HIGH FIBER BROWNIES
This is a very popular recipe among the Weight Watcher's ranks. Canned pumpkin makes these brownies very moist and high in fiber.

Steps:
- Use a hand mixer to mix the brownie mix and canned pumpkin together thoroughly in large bowl.
- Mixture willl be thick. Resist the urge to add water. Spread mixture in a greased 9X13 cake pan. If you desire thicker brownies, spread mixture in a smaller cake pan. I use a rare 7X11 cake pan and cut brownies 3 across and 5 down for a total of 15 brownies.
- Bake according to pkg directions. Use a toothpick inserted in middle of brownies to test doneness. Toothpick should still be damp, but not caked with wet brownie. If brownies have pulled away from edge of cake pan, they are overdone.

- Preheat oven to 350 F and grease a 9X13 pan.
- Cream the butter until fluffy.
- Add the erythritol to the butter and cream them together until fully combined.
- Beat the eggs into the mixture, one at a time.
- Add vanilla.
- Add salt and cocoa, beat well.
- Add chocolate, beat until fluffy.
- Add the remaining ingredients and mix well to combine.
- Pour into a pan and bake for 35 to 40 minutes until top springs back.
- Cool, then cut into 32 squares.

ABSOLUTELY BEST BROWNIES
This are the easiest and most delicious brownies that I have ever eaten. They are so moist and super quick and easy to make. For best results, use a Dutch processed cocoa. For less cake-like brownies, use all-purpose flour instead of self rising.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 or 9x9 inch baking pan.
- In a medium bowl, beat together the butter and sugar. Add eggs, and mix well. Combine the flour, cocoa and salt; stir into the sugar mixture. Mix in the vanilla and stir in walnuts if desired. Spread evenly into the prepared pan.
- Bake for 25 to 30 minutes in the preheated oven, or until edges are firm. Cool before cutting into squares.
