PIMENTO CHEESE SANDWICH
These Ham & Pimento Cheese Biscuit Sliders are simple, but bursting with flavor. We take our favorite biscuit recipe that's light, flaky, and oh-so delicious and smother the inside with warm pimento cheese and ham. The perfect bridal shower, lunch or side to soup or salad.

Steps:
- Preheat oven to 425 degrees.
- Follow directions to roll out biscuits and then use a 2-inch biscuit cutter to make 16 biscuits. You will need to piece scrap dough back together to make them all.
- Place on a greased baking sheet and brush with buttermilk as directed. Bake for 12-15 minutes or until golden brown.
- While the biscuits cook, add cheese, cream cheese, mustard, garlic powder, onion powder and salt to the bottom of a food processor. Pulse 3-4 times until cream cheese is incorporated in to the cheese. Do not overmix! You still want some pieces of cheese of whole.
- Add pimentos, pulse 1-2 times until combined, again, you want them to stay in tact. Season to taste with salt and pepper.
- Once biscuits have cooled slightly, split in half. Spread pimento cheese on the bottom. Top with a piece of ham, then spread more cheese on the top biscuit. Sandwich together. You can eat them at room temperature, or pop them back on the baking sheet and in to a 350 degree oven for a few minutes until the cheese has melted.
HONEY HAM SANDWICH

- For the biscuits: Preheat the oven to 475 degrees F.
- Sift together the flour and salt into a large bowl. Add the butter and shortening and cut together with a pastry cutter. Gently stir in the buttermilk using a fork. Knead the mixture a few times with your hands until the dough comes together.
- Tip the dough onto a floured surface and roll out to about 1/2 inch thick. Using a 3-inch round cutter, cut out 12 biscuits and transfer to a baking sheet.
- For the topping: Brush the biscuit tops with 2 tablespoons of the melted butter and bake until golden, 13 to 15 minutes. Allow the biscuits to cool slightly, 4 to 5 minutes.
- Meanwhile, whisk together the honey, Dijon, parsley and remaining 8 tablespoons melted butter in a small saucepan over medium heat. Bring to a simmer and remove from the heat.
- For the sandwiches: Preheat the broiler.
- Split the biscuits in half and return to the baking sheet cut-side up. Brush the cut sides with the honey butter. Place 2 halved ham pieces on the bottom of each biscuit and top each with a slice of cheese. Broil until the cheese is melted, 1 to 2 minutes. Carefully remove from the oven and pour over the remaining honey butter. Place the tops on the biscuits and serve.
CARAMELIZED HAM & SWISS BUNS

- Arrange bottom halves of rolls in a greased 9x9-in. baking pan. Spread cut side of roll bottoms with horseradish sauce. Layer with ham and cheese; replace tops., In a small skillet, heat butter over medium-high heat. Add onion; cook and stir 1-2 minutes or until tender. Stir in remaining ingredients. Pour over rolls. BUTTERMILK BISCUIT HAM SANDWICHES WITH HOMEMADE TOMATO JAM

- Preheat the oven to 375 degrees F.
- Make the Biscuits: Using a sieve over a bowl, sift together the flour, baking powder, sugar, and salt. Repeat. Add the butter and shortening and, using your fingertips, mix until crumbly. Add the buttermilk and mix with a wooden spoon until the dough just comes together. (Don't over mix!)
- Transfer the dough to a lightly floured work surface and, using a rolling pin, roll out to 1/2 to 3/4-inch thick rectangle. Using a 3 to 4-inch round cutter, punch out biscuits and transfer them to a parchment paper-lined baking sheet. Gently press the dough scraps into another rectangle and punch out more biscuits. Discard any scraps. Lightly dust the tops of the biscuits with flour and bake until golden brown, about 12 to 15 minutes. Let the biscuits cool slightly. (You'll only need 6 biscuits for the sandwiches, so serve the rest with soup, spread with butter and jam, or just freeze for another day.)
- Make the Sandwiches: Preheat the broiler. Split 6 of the biscuits in half and spread the top halves with 1 tablespoon of Tomato Jam each.
- Divide the ham among the bottom halves of the biscuits and sprinkle the cheese over the top.
- Arrange the bottom halves a baking sheet and place under a broiler until the cheese melts. Cover with the biscuit tops and serve immediately.
- Heat 2 tablespoons of oil in a heavy-bottomed saucepan over medium heat. Add the onion, garlic, rosemary and pepper flakes and cook, stirring, until soft and fragrant. Add the tomatoes and cook, stirring occasionally, until the tomatoes have given up most their water and turned a deep orange-red, about 15 to 20 minutes. Whisk in the remaining 2 tablespoons of oil and season with salt and pepper, to taste.
SMOKED HAM BISCUIT SANDWICH

