SUMMERY HERBED TUNA PASTA SALAD



Summery Herbed Tuna Pasta Salad image

Marry tuna, pasta, green beans and carrots with an herby white wine vinaigrette.

Number Of Ingredients 12

Kosher salt and freshly ground black pepper
1/3 cup olive oil
2 tablespoons white wine vinegar
1 small shallot, minced
1 cup trimmed, chopped green beans
8 ounces dried farfalle
One 5-ounce can solid white tuna, preferably packed in olive oil, drained
1/2 cup torn fresh basil leaves
1/2 cup shredded carrots
1/4 cup thinly sliced celery
1/4 cup thinly sliced fresh chives
2 medium vine-ripe tomatoes, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the olive oil, vinegar, shallot, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Cook the green beans in the boiling water until crisp-tender, 3 to 4 minutes. Transfer the beans to a colander with a slotted spoon and run under cold water to stop the cooking process. Add them to the bowl with the dressing.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl.
  • Add the tuna, basil, carrots, celery, chives and tomatoes to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

FARFALLE WITH HERB-MARINATED GRILLED SHRIMP

1 lb. uncooked extra large fresh shrimp, peeled and deveined with tails on
1/4 cup olive oil
2 Tbsp. balsamic vinegar
1 Tbsp. lemon juice
1 Tbsp. finely chopped fresh basil leaves
1 Tbsp. finely chopped fresh flat-leaf parsley
1 tsp. finely chopped fresh oregano leaves (optional)
Pinch crushed red pepper flakes
1 jar Bertolli® Tomato & Basil Sauce, heated
1 box (16 oz.) farfalle or penne pasta, cooked and drained

Steps:

  • To butterfly shrimp, slice down back of shrimp with small sharp knife, almost completely through. Spread and flatten to form butterfly shape.
  • Combine olive oil, vinegar, lemon juice, basil, parsley, oregano and red pepper flakes in shallow bowl. Add shrimp; toss to coat. Cover and marinate in refrigerator 30 minutes.
  • Remove shrimp from marinade, discarding marinade. Grill or broil shrimp, turning once, until shrimp turn pink.
  • Spoon sauce over hot farfalle and top with shrimp. Garnish, if desired, with additional parsley.
  • VARIATION: Substitute 1 lb. boneless, skinless chicken breasts for shrimp. Marinate and grill as above. Serve sliced chicken over hot farfalle.

Carrot farfalle pasta, simple to form by hand, is tossed with creme fraiche and delicate herbs.

Semolina flour or fine cornmeal, for dusting
Fresh Carrot Pasta Dough
1 tablespoon finely grated lemon zest (about 1 large lemon)
3 tablespoons extra-virgin olive oil
1/4 cup plus 2 tablespoons loosely packed fresh basil leaves, torn into small pieces
2 tablespoons finely chopped fresh flat-leaf parsley
2 tablespoons fresh chervil leaves
1 tablespoon finely chopped fresh dill
Coarse salt
1/2 cup creme fraiche
Freshly ground pepper

Steps:

  • Make the farfalle: Lightly dust a rimmed baking sheet with semolina or cornmeal. Work with each sheet of dough just after it's been rolled. Using a sharp knife or the straight edge of a pastry cutter, trim to 3 1/2 inches wide, and then cut in half lengthwise. Using a fluted pastry cutter, cut each half crosswise into 2-inch-long pieces. Working with 1 piece at a time, pinch center with your fingers, forming a bow-tie shape; squeeze tightly to seal, and flatten slightly. Transfer to baking sheet. If not cooking immediately, let dry at room temperature for 1 hour, and then refrigerate between layers of parchment in an airtight container overnight.
  • Stir together lemon zest, oil, and herbs in a large bowl.
  • Bring a large pot of water to a boil. Add 2 tablespoons salt and the farfalle. Cook, stirring occasionally to separate, until centers are just tender, 3 to 4 minutes (if using dried farfalle, cook about 2 minutes more). Drain, and transfer to bowl with herb mixture. Stir in creme fraiche, and season with salt and pepper.

