Steps:
- Bring a full pot of salted water to a rolling boil and cook the egg noodles until well done. They should be slightly softer than al dente in texture.
- Just before the noodles are strained, melt the butter in a shallow skillet over low heat until the butter bubbles up and browns. Timing is the secret to this very simple dish as the butter must be very hot when it's poured over the noodles and cheese.
- Drain noodles; arrange about a third on the bottom of a serving platter and sprinkle with about one-third of the cheese.
- Pour about one-third of the melted butter over the cheese; it will make a sizzling sound as it 'cooks' the cheese.
- Repeat with remaining noodles, cheese, and butter.
- Serve immediately.

- Preheat over 450 degrees.
- Place asparagus in a roasting pan; drizzle iwth olive oil. Sprinkle evenly with salt and pepper. Bake for 8 minutes or until tender-crisp.
- In the meantime, melt butter and minced garlic in a small skillet over medium-high heat; cook 3 minutes or until lightly browned and foamy, shaking pan occasionally. Do not burn. Remove from heat; stir in lemon juice. Drizzle butter mixture over roasted asparagus, toss well to coat. Srinkle lemon zest over asparagus.

- *Heat olive oil in a deep saute pan. Season the beef with salt and pepper and then add to the oil to brown, in batches if necessary. Remove with a slotted spoon. *Add the onion to the pan and cook until translucent. Stir in the garlic and parsley (if you are using dried) and saute an additional minute before adding the tomato paste. Cook off the tomato paste for about 30 seconds, and then add the water. Be sure to scrape all the browned bits off the bottom of the pan. *Add the cinnamon, cloves, and salt and pepper to taste. *Bring to a boil and then add the beef back in. Reduce the heat and simmer, covered, for about an hour or really as long as you'd like (the longer you simmer, the more tender the beef gets). *Add the hilopites and simmer, uncovered, until done, stirring occasionally. If you are using fresh parsley add it around the same time as you add the hilopites.

- Combine flour and 1 tsp salt in a bowl and make a well in the centre. Add egg and milk and mix with a fork, drawing in flour from the edges as you go, until a soft dough forms (add a little extra milk if mixture is too dry). Turn onto a lightly floured surface, knead until a smooth, elastic dough forms (8-10 minutes), wrap in plastic wrap and rest for 1 hour.
- Divide dough into 6 and, working with one piece at a time, roll out to 3mm thick (see note for ravioles recipe, above). Stand on floured trays in a single layer to dry slightly (10-15 minutes), then cut each sheet into rough 4cm squares. Transfer to a lightly floured tray. (If not using straight away, stand on a lightly floured tea towel for 2-3 days until dried, then store in an airtight container for up to 5 days.)
- Meanwhile, preheat oven to 180C. Melt 30gm butter, toss in a bowl with breadcrumbs to coat evenly, season to taste and spread on an oven tray. Bake, stirring occasionally, until golden and crisp (8-10 minutes). Cool and store in an airtight container until required.
- Cook remaining butter in a saucepan over medium-high heat, swirling pan occasionally,until nut-brown (4-5 minutes), remove from heat and keep warm.

- Fill a large, deep pot with water. Salt the water until it is a little stronger than sea water and bring to a rolling boil. Add the hilopites and cook for three minutes. While the pasta is cooking, put a medium-size sauté pan over low heat. Add the clarified brown butter and the whites of the scallions and cook until softened.
- Drain the pasta, reserving a cup of the pasta water, and add it to the sauté pan. Add 3 tablespoons of the compound brown butter and toss to coat the pasta well. Turn off the heat and adjust the consistency to your taste with more compound butter and a little of the pasta cooking water if needed.
- Spoon into serving bowls and garnish with torn basil, scallion greens, black pepper and myzithra cheese. Serve with a malagousia like Zaferakis from Tyrnavos.
- In a deep saucepan combine butter and cream. Place over high heat until butter is melted and mixture starts to simmer.
