Roasted Baby Potatoes with Herbs image

1/2 pound small red-skinned potatoes (about 1 3/4-inch diameter), scrubbed
1/2 pound small white-skinned potatoes (about 1 3/4-inch diameter), scrubbed
1 tablespoon herbes de Provence, plus extra for garnish
3 cloves garlic, minced
1/4 cup extra-virgin olive oil, plus extra for drizzling
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the potatoes into a large bowl. In a small bowl, whisk the herbs, garlic, and oil together until blended, and then pour over the potatoes. Sprinkle generously with salt and pepper and toss to coat. Transfer the potatoes to a heavy large baking dish, spacing them evenly apart.
  • Roast the potatoes until they are tender and golden, turning them occasionally with tongs, about 1 hour. Transfer the roasted potatoes to a decorative platter and drizzle with extra-virgin olive oil and herbes de Provence, if desired. Serve hot or warm.

4 tbsp rapeseed oil
1½ kg Maris Piper potatoes, cut into quarters, peel reserved
50g butter
½ bunch of woody herbs (thyme, rosemary or bay)
6 garlic cloves, lightly bashed

Steps:

  • Heat the oven to 220C/200C fan/gas 8. Add the oil to a large flameproof baking tray and put in the oven to heat up.
  • Bring a large pan of salted water to the boil, tip in the potatoes and their peel (for extra flavour), and simmer for 8-10 mins. Drain the potatoes and discard the peel. Leave to steam-dry for 15 mins, then return the potatoes to the pan, put the lid on and gently shake to lightly rough up the edges.
  • Remove the tray from the oven and put directly on the hob over a medium heat. Add the butter to the hot oil and, using tongs, add the potatoes to the tray, one by one, turning them in the fat, leaving a little space between each. Reduce the oven to 200C/180C fan/gas 6. Nestle the herbs around the potatoes, along with the garlic. Sprinkle over 1 tbsp sea salt and return to the oven for 1 hr, turning every once in a while, until golden and crisp.

Herby roasted potatoes that are the right amount of soft & crispy, crispy yet buttery texture making them so perfect to enjoy as a side with your mains or simply as breakfast potatoes.

3 large potatoes
2-3 tbsp extra virgin olive oil
salt
1 tsp paprika powder
1 tbsp dried oregano
1 tbsp dried rosemary

Steps:

  • Preheat the oven to 200 degree celsius.
  • Wash the potatoes and scrub the potatoes well until all dirt from the skin is off. Pat dry and make sure all moisture is dried off.
  • Dice/ cut the potatoes into cubs (roughly 2 inches per cube) and transfer them to a large mixing bowl.
  • Add oil, salt, pepper, oregano, rosemary and mix well until all cubes are well coated.
  • Transfer to a baking sheet lined with parchment making sure that potatoes are well spread and not over crowded.
  • Transfer the baking sheet to the oven and bake for 45-50 mins at 200 degrees. Turn/ Flip them once in between to ensure that are they are cooked evenly.
  • Serve hot with ketchup/ mayo or homemade dips.

Holidays are coming and here is yet another sweet potato recipe. The thyme, garlic and red pepper gives great flavor to the sweet potatoes. Instead of olive oil try using Pam or No Oil. Just spray the slices on both sides then shake them in the zip lock bag with the herbs. Use Yams if you prefer.

2-3 tbsp duck fat or olive oil
few sprigs rosemary, oregano, sage
sea salt, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Rinse and dry the unpeeled new potatoes. Put 2-3 tbsp duck fat or olive oil in a roasting tin and put in oven for 10 mins to melt. Strip leaves from rosemary, oregano and sage and stir into tin with seasoning.
  • Add potatoes and toss well. Roast for 40-50 mins, shaking tin a couple of times, until potatoes are crisp and tender. Sprinkle with sea salt and serve.
