2 baking potatoes
250g Co-op low fat natural cottage cheese
1/2 x 25g pack Co-op flat leaf parsley, finely chopped
1 tsp dried thyme
4cm piece cucumber, finely diced
1 spring onion, finely sliced
Zest and juice of 1/2 lemon

Steps:

  • Preheat the oven to 200°C/fan 180°C/Gas 6
  • Prick the potatoes all over and bake directly on the middle shelf of the oven for 1 hour 15 mins, until crisp on the outside
  • Meanwhile, mix the cottage cheese with the parsley, thyme, cucumber, spring onion, and lemon zest and juice
  • Season to taste
  • Cut the potatoes open and serve topped with the cottage cheese mixture and an extra scattering of parsley, if you like

Steps:

  • Mix the herbs into the cottage cheese.
  • Add the Romano cheese and pepper, mix well.

This dish, similar to hash browns, is a traditional Swiss dish made as an appetizer for breakfast or as a side dish with dinner.

1 lb (500 g) Yukon Gold potato, (about 3)
1/4 cup (50 mL) parsley, chopped
1/4 cup (50 mL) green onions, chopped
6 tbsp (90 mL) GAY LEA - Unsalted Butter
1 tbsp (15 mL) rosemary, or dill, finely chopped
1/4 tsp (1 mL) salt
1/2 tsp (2 mL) pepper
1/2 cup (125 mL) GAY LEA - Original Sour Cream
1 1/2 tsp (7 mL) Dijon mustard

Steps:

  • Shred unpeeled potatoes using a food processor or box grater. Squeeze all the water out of the potatoes. Toss with half each of the parsley and green onion, and rosemary, pepper and salt until well combined. Divide the mixture into four equal portions.
  • Heat half the butter in a large, non-stick skillet set over high heat. When the butter foams, add the potato mixture and, using a silicone spatula, form into 4 individual disks of equal thickness. Reduce the heat to medium high and cook for 4 to 5 minutes or until underside is set and a golden crust forms.
  • Add remaining butter and gently turn rösti; cook for an additional 5 minutes or until rösti are golden brown and bubbles are actively forming in the centre of each disk. Drain on paper towel.
  • Meanwhile, combine sour cream with remaining parsley, green onion and mustard. Serve with warm rösti.

Steps:

  • Gather the ingredients.
  • Cook the potatoes in boiling salted water just until tender, about 5 to 8 minutes.

4 big sweet potatoes

Steps:

  • Rinse the sweet potatoes well and leave the skin. Prick with a fork or knife all the sides of the sweet potatoes. Place the potatoes in the oven for 1h to 1h15 at 400°F. They should be tender by pricking a knife, if it's still a bit hard, then leave it longer in the oven.
  • Just before the end of cooking, prepare the cheese. Mix the cottage cheese with chives, mint, salt and pepper.
  • When the sweet potatoes are cooked, open them with a knife and season with salt and pepper. Then add the cheese and a few mint leaves and chopped chives. Serve.
