¾ cup shortening
1 ⅔ cups white sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon instant coffee granules
1 pinch cayenne pepper
2 ¼ cups all-purpose flour
⅔ cup unsweetened cocoa powder
¼ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon salt
1 ½ cups water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 12 cup muffin pans or line with 18 paper baking cups.
  • In a medium bowl, beat the shortening and sugar with an electric mixer until light and fluffy. Mix in the eggs, one at a time, then stir in vanilla, instant coffee and cayenne pepper. Combine the flour, cocoa, baking powder, baking soda and salt; stir into the batter, alternating with the water, just until blended. Spoon the batter into the prepared cups, dividing evenly.
  • Bake in the preheated oven until the tops spring back when lightly pressed, 20 to 25 minutes. Cool in the pan set over a wire rack. When cool, arrange the cupcakes on a serving platter and frost as desired.

1 cup all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda

1/2 cup vegetable oil
1 teaspoon vanilla
1/2 cup very hot water

Steps:

  • Heat oven to 350 degrees. Line a cupcake pan with paper liners.
  • Combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt together in a bowl and whisk together.
  • Combine the egg, buttermilk, oil, and vanilla in another bowl and whisk together.
  • Add the wet ingredients to the dry ingredients and mix using a stand mixer until combined.
  • Add the hot water to the batter and mix again, scraping the sides of the bowl as necessary, until combined. Batter will be thin.
  • Fill cupcake liners only 1/2 full, then bake for 18-21 minutes, until the tops bounce back when you touch them with a finger or a toothpick comes out with only a few moist crumbs when used to test a cupcake.

I actually found this recipe in a book entitled "The I Don't Know How to Cook Cookbook" and it is very tasty. The cupcakes turn out moist and delicious! They are very easy to make, and contain no eggs or milk. Pair with your favorite icing. However, Buttermilk or milk may be substituted for water and melted butter may be substituted for the oil.

1/4 cup (23 g) natural unsweetened cocoa powder

1 cup brewed coffee (or 1 cup of warm water mixed with 1 1/2 teaspoons instant coffee granules or espresso powder)
1 tablespoon white vinegar
2 teaspoons vanilla extract
1/4 cup plus 2 tablespoons olive oil
Frosting:
4 tablespoons butter
1/3 cup (30 g) natural unsweetened cocoa powder
1 1/2 cup (158 g) powdered sugar
3 tablespoons milk
1 tablespoon vanilla extract

Steps:

  • Preheat the oven and prep muffin tin: Preheat oven to 350°F with a rack in the middle position. Prepare a muffin tin with cupcake liners.
  • Whisk the dry ingredients: In a large bowl, vigorously whisk together the flour, cocoa powder, sugar, baking soda, and salt until there are no visible clumps (cocoa tends to clump up).
  • Mix the wet ingredients: In a separate bowl, mix together the coffee (or water plus coffee granules), vinegar, vanilla extract, and olive oil.

Steps:

  • Preheat the oven to 350°F (177°C). Line a 12-cup muffin pan with cupcake liners. Line a second pan with 2 liners - this recipe makes about 14 cupcakes. Set aside.
  • Whisk the flour, cocoa powder, baking powder, baking soda, and salt together in a large bowl until thoroughly combined. Set aside. In a medium bowl, whisk the eggs, granulated sugar, brown sugar, oil, and vanilla together until combined. Pour half of the wet ingredients into the dry ingredients. Then half of the buttermilk.   • TIP: I've found that the cupcakes get even more moist when stored overnight in a Tupperware container.
  • Frosting Instructions: It is really easy to create the two-tone icing as shown in the photo above. Make your favorite buttercream icing recipe and divide it into 4 equal batches. Then add a dab of food coloring to each batch (I like Wilton's Icing Colors gels, purchased my local Michael's Craft Store). I used 4 different Wilton colors -- yellow, pink, sky blue and leaf green. Use a long metal spatula to fill a pastry bag with 2 colors. Put one color down each side of the bag. When you twist the top of the bag closed, the colors will form "striped" icing. Use the Wilton 2D Drop Flower tip to decorate the cupcakes, starting on the outer edge of the cupcake and working your way to the center in a circular motion. Each cupcake will be unique and beautiful!

  • In a large mixing bowl, combine together flour, sugar, cocoa, baking soda, espresso powder, baking powder and salt. Add in the room temperature eggs, buttermilk, oil and vanilla. Beat on a medium speed until smooth. Scrape down the sides of the mixing bowl, pour in the hot water and combine until mixed. Fill each cupcake 2/3 full and bake for 20-22 minutes then remove from tins and cool completely on a baking rack.
  • To make the chocolate buttercream frosting, add butter to a large bowl and using a mixer, beat until fluffy. Add in cocoa powder, salt and vanilla extract and beat until combined. Mix in sifted powdered sugar slowly and in increments and then add in the milk until the desired consistency is reached. Transfer frosting to a piping bag or large zip top bag and frost your completely cooled chocolate cupcakes.
