2 jars (12 oz. each) herring in wine sauce
1 ½ cups sour cream
1 ½ tbsp lemon juice
1 tbsp turmeric
2 ¾ tsp Madras curry powder
¾ tsp each ground coriander and cumin
½ tsp garam masala
¼ tsp cayenne
5 slices dense, European-style rye bread
¼ Fuji apple (unpeeled), cut into paper-thin slices or matchsticks
Watercress sprigs, for serving

Steps:

  • Drain herring and discard the onion pieces, if there are any.
  • In a bowl, mix sour cream with lemon juice, spices, and herring. Cover and chill at least 2 hours and up to 4 days.
  • Lightly toast bread slices, then cut each into quarters. Top with herring in cream, apples, and watercress, and serve extra sauce on the side.

Number Of Ingredients 16

2 Fresh herrings
1 Onion, sliced
1 Red onion, sliced
1⅓ Cups of vinegar
1 Cup of Sugar
2 Bayleaves
3 Cloves
2 Tablespoon of all spice peppercorns, crushed
3 Tablespoons of curry powder
1 Red apple, finely diced
A handful of cornichons, chopped
A handful of small pickled onions, chopped
1 Tablespoon of mayonnaise
1 Tablespoon of sour cream
A bunch of chives, chopped
Salt and pepper (to taste)

Steps:

  • Soak the herrings overnight in cold water. Fillet them by removing bones and skin. Rinse and cut into 1 inch slices. In a glass jar, place the herring in layers with onion and spices.
  • Mix vinegar and sugar until the sugar has dissolved. Pour over the herring, and make sure that all the fish pieces are covered. Close with a lid and leave in the refridgerator for 48 hours.
  • Slowly mix all the ingredients with the pickled herring.
  • Season with salt and pepper to taste.
  • Leave in the fridge over night.

2 (8-oz) jars herring "party snacks" in white wine sauce, rinsed, drained, and patted dry
1/3 cup mayonnaise
1/3 cup sour cream
1 1/2 tablespoons coarse-grained mustard
2 teaspoons fresh lemon juice
1 teaspoon curry powder
1 teaspoon sugar
Accompaniment: rye bread and butter

Steps:

  • Remove and discard skin and dark flesh from herring. Cut herring into 1/4-inch pieces. Whisk together remaining ingredients and stir in herring. Season with salt and pepper.

1 cup sour cream
1 cup thinly sliced onion
1 teaspoon dried dill
1/8 teaspoon pepper

Steps:

  • In a medium-size bowl, combine 4 T. of the reserved herring liquid, the sour cream, onion, dill, and pepper; mix until smooth. Add the herring and toss to coat evenly. Cover and chill for about an hour to blend the flavors.
