These are muffins from a health spa in California. There is NO added sugar. The sole purpose of these muffins is to increase your fiber intake without adding lots of calories to your diet. If you want a sweet/dessert snack, keep looking. These are very plain.

1 1/2 cups whole wheat flour
1 1/2 cups unprocessed millers natural bran
2 teaspoons baking soda
1 tablespoon cinnamon
1 teaspoon nutmeg
1/2 cup golden raisin
3 egg whites
1/2 cup buttermilk
1/2 cup water
1 small ripe banana, mashed (1/2 cup)
1 teaspoon vanilla extract
1/2 teaspoon banana extract

Steps:

  • Preheat oven to 400 degrees. Spray muffin tins with Pam and set aside.
  • Mix all dry ingredients, including raisins, in a large bowl.
  • Blend egg whites, buttermilk, water, mashed banana and extracts in a medium bowl.
  • Add wet ingredients to dry and stir until thoroughly combined. Fill each muffin tin 1/2 full.
  • Bake 15 minutes. Let cool on a wire rack. Freeze leftovers and defrost as needed.

These muffins are a great low-fat moist muffin. I used 1/2 cup brown sugar instead of the 2/3 cup called for and I felt they were sweet enough. I also added chopped apples.

1 1/2 cups wheat bran (I used oat bran)
1 cup nonfat milk
1/2 cup unsweetened applesauce
1 egg
2/3 cup brown sugar (I used 1/2 cup)
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup blueberries (I added a chopped apple.)

Steps:

  • Preheat oven to 375 degrees.
  • Grease muffin cups or use paper muffin liners.
  • Mix together wheat bran and milk, and let stand for 10 minutes. (I didn't do this and muffins turned out fine.).
  • In a large bowl, mix together applesauce, egg, brown sugar, and vanilla.
  • Beat in bran mixture.
  • Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt.
  • Stir into bran mixture until just blended. Fold in blueberries.
  • Scoop into muffin cups.
  • Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.

2/3 cup vegetable oil
1 cup brown sugar, firmly packed
2 tablespoons honey
3 eggs
2 medium bananas, ripe
1 cup natural bran
3 Weetabix, biscuits, crushed
1 1/2 cups flour, all purpose
1 tablespoon baking soda
1 teaspoon baking soda
1 pinch salt
1 cup buttermilk

Steps:

  • Preheat oven to 375 degrees.
  • In a large mixing bowl combine oil, brown sugar, honey and eggs. Set aside.
  • Chop 1 ½ bananas ijnto 1 1/4" cubes. Slice remaining banana into 12 pieces.
  • Mix together bran, Weetabix, flour, soda and salt.
  • Add to egg mixture with buttermilk and chopped banana stirring only until all ingredients are evenly moistened.
  • Grease muffin cups or line with jumbo style baking cups. Fill with muffin mixture and garnish with a slice of banana.
  • Bake at 375 F for 20-25 minutes or until done. Remove from tin and cool at least 15 minutes before serving.

1/2 cup raisins
1 teaspoon baking powder
1 teaspoon baking soda
3/4 cup milk
1/2 cup molasses or 1/2 cup honey
2 tablespoons oil
1 egg, beaten

Steps:

  • Preheat oven to 400°F.
  • Stir together: bran, flour, soda and baking powder.
  • Then stir in raisins and set aside.
  • Blend milk, molasses, oil and egg.
  • Add to dry ingredients and stir JUST UNTIL MOISTENED.
  • Spoon into greased muffin tins and bake for 15 minutes or until muffins pull away from sides of cups.

2 tablespoons milled flax seeds
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1/2 cup unsweetened wheat germ
1/4 cup Splenda brown sugar blend
4 tablespoons unsweetened applesauce
1 teaspoon vanilla
1 teaspoon baking soda
1/2 teaspoon baking powder
3/4 cup semi-sweet chocolate chips, minis

Steps:

  • Mix whole wheat, all purpose, wheat germ, milled flaxseed, baking soda & baking powder together in a bowl and set aside.
  • Mash bananas (mash them in your mixing bowl on medium speed for "no lumps").
  • Add flour mixture and remaining ingredients to mixing bowl with mashed bananas. Mix well combining all ingredients.
  • Add chocolate chips.
  • Add batter to greased muffing tin.
  • Bake at 350 degrees for 10-15 minutes or until a toothpick comes out of center clean.

1/2 cup whole wheat flour, plus
2 tablespoons whole wheat flour
1/2 cup wheat bran (QUAKER)
2 tablespoons ground flax seeds
2 teaspoons baking powder
2 teaspoons cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups bran buds (Kellogg's All Bran cereal preferred)
1 1/4 cups boiling water
1/4 cup brown sugar
1/4 cup Splenda sugar substitute
3/4 cup skim milk
1/4 cup mashed banana (about 1 small)
1 egg
1/2 cup walnuts

Steps:

  • Preheat oven to 400F and lightly spray muffin pans with cooking spray or line with cupcake papers.
  • Stir together first 7 ingredients, and Splenda; set aside.
  • In large bowl, stir together cereal, water and let stand 5 minutes or until water is absorbed.
  • Mix sugar into softened cereal until well combined.
  • Stir in milk and mashed banana.
  • Add egg than gradually stir in flour, until combined.
  • Stir in nuts.
  • Portion into 12 muffin cups.
  • Bake for 20 minutes or until tops are golden brown and spring back when lightly touched.