FARFALLE WITH HERB SAUCE AND WALNUTS

1 pound farfalle, cooked according to package directions
3 cups of basil leaves, clean
2 cups of flat leaf parsley, picked and cleaned
2 cups fresh mint sprigs, cleaned
2 cloves of garlic, minced
3/4 extra virgin olive oil
1/2 cup vegetable stock
1 1/2 teaspoons salt
1/2 teaspoon fresh pepper
1 tablespoon lemon juice
1/2 cup chopped toasted walnuts
1/2 cup grated Parmesan cheese

Steps:

  • In a blender, or food processor, add the herbs and garlic, and while the machine is running, drizzle in 1/2 olive oil, the vegetable stock, and then the rest of the oil. Add salt, pepper and lemon, blend and taste and adjust seasoning. Toss with cooked pasta while still warm, fold in nuts and cheese. Garnish with fresh herb sprigs. TIP:

  • 1 quart yogurt placed in a cheesecloth lined sieve and drained overnight. Mix in 1/2 cup of your favorite chopped herbs

3/4 pound farfalle (bow tie-shaped pasta)
3 to 4 tablespoons extra-virgin olive oil, or to taste
2 tablespoons minced fresh mint leaves

  • In a kettle of boiling salted water cook the farfalle until it is al dente, drain it well, and in a bowl toss it with the oil, the mint, the parsley, and salt and pepper to taste.

1 tablespoon canola oil
1/4 cup broken spaghetti, linguine or orzo
3/4 cup farro
1 shallot, finely chopped
1 1/2 cups low-sodium chicken or vegetable stock
1/4 teaspoon kosher salt
1/4 cup chopped parsley
2 teaspoons chopped fresh thyme or oregano

Steps:

  • In a medium saucepan, heat the canola oil over medium-high heat. Add the pasta and cook, stirring frequently, just until it turns golden brown, about 2 minutes. Stir in the farro and shallots and continue to cook, stirring, 2 more minutes. Stir in the chicken stock and salt and bring to a boil. Lower the heat, cover the pan and simmer until the farro is very tender, about 35 minutes. Check the farro towards the end of cooking and add 1 to 2 tablespoons water if the pan dries out before the farro is tender.
  • Top with the parsley and thyme, fluff with a fork and serve.

FARFALLE WITH FRESH HERBS AND GOAT CHEESE

Kosher salt
1 pound farfalle pasta
3 tablespoons olive oil
3 cloves garlic, minced
1 shallot, minced
1/2 cup half-and-half
6 ounces goat cheese, at room temperature
Freshly ground black pepper
Zest and juice of 1 lemon
3 tablespoons minced fresh parsley
3 tablespoons minced fresh dill
3 tablespoons minced fresh mint
3 tablespoons thinly sliced chives
1 cup grated Pecorino Romano
Extra-virgin olive oil, for drizzling

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and return to a boil, stirring occasionally. Cook until al dente according to the package instructions, 8 to 10 minutes. Reserve about 1 cup of the pasta water, then drain.
  • Meanwhile, add the olive oil to a large skillet and heat over medium heat. Add the garlic and shallot and saute until softened, about 2 minutes. Add the half-and-half and whisk in the goat cheese until smooth and warm. Season with pepper. Add the lemon zest and juice and half of the reserved pasta water and whisk until combined. Add half of the parsley, dill, mint and chives.
  • Transfer the drained pasta to the skillet and cook until the sauce starts to thicken, about 2 minutes. Turn off the heat, add 1/2 cup of the Pecorino Romano and stir to combine. Adjust the consistency of the sauce with the remaining pasta water if needed. Drizzle with extra-virgin olive oil.
  • Divide the pasta among bowls and garnish with the remaining Pecorino Romano, parsley, dill, mint and chives.
