CRISPY WHITE BEANS WITH GARLIC AND HERBS
When roasted with garlic oil and fresh rosemary, a can of white beans becomes a can't-stop-munching crunchy snack.

- Preheat oven to 425°F. Spread beans on a tray lined with paper towels; pat dry.
- For garlic oil: In a small saucepan warm olive oil and garlic over medium-low 10 to 12 minutes or until simmering and aromatic and garlic starts to brown. Remove garlic with a slotted spoon; discard.
- In a medium bowl combine beans, rosemary, salt and pepper. Toss with garlic oil. Arrange beans in a single layer in a 15x10-inch baking pan. Roast 35 minutes or until browned and crisp, stirring once.
- Spread beans on a piece of foil. Sprinkle with oregano. Let cool completely before serving. Serves 10.

THE BEST BAKED BEANS
If you think baked beans only come from a can, you're in for a treat. Bacon, molasses and bourbon add depth and flavor to our classic recipe that's perfectly spiced with paprika, mustard and Worcestershire. A bit of brown sugar adds just the right amount of sweetness and to keep things easy, the beans require no soaking! They get tender and delicious right in the oven.

- Preheat the oven to 300 degrees F. Cook the bacon in a large Dutch oven over medium-high heat until browned and crisp, about 8 minutes. Add the onion and garlic and cook until softened, 4 to 5 minutes. Add the paprika and toast, stirring, about 30 seconds. Add the tomato sauce, molasses, bourbon, brown sugar, Worcestershire sauce, mustard, 2 teaspoons salt and 1/2 teaspoon pepper. Bring to a simmer and cook 5 minutes.
- Add the beans and 8 cups water. Bring to a boil, then cover the pot and transfer to the oven. Bake until the beans are tender, about 3 hours. (If the beans are still slightly firm, continue cooking, stirring every 45 minutes and adding more water if necessary to just cover.)
- Once the beans are tender, uncover and increase the oven temperature to 325 degrees F. Bake until the beans are thick and browned, about 1 more hour. (Again, if the beans need more time, continue cooking, stirring occasionally and adding more water if necessary.) Remove from the oven and thin with water if necessary.
CREAMY WHITE BEANS WITH HERB OIL
Canned beans are transformed into a hearty, elegant main swirled with an herb oil that comes together in no time with the aid of a food processor. This particular oil includes chives, cilantro and basil, but feel free to use what you have on hand. Parsley and mint would also work well. Serve with a chilled glass of red wine, a big green salad and a loaf of crusty bread.

- Make the oil: In a food processor, combine chives, cilantro and basil, and pulse until finely chopped. Add olive oil, and pulse again until mixture is silky and emulsified. Transfer to a small bowl, stir in lemon juice and salt to taste. Set aside.
- Prepare the beans: In a 10-inch skillet, heat olive oil over medium-low heat. Add garlic and cook until translucent, about 1 minute. Add beans to the skillet and season with salt and pepper. Cook, stirring occasionally, until the flavors have melded, about 2 to 3 minutes. With the back of a spoon or spatula, smash about 1/3 to 1/2 cup of the beans and stir until they are incorporated into the rest of the bean mixture. A good portion of the remaining beans should maintain their structure.
- Add stock or water and bring to a gentle simmer. Cook until sauce becomes creamy and is reduced by about about half, about 1 to 2 minutes more. Smash additional beans and add a few more tablespoons of water, if needed, to reach desired consistency and stir again to combined.
- Transfer beans to a bowl and swirl with herb oil on top. Season with flaky salt, if desired.

OLD FASHIONED BAKED BEANS

- Place the dried beans in a pot of water covered by a few inches of water and let soak overnight. Drain the beans, place them back in the pot with fresh water and bring to a boil. Simmer for one hour, then drain, reserving the liquid. See NOTE.
- In a Dutch oven or other oven-proof pot fry the bacon until crispy then add the onions and cook until soft and translucent, 5-7 minutes. Add the garlic and cook for another minute.Stir in the tomato sauce, molasses, brown sugar, apple cider vinegar, mustard, Worcestershire sauce, smoked paprika, salt, pepper and bay leaf.Add 1 1/2 cups of the reserved bean water and the beans.Bring everything to a simmer for a minute or two to heat it up. In the meantime preheat the oven to 325 degrees F.
- Transfer the Dutch oven with the lid on to the middle rack of the oven. Bake for 2 to 3 hours or until the beans are tender and the sauce has thickened, removing the lid during the last 20-30 minutes to help the sauce thicken. NOTE: If at any point during the cooking process too much liquid evaporates and the beans get dry, add a little more of the reserved bean water. The beans themselves can vary from batch to batch and you may end up either needing to add more liquid if the beans are too dry or you may need to bake the beans longer with the lid off if there is too much liquid. Adjust as needed.Add more salt the pepper to taste.Serve immediately or let cool completely and refrigerate until ready to serve. Can be reheated on the stovetop or in the microwave.
- SLOW COOKER METHOD: Follow steps 1 and 2 and then pour everything into the slow cooker. Cook on LOW for 6-7 hours or on HIGH for 3-4 hours or until the beans are tender. Open the lid for the last 30 minutes or longer until the sauce has thickened. If the beans are too thick at any point and too much liquid has evaporated, stir in a little extra water.

HERB'S POPULAR BAKED BEANS
This was my Dad's recipe that was vey popular and requested for family gatherings. NO canned beans, NO barbecue sauce and NO brown sugar, just great country baked beans made from scratch. The bacon came from my family's farms in MN where we butchered our own hogs and smoked the hams, bacon and sausages in our large smokehouses. This is old world Deutsche (German) heritage. Ah, memories. I remember the delicious aroma of those smokehouses.

- Sort and rinse the beans in a colander under cold running water, removing any stones or foreign matter. Place the beans in an 8 quart pot, cover with 8 cups cold water, bring to a boil and boil for 10 minutes. Remove from heat and drain off the water. Rinse the beans under cold water in a colander and return the beans to the rinsed out 8 Qt pot.
- Slice the bacon crosswise into 2" pieces, fry the bacon in a large skillet over medium-low heat till the bacon is browned yet still quite limp, remove from the skillet and set aside. Repeat for the remaining uncooked bacon. Pour the bacon grease through a steel mesh strainer, lined with cheesecloth, into a sealable container and store it in the fridge for future use.
- Add the cooked bacon and the remaining ingredients to the pot of beans. Add enough cold water to cover the beans + 1 more inch above the beans and stir gently. Heat the pot over medium heat on the stovetop till bubbles form at the surface, gently stirring every once in a while.
- Transfer the heated contents of the 8 Qt pot to a crock pot and heat on the low heat setting for 8 - 10 hours or for 5 - 6 hours on the high setting. Bake till the beans are soft. Check the beans every once in a while and add more water if it looks like it's lacking water. Not too thick or too thin of consistency. Also taste the beans an hour before the due cooked time and adjust the seasonings to your liking.
