SUN-DRIED TOMATOES IN OLIVE OIL
These are great gifts. This is what I do with "last year's" Recipe #194247, when I get ready to pick and put up this year's crop. Make sure you do not pack them too tightly. We eat them as is or use them in various recipes.

Steps:
- Pour 1 tablespoon olive oil into pint jar.
- Place one sprig of Rosemary on top of oil.
- Place several tomatoes in jar.
- Drizzle olive oil to cover.
- Repeat several times.
- Place another sprig of Rosemary in jar.
- Repeat oil and tomato process until almost full.
- Top with sprig of Rosemary, and olive oil to cover.
- Store in cool area.
- Let rest for 3 weeks before using.

HERBED SUN-DRIED TOMATOES IN OIL
Steps:
- Wash and dry tomatoes carefully. Cut in half vertically (through the stem) and remove seeds.
- Place tomato halves on wooden planks, cut side up.
- Cover tomatoes with cheesecloth. Expose to the sun for a least one week. Bring indoors at night to protect from dew. You can also dry them in your oven. See the quick method below.
- When tomatoes are dried, combine chopped blanched garlic, bay leaves, basil, oregano, thyme, cloves, capers and hot peppers.
- Place a small spoonful of the mix on each tomato half.
- Sterilize the jars in boiling water. Drain well, dry carefully, and layer garnished tomatoes inside.
- Cover tomatoes completely with olive oil, close jars tightly. Wait one week before eating.
SUN-DRIED TOMATO AND HERBED/CHEESED BAKED ORZO
This is a wonderful infusion of sweet sun-dried tomatoes, garlic, shallots and fresh herbs and cheese with wonderful orzo, baked to perfection with a simple parmesan/bread crumb topping. I saw a version of this on The Food Netwook, and adapted it to suit what I had in my pantry and it turned out very flavorful.

Steps:
- Heat olive oil and butter over medium/high heat in saucepan til hot. Add shallots and cook til translucent, but not brown. Add chopped sun-dried tomatoes. Cook 1 minute more, stirring and moving mixture around constantly. Add garlic, cooking one minute more. Be careful at this point not to burn garlic or all will be ruined.
- Add 1 cup orzo to saucepan, constantly stirring and toasting the pasta for 1 to 2 minutes. Add chicken broth, and crank heat up to high to bring to a boil. Add salt and pepper for seasoning, being careful not to over-salt, as parmesano reggiano has a high salt content. When boil is reached, cover and reduce to simmer and cover til most of liquid is absorbed. You want SOME liquid to remain.
- Transfer to a bowl. Add fontina cheese and 1/4 cup parmesan, basil and parsley. Add cream. Stir well. Transfer to 2-quart buttered/greased ramekin or equivalent and cover the top with the mixture of Italian seasoned bread crumbs and remaining 1/4 cup reggiano cheese.
- Dot top with bits of butter and bake in 375 oven for approximately 30 minutes.
- Serve immediately, grating more reggiano over dish if desired.
GARLIC AND HERB TOMATOES

- Heat the olive oil in a saute pan large enough to hold all the tomatoes in one layer. Add the garlic to the oil and cook over medium heat for 30 seconds. Add the tomatoes, basil, parsley, thyme, salt, and pepper. Reduce the heat to low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to loose their firm round shape. Sprinkle with a little fresh chopped basil and parsley and serve hot or at room temperature.

ITALIAN OVEN-DRIED TOMATOES IN OLIVE OIL
These wonderful tomatoes can be put on toasted bread with cheese to make bruschetta or you can add them to pasta dishes. They also make yummy garnishes and are good in salads. Don't throw the olive oil away when the tomatoes are gone! It will be infused with tomato flavor and is great to use in salad dressings or on pasta. The tomatoes will keep up to 2 weeks in the refrigerator.

- Heat oven to 225°.
- Combine tomatoes, 2 T. olive oil, herbs, vinegar, lemon juice, salt and pepper to taste in a mixing bowl.
- Arrange tomatoes in rows on a parchment-lined cookie sheet; bake 1 hr.
- Cool to room temperature, about 15 min.
- Place in 4 half-pint canning jars.
- Add remaining olive oil to cover tomatoes in each jar.

HERBED SALMON FILLETS WITH SUN-DRIED TOMATO TOPPING
Attractive and full of flavor, not to mention easy to prepare (oops, just did). You may certainly use PANKO breadcrumbs, but be sure to crumble them finely first with your fingers. This pairs nicely with parmesaned orzo and grilled zucchini.

- Pre-heat oven to 400°F and adjust oven rack to center of oven.
- Lightly grease a small oven-proof baking dish (large enough to fit the fillets in one layer).
- In a small flat bowl (large enough to accomodate one salmon fillet, or use a piece of wax paper instead), combine the sea salt, pepper, basil, thyme, rosemary and bread crumbs.
- Press the TOP of each fillet (not the skin side) into the crumb mix, then place each in the baking dish (skin side down).
- Sprinkle the remaining crumb mix over the salmon, dividing equally, and pressing lightly into the samon.
- Drizzle with 2 tsp olive oil.
- Bake in oven just until fish flakes when tested in the center, about 8-12 minutes, depending on the thickness of your fish.
- As the fish is baking, heat the remaining 2 tsp oil in a 10-inch non-stick skillet over medium heat; add shallots and saute, stirring constantly, until lightly golden, about 1 minute.
- Add lemon juice, wine, and sun-dried tomatoes, and cook until "sauce" is reduced to about 1/2 cup, about 2 minutes-watch this carefully, it goes quickly!
- Spoon tomatoes and "sauce" over the salmon and serve immediately.

SUN-DRIED TOMATO AND HERB FOCACCIA
Prepare a 'home-baked' bread in minutes using prepared pizza dough. I use rosemary, thyme, basil, oregano, for variety.

Steps:
- Pat dough evenly into greased 9-inch square metal cake pan.
- Cover and let rise for 30 minutes.
- With fingertip, make 12 indents in dough. Brush dough with oil; sprinkle with salt and rosemary or combination of your favourite herbs.
- Press tomatoes into dough.
- Bake in centre of 450°F (230°C) oven until golden brown, about 20 minutes.
- Remove from pan; let cool slightly on rack.
- To serve: cut into 4 strips; cut each in half.
- (Make-ahead: Let stand at room temperature for up to 8 hours; rewarm if desired.).

MARINATED SUN-DRIED TOMATOES
The tomatoes will become slightly stronger with refrigeration time, yield is only estimated. If you prefer to use fresh herbs, then use 2-1/2 tablespoons of fresh in place of dry.

Steps:
- Place the sun-dried tomatoes in a small bowl.
- Cover with boiling water (just to cover) and let soak for 3 minutes; drain.
- Slice, and return to bowl.
- Add in oil and remaining ingredients.
- Let sit at room temperature for 1 hour, stirring occasionally.
- Store in the refrigerator covered in a glass jar.
- **NOTE** the oil will thicken in the fridge, just warm slightly in the microwave before using.
