3 large tomatoes, chopped
1 large sweet red pepper, chopped
1 cup diced red onion
4 bacon strips, cooked and crumbled
1 jalapeno pepper, seeded and diced
1/2 cup canola oil
1/4 cup sugar
1/4 cup rice vinegar
2 tablespoons minced fresh parsley
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/8 teaspoon garlic powder

Steps:

  • Combine the first 6 ingredients. In another bowl, whisk together remaining ingredients. Add to bean mixture; toss to coat. Refrigerate, covered, at least 6 hours or overnight., Stir just before serving.

1/2 cup cubed longhorn cheese
1/2 cup diced fresh tomato
2 diced hard-boiled eggs
1 tablespoon grated onion
2 -3 tablespoons mayonnaise (I prefer miracle whip)
salt and pepper

Steps:

  • Combine all ingredients in bowl. Chill and serve.
  • I usually double this when serving as a side dish for company. I have also used roasted red pepper or pimento for color in place of the tomato. Low fat mayo may be used when dieting.

I had to come up with something quick and tasty to take to a potluck herf/pig-roast. A herf is a gather of cigar aficionados. Having an abundance of garden tomatoes I threw this salad together and came up with a dressing for it. Keep in mind the seasonings are to taste. You may like more or less of some ingredients. Balance the peas, tomatoes , onion and cucumber to your taste. You want about 8-10 cups of vegetables. The bacon is pre-cooked and crumbled bagged bacon put out by Hormel but you can cook and crumble your own. Regular Caesar dressing can be used.

4 cups cooked peas
3 cups halved cherry tomatoes
1 cup seeded chopped tomato
1 cup cucumber, peeled and seeded and chopped into 1/2 inch pieces
1 large sweet onion, -sliced very thinly then roughly chopped
1/2 cup bacon
1 1/4 cups low-fat mayonnaise
1/3 cup bacon caesar salad dressing
2 teaspoons horseradish
1/2 teaspoon liquid smoke
salt
pepper

Steps:

  • Combine all your vegetables and mix them up well then stir in bacon.
  • Mix the mayonnaise, salad dressing, horesradish and liquid smoke together. Taste and adjust seasonings. You may want to try 1/4 tsp of liquid smoke and add a couple of drops at a time to your taste.
  • Combine dressing with vegetables.
  • Taste and add salt and pepper to taste.
  • Chill before serving.

4 ounces wax beans, trimmed and cut into 1-inch pieces (about 1 cup)
4 ounces sugar snap peas, trimmed and cut in half (about 1 cup)
1 tablespoon extra-virgin olive oil
4 scallions, sliced into 1/4-inch rounds
3 garlic cloves, minced
1 1/2 cups cooked cannellini beans, drained
2 beefsteak tomatoes, cut into 1/2-inch dice, juice and seeds reserved
1/2 teaspoon coarse salt
Freshly ground black pepper
1 cup loosely packed fresh basil leaves

Steps:

  • Prepare an ice bath; set aside. Bring a medium pot of water to a boil over high heat. Add wax beans, and cook until crisp-tender and bright, about 2 1/2 minutes. Remove beans with a slotted spoon, and immediately plunge into ice bath. Drain, and set aside. Repeat with snap peas, blanching them about 1 minute.
  • Heat the oil in a large saute pan over medium heat. Add scallions and garlic; cook, stirring occasionally, until soft but not browned, about 3 minutes. Add cannellini beans, and cook until just heated through, about 2 minutes more.
  • Transfer mixture to a large bowl. Add wax beans, snap peas, tomatoes and reserved juice and seeds, and salt. Season with pepper. Using a sharp knife, cut basil into very thin strips; add to bean mixture. Toss to combine; serve warm.

1/2 lb snap peas, rinsed, stem ends trimmed (about 2 cups)
1 pint cherry tomatoes, rinsed and halved
salt and pepper
1/4 cup balsamic vinegar
2 tablespoons extra virgin olive oil
1 tablespoon oregano leaves, fresh roughly chopped
1/2 cup feta cheese, crumbled (4 ounces)

Steps:

  • In a saucepot bring 2 quarts of water to a boil. Add the snap peas and boil 3-5 minutes, until peas are just cooked. Strain the snap peas in a colander in the sink and rinse under cold water until cool. Drain excess water.
  • Place the snap peas and all other ingredients except the feta cheese in a large bowl and toss gently with a large mixing spoon or spatula. Add the feta cheese and cover with plastic wrap or place in a Ziploc® Brand Container with Snap 'n Seal Lid and refrigerate until ready to serve.
  • Chef's Note: While storing whole tomatoes, keep them at room temperature for optimum flavor and texture until ready to use. Tomatoes tend to lose their flavor and develop a mealy texture when stored in the fridge for a long time. Cut tomatoes stored in the fridge should be used promptly.