- For the smoked ham: Preheat a smoker to 225 degrees F.
- Combine the brown sugar, paprika, pepper and cayenne in a bowl. Add a bit of water to make a paste. Rub the ham generously with the spice paste.
- Place the ham in the smoker with applewood chips. Smoke for 3 to 4 hours.
- Remove the ham to a cutting board and tent with foil. Let rest for 20 to 30 minutes. (Yields 24 portions.)
- For the buttermilk biscuits: Preheat the oven to 400 degrees F.
- In a large bowl, whisk together the flour, baking powder, baking soda and salt. Using a pastry cutter (you can also just use your hands), mix the butter cubes into the flour until it resembles a coarse meal. Chill in the refrigerator for 10 minutes.
- Meanwhile, whisk together the buttermilk and honey in a small bowl. Incorporate the buttermilk mix into butter-flour mixture, stirring just until the dry ingredients are moistened.
- Turn out the biscuit dough onto a lightly floured work surface and knead gently 3 or 4 times to fully combine the ingredients. (If the dough is a little crumbly, that's Ok.) Roll out the dough into a 9-by-5-by-1/2-inch rectangle and then fold into thirds. Roll out again and fold into thirds again. Do this about four times in all.
- Cut out biscuits. Don't twist when cutting; rather, use an up-and-down motion. Place the biscuits on a baking sheet, spaced 1-inch apart.
- Bake until golden brown on top and fully risen, 11 to 15 minutes. Cool the biscuits on a wire rack, but not for too long¿these are best served warm! (Makes 8 biscuits.)
- For the chipotle honey mustard: Blend the honey, chipotles and adobo sauce in a blender or with an immersion blender. Season to taste with salt and pepper. Mix the chipotle honey with the Dijon.
- Once the ham has rested, slice it thinly using a slicing knife or an electric meat slicer. Split open the warm biscuits and sauce the bottom halves with a spoonful of the chipotle honey mustard. Top each with a generous amount of ham (about 1 cup) and drizzle with more honey mustard. Close with the biscuit tops, and serve.
HERBED BISCUIT HAM SANDWICHES
These biscuits look awfully good and I cannot wait for my herb garden to come up after the winter. The recipe suggests ham, but these biscuits would be good with pretty much any kind of filling, I would think. By chef Sarah DiGregorio published in Parade Magazine.

- Preheat oven to 450 deg F. Put cubed butter in freezer.
- Combine flour, sugar, baking powder, salt, baking soda and herbs in a food processor pulse to combine. If you do not have all the herbs, just use more of the others, so that you have 1/2 cup total.
- Drop in butter cubes and pulse until mixture resembles coarse cornmeal.
- Pour in buttermilk and pulse until mixture just comes together.
- Turn dough out onto a lightly floured surface. Pat into a rectangle, then cut into thirds. Stack thirds on top of each other and pat out into a rectangle again. Repeat twice, then pat into a 4x12 inch rectangle.
- Cut in half lengthwise and then into 8 square biscuits.
- Bake on a parchment-lined baking sheet until puffed and golden, 10-12 minutes.
- Split biscuits and spread with mustard and honey. Top with ham and pickles and make into sandwiches.

PARTY HAM SANDWICHES
These tiny sandwiches are so easy to make and are a hit at parties or other occasions. My family requests these little ham sandwiches for holidays and family get-togethers. We've taken them to Disney World and snack on them in the parks. Once the party sandwiches are assembled they fit easily back in the tray they come in. I freeze them until ready to bake.
