PERFECT SCRAMBLED EGGS

- Whisk the eggs: Whisk 3 large eggs, 1 pinch of kosher salt, 1 grind of black pepper and 3 tablespoons whole milk together until light and foamy.
- TIP: Odds are you're going to be serving these on a plate. If so, I strongly suggest you park an ovensafe one in a low oven or in hot water while you're cooking. Cold plates suck the heat right out of food.
- Add to the pan: Add 1 tablespoon unsalted butter to a 10-to-12-inch nonstick skillet and put it over high heat. When the butter bubbles (after about a minute), pour the eggs straight into the middle of the pan, which will force the butter to the edges, where it's needed.
- Scramble the eggs: Stir slowly with a rubber or silicone spatula. As soon as curds (big soft lumps) of eggs begin to form, drop the heat to low and shift from stirring to folding the curds over on themselves while gently shaking the pan with the other hand.
- Let rest: As soon as no more liquidous egg is running around the pan, kill the heat and gently transfer the scramble to the warmed plate. Let the eggs rest for 1 minute to finish cooking before serving.
SWISS SCRAMBLED EGGS
I created this when I was trying to come up with ideas for high-protein breakfast meals. I made it in an individual-sized serving, but I'm sure it could easily be multiplied to serve more than one person.

- Heat butter or olive oil in a medium skillet over medium-high heat.
- While skillet is heating, beat eggs and milk together until foamy.
- When skillet is hot, pour eggs into skillet and scramble until just beginning to set.
- Add cheese to eggs and continue cooking eggs to desired doneness.
- After the eggs are done, put them on a plate and continue to stir until the cheese is completely melted.
- Serve immediately.

- In a 7-inch pie plate combine ham, green onion, butter or margarine and basil.
- Micro-cook, uncovered, on 100% of power for 1 to 1 1/2 minutes or till the mixture is heated through.
- Meanwhile, stir together beaten eggs and milk.
- Pour over ham mixture in pie plate.
- Micro-cook, uncovered, on 50% of power for 4 to 5 minutes or till eggs are nearly set, pushing cooked portions to center of dish several times during cooking.
- Sprinkle with cheese.
- Micro-cook, uncovered, on 100% power for 30 seconds to 1 minute more or till cheese is just melted.

DOCTORED-UP SCRAMBLED EGGS
Scrambled Eggs with a little something extra! Don't overcook the eggs. Just draw a spatula over the mixture occasionally instead of stirring constantly. This will keep the eggs from becoming dry and crumbly.

- Combine everything but the butter and ham. Stir, and mix well; set aside.
- Melt the butter in a large skillet over medium heat. Add the ham, and cook for 2 minutes, stirring constantly.
- Add the egg mixture to the skillet. Cook, without stirring, until the egg mixture begins to set on the bottom. Draw a spatula across the bottom of the pan to form large curds. Continue cooking until the eggs are firm, but still moist (do not stir constantly).
- Serve immediately.

A great mix of protein from the eggs and ham and energy from the breadcrumbs. I love to add a bit of hot sauce off to side to dip my eggs. The sauce really sets off the flavor.

- Lightly spray the pan with cooking spray to a medium-low heat and let the ham slightly brown. If you're going to add any vegetables this is the time to do it.
- Lightly beat the eggs in a non-reactive bowl (glass, plastic, wood, ect.).
- Slowly stir in breadcrumbs and spices until fully integrated.
- Pour the mixture into the pan and cook to liking.
