1 Tbsp butter
3 Tbsp white cake mix ((I used Betty Crocker))
1 - 2 pinches of cinnamon ((can also add a small pinch nutmeg too))
2 1/2 Tbsp milk
1 (4 oz) pkg. diced peaches in light syrup

Steps:

  • Place butter in a mug and melt in microwave.
  • Meanwhile, in a small bowl whisk together cake mix and cinnamon then whisk in milk and stir until well blended.
  • Pour mixture over melted butter in mug (don't stir). Drain off 2 Tbsp liquid from peaches (about 2/3 of the liquid), then pour peaches over top of cake mix (don't stir).
  • Microwave on 50% power for about 3 - 4 minutes, until desired doneness (time may vary depending on each microwave oven and wattage).
  • Allow to cool slightly (it will be ridiculously hot) then optionally top with vanilla ice cream and a light dusting of cinnamon.

2 tablespoons all-purpose flour
1 tablespoon nonfat dry milk powder
⅛ teaspoon baking powder
⅛ teaspoon ground cinnamon
1 pinch salt
2 tablespoons water
1 (4 ounce) container diced peaches, well drained

Steps:

  • Place butter into a microwave-safe cup and heat on high in microwave until melted, about 20 seconds.
  • Combine sugar, flour, milk powder, baking powder, cinnamon, and salt in a small bowl; add water and stir. Transfer sugar mixture to the mug and stir with a fork until batter is well mixed. Add peaches to top of batter.
  • Heat in the microwave on 70 percent power for 2 minutes. Let mug stand in the microwave for 1 minute more. Cool slightly.

1/4 C (26g) Graham Cracker Crumbs
2/3 scoop (21g) Protein Powder, vanilla
1/2 C (124g) Sliced Peaches in Juice
1 Tbsp (14g) Light Butter, I used Land O'Lakes
1/4 C (60mL) Walden Farms Pancake Syrup, or any sugar free pancake syrup

Steps:

  • Mix the dry ingredients in a bowl or mug before stirring in the pancake syrup and butter. (You can microwave the butter for 5 seconds to help with mixability, but the light butter usually mixes just fine.)
  • Once evenly mixed, add the peaches and gently stir. (Some juice from the peaches is fine but try to get primarily peaches in your measurement.)
  • Microwave for 2:30-3:00 or until the center is mostly solid. If you're eating straight from the mug, having some remaining liquid towards the bottom is fine. It's better to slightly undercook than overcook protein mug cakes.

¾ cup Sliced Peaches (115g, Fresh or thawed from frozen)
1 Tbsp Vanilla Protein Powder (5g)
1 tsp Tapioca Starch or Cornstarch
¼ tsp Lemon Juice
15 g 1:1 Gluten Free Baking Flour (about 2 Tbsp, see post for subs)
1 Tbsp Unflavored Protein Powder (5g, see post for sub)
1 Tbsp Vanilla Protein Powder (5g)
¼ + ⅛ tsp Baking Powder
1 Tbsp Non-fat Greek Yogurt (14g)
1 Tbsp + 1 tsp Almond Milk (20ml)
1 tsp Cold Butter (5g, Grated)

Steps:

  • Preheat oven to 350°F.
  • Place peaces in a bowl, add vanilla protein powder, starch and lemon juice. Toss to coat; Use hands if needed.
  • Transfer to 8-10oz ramekin.Bake 15 min.
  • In medium bowl combine flour, unflavored protein powder, vanilla protein powder and baking powder. Mix.Add Greek yogurt, milk and butter, and mix to form thick dough.
  • When peaches are done, scoop 1-2 Tbsp worth of dough and place on top peaches.Does not have to fully cover or be uniform.
  • Bake for 20 minutes; Cobbler should be golden brown on top and filling bubbling.
  • Cool for 5 minutes, top with ice cream and serve!

Steps:

  • Blend all of the dry ingredients ingredients and place in a plastic bag if using at a later date or giving as a gift.
  • Microwave 1 Tbsp butter or margarine in mug until melted (about 20 seconds on high power).
  • Add cobbler mix and 2 Tbsp water. Stir with a fork until well blended
  • Add well drained peaches on top of batter. Do not stir.
  • Microwave for 2 minutes on 70% power. Let stand in microwave 2 minutes. Remove from oven and let stand until cool enough to eat.
