SPAGHETTI WITH EASY TEXTURED VEGETABLE PROTEIN SAUCE



Spaghetti With Easy Textured Vegetable Protein Sauce image

Perfect spaghetti works great with a perfect sauce. This easy, delicious and full of nutrition sauce, is a good example of a fast and tasty dish. I created this recipe ages ago and since then, I'm making it every week. It also works great with rice and bread.

Number Of Ingredients 14

300 g spaghetti
4 cups water
1 cup textured vegetable protein
1 medium green bell pepper, chopped
1 medium onion, chopped finely
2 tablespoons vegetable oil
3 tablespoons tomato paste
2 tablespoons coconut milk (optional)
5 drops lemon juice (only if using coconut milk)
1/2 teaspoon thyme
1/4 teaspoon curry powder
1/4 teaspoon black pepper
1/8 teaspoon nutmeg
salt

Steps:

  • In a non-stick skillet over medium heat, add the oil. When the oil is warm, add the onions and cook until soft. About 4-5 minutes. Stir occasionally. Add a dash of salt and bell pepper and cook for about 2-3 minutes. Reduce heat to low-medium and add black pepper and another dash of salt, stir, cover and let it cook.
  • Meanwhile put the TVP in a bowl and add enough boiling water to cover. Let it sit for 2-3 minutes. It should be soft. Strain and put a heavy saucepan over the TVP and drain as much water as you can, chop finely, then add the TVP along with spices and stir. You also can use Textured soy protein, but you don't need to chop them. Add the tomato paste and stir again. Let it cook for a minute or two. Taste, then add the coconut milk and lemon juice (if using), stir and remove from heat.
  • For the spaghetti, add the water in a saucepan over high heat. Add 1/2 tsp salt and 2-3 drops of oil and let it come to a boil. Add the spaghetti and cook on high heat for 7-8 minutes.
  • Serve some of the spaghetti with 1 to 2 spoons of the sauce and garnish with a spring of mint or basil.

A delicious spicy tomato pasta with a sweet and sour twist.

Number Of Ingredients 14

450g Spaghetti
1 large onion
4 garlic cloves
2 bird's eye chilies
1 red pepper
2 tbsp virgin olive oil
1 tbsp tomato puree (double concentrate)
1 Chicken stock cube (optional)
2 tins (400g) chopped tomatoes
1 tsp Italian dried herbs
4 tsp sugar
1 tbsp malt vinegar
60g baby spinach (washed)
grated parmesan cheese (for garnishing)

Steps:

  • Cook the spaghetti as per packet instructions. Drain and wash with plenty of hot water.
  • Chop the onion, garlic, chilies and pepper. Heat the oil over medium heat and add the chopped vegetables. Fry until soft and translucent.
  • Stir the tomato puree into the onions. Add the chicken stock cube followed by the two tins of tomatoes. Add the herbs, sugar and vinegar. Stir and simmer for 5 minutes.
  • Add the spinach and let it wilt into the sauce. This takes about 3 minutes. Stir and season with salt and freshly ground black pepper.
  • Mix the cooked spaghetti into the sauce and serve into individual bowls. Sprinkle with grated Parmesan cheese.

1/2 lb Baby Spinach, thoroughly washed and dried, steams removed
1 lb spaghetti
1/4 cup grated parmesan cheese

Steps:

  • Saute garlic and red pepper flakes in oil until garlic is golden. Add tomatoes or sauce and cook, covered 10 minutes. Add spinach and cook 2 minutes. Add cooked spaghetti to the sauce and heat for 1 minute. Sprinkle with cheese.

My mother in-law is an awesome cook and this was the first meal she made for me when my husband and I were dating. Since then anyone I have ever made this for raves about it and makes it themselves. My kids absolutely love it (they are 5 and 7) and the spinach doesn't scare them away. Even our black lab knows when it's being served for dinner and waits to lick the plates, although there is not much left at the end of this meal. .

2 tablespoons olive oil
1 medium onion, chopped
3 garlic cloves, chopped
1 (14 ounce) package fresh spinach (stems removed)
3 (14 1/2 ounce) cans petite diced tomatoes (not drained)
3 chicken bouillon cubes
1 pinch sugar
fresh basil, to taste
salt and pepper
1 lb thin spaghetti

Steps:

  • Wash and remove stems of spinach, place in a large pot and fill a quarter of the way with water, add salt if desired.
  • Bring to a boil and press down spinach, as it wilts, into boiling water.
  • Cover for 5 minutes. Than drain and remove most of the water but not necessary to remove all. Set aside.
  • Heat olive oil in medium saucepan, cook diced onion and garlic 5 -7 minutes just until translucent.
  • Add diced tomatoes, bouillon cubes, basil, pinch of sugar and Salt and pepper to saucepan.
  • Bring to just a boil than lower heat to medium low and cook for 20 minutes.
  • While that's cooking use the same pot that you boiled the spinach in to boil more water for your pasta and cook according to package directions.
  • Chop already cooked spinach.
  • During the last 5 minutes of cooking pasta add the spinach to your tomato sauce.
  • Drain pasta and put back into pot, add a ladel full of sauce and mix so spaghetti does not stick together.
  • Place pasta on serving plates and spoon sauce over pasta.
  • Sprinkle with Romano cheese and serve.

2 tsp olive oil
1 onion , finely chopped
2 garlic cloves , crushed
½ tsp dried chilli flakes
200g wholemeal penne pasta
400g can chopped tomato
100ml red wine
½ tsp dried oregano
125g bag young spinach leaves
25g parmesan or vegetarian alternative, grated

Steps:

  • Heat the oil in a non-stick frying pan and gently fry the onion, garlic and chilli flakes, stirring regularly, for 5 mins (add a little water if they begin to stick).
  • Cook pasta following pack instructions. Add the tomatoes, wine and oregano to the frying pan and stir to combine. Bring to a gentle simmer and cook, stirring occasionally, for 10 mins.
  • Shake the spinach into the pan and cook for 1-2 mins until wilted. Drain the pasta and tip into the pan with the sauce. Toss to combine, sprinkle with cheese and serve.

1 medium onion, thinly sliced
2 cloves garlic, minced

1/4 teaspoon crushed red pepper flakes (optional)
3 cups spinach, coarsely chopped
2 tablespoons parmesan cheese

Steps:

  • Cook pasta according to package directions.
  • Drain; keep warm.
