4 cups butternut squash, cubed
2 (3/4 ounce) wedges Laughing Cow light swiss cheese, room temperature (2 of the wedges)
3/4 cup onion, diced
1/4 cup fat free egg substitute (like Egg Beaters Original)
1/2 teaspoon salt
1/4 teaspoon chili powder
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees.
  • Place squash in large microwave-safe bowl with 1/4 cup of water. Cover and microwave for 6 minutes. Once cool enough to handle, uncover and drain water. Set aside.
  • Place onions in a small microwave-safe dish with 2 tablespoons water. Cover and microwave for 3 minutes. Once cool enough to handle, uncover and drain any excess water. Set aside.
  • Place squash and all other ingredients except for the onions in a blender. (Make sure squash cubes are not still piping hot.) Pulse until thoroughly mixed (but not liquefied). Remove blender from the base, and then stir in the onions.
  • Transfer squash mixture to a small casserole dish sprayed with nonstick spray. Place in the oven, and bake for 35 - 40 minutes (until edges begin to brown). Then serve with a spoon as you would mashed potatoes! Enjoy!

1/4 cup liquid egg substitute (like Original Egg Beaters)
2 tablespoons whole wheat flour
2 tablespoons non-fat vanilla yogurt
2 teaspoons semisweet mini chocolate chips
1/4 teaspoon baking powder
1/4 teaspoon vanilla extract
1 (1 g) packet Splenda granular
1 dash salt
1 teaspoon I Can't Believe It's Not Butter® Spread (recipe calls for 4 Sprays of this)
2 tablespoons fat free Reddi-Wip topping
2 teaspoons sugar-free syrup (optional)

Steps:

  • In a small bowl, place all ingredients EXCEPT for the chocolate chips, butter spray, Reddi-wip and optional syrup. Add 2 tablespoons of water, and stir until thoroughly mixed. Then, fold in the chocolate chips.
  • Bring a pan sprayed with nonstick spray to medium heat. Evenly pour half of the batter into the center of the pan to form 1 pancake. Once the pancake begins to look solid (after about 1 1/2 minutes), gently flip. Cook for an additional 1 to 1 1/2 minutes, or until both sides are lightly browned and the inside is cooked through.
  • Plate and spray evenly with 2 spritzes of the butter spray. Repeat with the rest of the batter and butter spray to make your second pancake. If you like, drizzle with a little sugar-free syrup. Then, top with the Reddi-wip and enjoy!

1 (15 ounce) can pumpkin puree

Steps:

  • Preheat the oven to 400 degrees.
  • Prepare a 12-cup muffin pan with nonstick spray.
  • Mix the two ingredients together. Don't add anything else that may be mentioned on the box, like eggs, oil or water. The mixture will be very thick, so you might be tempted to add in other things to make the batter smoother. Do NOT do this!
  • Place batter into the prepared muffin cups and place in the oven and bake for 20 minutes.

2 cups butternut squash (1 large squash)
1/2 cup Egg Beaters egg substitute, Original
1/3 cup light vanilla soymilk
1/3 cup sugar-free maple syrup
1 teaspoon cinnamon
1/4 cup Splenda granular
1 teaspoon vanilla extract
2/3 cup miniature marshmallow

Steps:

  • Preheat oven to 350 degrees.
  • Peel squash and cut into large chunks (removing seeds). Fill a large, microwave-safe dish with a half an inch of water. Place squash into dish and cover with plastic wrap. Microwave for approximately 8 minutes (and drain). Squash should be tender enough to mash, but not fully cooked. With a potato masher, food processor or fork, mash squash. Measure out 2 generous cups, lightly packed, and place in an oven-safe baking dish.
  • Add all ingredients except for marshmallows. Mix ingredients thoroughly, but do not over-stir; squash should still be pulpy.
  • Allow to cook for 45 - 50 minutes. Remove from oven, and disperse marshmallows over top of pie. Return to oven for 5 minutes, until marshmallows begin to brown. Allow to cool.

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, combine brown sugar, peanut butter, Splenda, butter, applesauce, egg substitute, and vanilla extract, and mix thoroughly with a wire whisk or fork.
  • Add flour, baking powder, and salt, and stir until completely mixed and smooth.
  • Add oats and mix until they are thoroughly coated with the batter.
  • Line a large baking sheet with parchment paper. Spoon batter onto the sheet in 6 evenly spaced mounds. Using the back of a spoon, spread and flatten batter into circles about 3 1/2 inches wide.
  • Bake in the oven for about 10 minutes, until a toothpick inserted into the center of a cookie comes out clean.
  • Remove baking sheet from the oven, and allow cookies to cool for 1 minute on the sheet. Then slide parchment paper onto a cool surface, and let cool COMPLETELY. (Really, they taste best once they've totally cooled.) Enjoy!

Here is what the book says: "Not to sound like a cheesy commercial, but this soup is so thick, it "eats like a meal." It's almost too easy to prepare a super-sized batch, and it tastes even better the next day! (HG Tip: Freeze leftovers in individual servings for microwavable, super-filling, guilt-free snacks)." UPDATE NOTE 9/7/2008: I made this recipe today for dinner but I made just a couple changes: 1) I used 16 ounces Perdue Ground Chicken (hubby wanted more meat!) and 2) I cooked it all in my crockpot on Low for about 8 hours. Hubby and I had it for dinner and it was awesome! I posted a picture also. The change to the ground chicken changed the points value to 4 points per generous 1 cup serving. I hope you all enjoy as much as we did!

Steps:

  • Preheat oven to 400 degrees.
  • In a mixing bowl, combine flour, Splenda, brown sugar, baking powder and salt. Mix well.
  • In a separate, large mixing bowl, combine soymilk, syrup, egg substitute, butter, applesauce and vanilla extract. Using an electric mixer or a whisk, mix until thoroughly blended. (Don't worry if butter bits do not break up completely.)
  • Add dry ingredients from the first mixing bowl to the mixture in the large one. Mix until completely blended. Then fold in the blueberries.
  • Line a 6-cup muffin pan (or half a 12-cup pan) with baking liners and/or spray with nonstick spray. Evenly distribute batter among the 6 cups.
  • Place in the oven and bake for about 22 minutes, until a toothpick inserted into the center of a muffin comes out clean. Enjoy!
