy family meal, you can't go past this sticky hoisin chicken. Tender diced chicken is generously coated in a moreish sauce, then served on fried rice (with plenty of veggies!).

- PREPARE SAUCE Crush garlic. Place in a jug and add soy sauce, hoisin sauce, sugar, vinegar, oil and ginger. Whisk until well combined. Remove 5 Tbsp sauce into a separate smaller bowl and set aside (this is for the fried rice). Whisk cornflour and water into the jug of sauce (for the chicken).
- PREPARE CHICKEN AND RICE Dice chicken into 2cm / 0.8in pieces and season with a little salt and pepper. Microwave rice according to instructions on packet. Cut broccoli into small pieces. Finely slice spring onions into rounds.
- COOK CHICKEN Heat oil in a large frying pan on high. Add chicken and stir fry until browned all over. Reduce heat to medium, then add sauce (the one in the jug) and leave to simmer while you cook the fried rice. Keep an eye on it - once sauce has thickened nicely, reduce heat to low to keep warm (add a splash of water if sauce thickens too much).
- COOK RICE Heat 1/2 teaspoon of the oil in a large wok on high. Quickly scramble eggs then remove onto a plate. Add remaining 1 1/2 teaspoons oil, then stir fry broccoli and mixed veggies until broccoli is tender and veggies have defrosted. Add rice and reserved sauce and stir fry for 2 minutes. Stir through egg and spring onions.
- SERVE Divide fried rice between warmed serving bowls. Top with chicken and sauce, then sprinkle with sesame seeds.

FRIED RICE WITH GINGER, HOISIN, AND SESAME
A twist on the average fried rice - a culmination of some of my favorite Asian flavors thrown into a common dish. This recipe is very easy to adjust according to personal tastes; you can make it about as strong or as mild as you prefer. Compliments Teriyaki beef well, or can be easily modified into a stir-fry meal.

- Melt the butter in a small saucepan over medium heat. Add the uncooked rice, and cook until toasted, stirring occasionally. Pour in the water and bring to a boil. Reduce heat to low, cover, and cook for about 15 minutes, or until tender.
- While the rice is cooking, mix together the hoisin sauce, barbeque sauce, peanut butter, soy sauce, garlic, and ginger. Set aside.
- When the rice is done cooking, heat the sesame oil in a wok or large skillet over medium-high heat. When it begins to smoke, add the onion and fry until clear. Add the carrot, and cook for about 1 minute, then add the rice, and stir fry for about 2 minutes. Add the broccoli and peas; cook and stir for about 1 minute. Push everything to the sides of the wok, and crack the eggs into the center. Scramble until cooked through, trying to keep the raw egg from mixing with everything else. When the eggs are cooked, stir them in with the rice.
- Turn off the heat, and stir in about half of the sauce, tasting and adding more as desired. You may not need all of the sauce, but if you serve this with a meat it makes a good sauce for that too. Sprinkle with sesame seeds before serving.

- In large skillet, begin cooking chicken. When about half way cooked, begin cooking rice in a seperate saucecpan according to package directions. Add portobellas and garlic to chicken. Then add green peppers and onion. Once chicken is fully cooked, stir in rice. Stir in hoisin sauce and red pepper flakes. Mix together well and serve.

- Heat oil over medium high heat in a large saute pan.
- Add red pepper and mushrooms and saute for 5 - 6 minutes until tender.
- Add garlic and saute an additional minute.
- Add chicken to pan and cook for 6 - 8 minutes or until cooked through.
- Stir chicken and red pepper mixture occasionally while it cooks.
- Add water chestnuts, teriyaki sauce and hoisin sauce and stir to coat the chicken and vegetables.
- Continue cooking until heated through.
- To serve, line a single serving size bowl with romaine leaves. Top with a large scoop of rice, some of the hoisin chicken, and a sprinkle of the sesame seeds and scallions.
- Alternately, you can serve the hoisin chicken mixture wrapped in lettuce leaves or omit the lettuce leaves completely and serve the chicken over rice.

quick weeknight dinners work for me! 3/25/08- this was made for freezer tag in the OAMC forum and they asked me to post the following, "To freeze: Prepare recipe as directed through step 3. Place chicken in a freezer bag and seal. Pushing out as much air as possible. Allow sauce to cool and place in its own freezer bag. Place both bags inside one large bag, seal, label and freeze. To serve: Thaw in fridge. Cook as directed in recipe. The cooked chicken can be frozen as well. Just allow to cool, then place in a freezer bag."

- Preheat broiler. combine hoisin, honey, vinegar, sesame oil, in a saucepan, bring to a boil.
- Combine cornstarch and water and add to mixture, stirring.
- Cook 1 minute, remove from heat and set aside. mix spices and rub evenly over both sides of chicken. Spray a broiler pan with non stick spray, add chicken, broil 5 minutes.

- In a large bowl, stir together the egg white, cornstarch, 1 1/2 teaspoons of the rice wine or sherry, salt to taste and 1 1/2 teaspoons water. When you can no longer see any cornstarch, add the chicken and stir together until coated. Cover the bowl and place in the refrigerator for 30 minutes
- Bring 2 quarts of water to a rolling boil in a large saucepan and add the Chinese broccoli. Boil 2 minutes, until it is just crisp-tender, and transfer it to a bowl of cold water. Do not drain the water from the pot. Drain the broccoli and dry on paper towels. Cut into 2-inch lengths
- Combine the remaining rice wine, the hoisin sauce and the soy sauce in a small bowl and set near your wok
- Bring the water in the pot back to a boil, add 1 tablespoon of the oil and turn the heat down so that the water is at a bare simmer. Carefully add the chicken to the water, stirring so that the pieces don't clump. Cook until the chicken turns opaque on the surface but is not cooked through, about 1 minute. Drain in a colander
- Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the remaining oil by adding it to the sides of the pan and swirling the pan, then add the garlic, ginger and red pepper flakes and stir-fry for no more than 10 seconds. Add the mushrooms, chicken, broccoli, hoisin sauce mixture and salt to taste. Stir-fry for 1 to 2 minutes, until the chicken is cooked through, and serve with grains or noodles
