SALT-ENCRUSTED RED SNAPPER

Steps:
- Preheat oven to 450 degrees F. Position a rack in the middle of oven. In a bowl, stir together salt and one cup water until salt is evenly moistened. Score both sides of the fish, cutting slits just through skin to expose a little flesh. Sprinkle inside cavity lightly with salt and a few grinds of black pepper. Rub two tablespoons of the herbs into cavity and insert lemon slices. Rub one tablespoon chopped herbs onto each side of the fish, pressing into slits.
- Spread half the salt mixture in an oval just larger than the fish on a large baking sheet. Set fish on top of the salt. Pat remaining salt mixture over fish to cover completely and mold around curves of the fish. It's okay for the tail to stick out a little bit. Bake for 30 minutes. Remove baking sheet from oven and rap edges of salt crust to loosen it. Lift the crust from fish. It's okay if the skin comes away with crust.
- To serve, use a spatula to cut exposed side of fish into two portions and place on two warmed dinner plates. Lift tail to remove bones in one piece and expose other side. Cut that side into two portions, lift it from bottom salt and place on warmed plates. Drizzle each portion with extra virgin olive oil and splash of sherry vinegar if desired. Sprinkle with remaining herbs and serve immediately.
CURRIED RED SNAPPER
Steps:
- Cut the red snapper into small pieces and place in a bowl. Season with the salt, black pepper, scallion, and curry powder.
- Allow the fish to marinate in the refrigerator for at least 1 hour.
- When you are ready to proceed, heat the butter and oil in a large saute pan. Add the fish and saute until it is lightly browned on both sides. Add the peppers, garlic, coconut milk, water, tomatoes, and onions. Cover the fish and bring to a boil. Reduce the heat, cover the pan, and simmer until the fish is tender, about 20 to 25 minutes, adding more water if necessary. Also, add a touch more curry, if necessary, for your taste. Finish with fresh cilantro leaves.
- Serve this splendid dish with white rice and fried plantains.
PAN FRIED BLUE CORN COATED RED SNAPPER WITH GREEN CHILE AIOLI AND CREAMED KALE
Steps:
- Green Chile Aioli: Combine all ingredients in a blender and blend until smooth.
- Red Snapper: Season the eggs lightly with salt and pepper. Place the eggs, flour, and cornmeal in 3 separate bowls. Season the snapper fillets lightly on both sides with salt and pepper. In a large saute pan over medium-high heat, heat the oil. Dredge each fillet in the flour and shake off any excess. Dip into the beaten egg and let the excess drip off. Dredge both sides lightly in the cornmeal and shake off any excess. Saute for 3 minutes on each side and drizzle with the red pepper sauce. Serve immediately, garnished with green chile aioli.
- Creamed Kale: Blanch the kale in lightly salted water until tender, rinse in ice water, drain and cut into 1/2-inch ribbons. In a large saute pan over medium heat, melt the butter and add the kale, cream and nutmeg. Reduce the heat to low and cook for 5 minutes, or until the cream has reduced and thickened. Season with salt and pepper to taste.
SALT CRUSTED WHOLE RED SNAPPER

- When cooking with a whole fish you must first be sure that the fish is gutted, your local fish market will do this for you. The skin should be scaled and the gills and fins removed. Leave on the head and tail. Rinse the fish inside and out then pat dry.
- In a mixing bowl, combine the parsley, orange, fennel, bay leaves, shallot, red pepper flakes, fennel seed, and 1/4-cup olive oil. Stuff the cavity of the fish with 3/4 of the mixture, then spread the remaining 1/4 on the bottom of a roasting pan so the fish will not stick.
- Transfer the fish to the roasting pan and rub the skin with remaining olive oil. In another bowl, whip the egg whites to a stiff peak, then fold in the salt to make a paste. Smear the salt paste over the entire fish and roast in a preheated 350 degree F oven for 30 to 40 minutes. The egg whites form a hard crust that will crack like a shell. To serve, scoop the flesh from the fish with a spoon.
PAN-FRIED RED SNAPPER FILLET WITH CORN CREAM CREOLE SAUCE
Steps:
- In a large saucepan, heat the achiote oil over medium heat. Add the onions, bell peppers, tomato, chile peppers, garlic, cilantro, bay leaf, salt, and pepper, and stir-fry for about 4 minutes. Add the corn and fish stock and cook over medium heat for about 6 minutes. Remove from the heat and let cool slightly. Transfer to a blender process until smooth on high speed.* Pour the sauce through a fine strainer into a saucepan, add the evaporated milk, and warm over low heat.
- Dilute the cornstarch with 1 tablespoon water. Add to the saucepan, mix well, and incorporate the butter with a whisk. Taste for seasoning and and cook for about 5 minutes. Keep warm.
- Generously season both sides of the fish with salt and pepper. In a large nonstick skillet, heat the oil over high heat. When oil is hot, place the fillets in the skillet, skin side down, and cook for 3 minutes, without turning. Flip onto other side and cook for about 2 minutes. Remove from heat to a platter.
- Spoon the warm sauce in the center of each dinner plate. Top with a fish portion. Garnish with cilantro sprigs and the toasted and crushed coriander seeds.

- 1.Season the fillets with the salt, black pepper and Cajun seasoning. Set aside to marinate for a few minutes while you heat the oil. 2.Heat oil in a frying pan wide enough to hold the fillets. 3.Mix the corn meal and bread crumbs together in a separate dish. Take each fillet and dredge it into the breadcrumb's until both sides are fully coated. Once the oil is hot...it has to be hot or the fish will be soggy and not crispy. Place each fillet in to fry. Fry 2 minutes per side and until it is golden brown. Drain on paper towels. Serve with lemon wedges/tartar sauce, and a fresh green salad.

Steps:
- Combine buttermilk, garlic and salt and pepper in a shallow dish.
- Place the potato flakes in another shallow dish.
- Dip fillets in buttermilk mixture, dredge in potato flakes.
- Melt the butter in a large nonstick frypan over medium high heat.
- Add fish, cook 3 minutes on each side or until golden and fish flakes easily when tested with a fork.
- Serve with lemon wedges.
CORNMEAL BREADED SNAPPER
This is very easy to make, if not a bit messy, but the crust comes out so crunchy. It's really nice served with any kind of rice, or a baked potato and a green thing ( asparagus, zucchini, spinach, broccoli, or green beans... actually broccolini is my new favourite with this.) It's just something my mother always did with fish & she used to play with the seasonings from time to time. This is my latest mix. Discard unused crumb, egg & flour mix. You won't need all of it.

- Rinse fillets under cold cold water. Lay on plate & pat dry with paper towels.
- Remove 3 shallow bowls from cupboard (here's where the messy bit starts).
- In one of the bowls, mix together flour, paprika and lemon pepper. Fluff together with fork.
- In another bowl stir together the 2 eggs until frothy.
- In the 3rd bowl mix the breadcrumbs, cornmeal, parmesan cheese, oregano, basil and pepper.
- Heat oil in pan.
- Dip each fillet first into the flour mixture. Coat evenly on both sides, then dip into the egg mixture, then the breadcrumb/cornmeal mixture.
- When oil is hot lay the filets gently in the pan. Do not crowd.
- Cook fillets until golden brown on both sides. I do mine in a Texas skillet. (large frypan), but if you have to do it in two batches, you can keep them warm for awhile in a 230°F oven on a plate lined with paper towel.
- Serve with a little tartar sauce, seafood sauce or brown butter.
- Enjoy!

Steps:
- Wash filets and dip each in egg wash (eggs mixed with milk), then roll in crushed cashews until encrusted.
- Saute in olive oil and butter until golden brown on each side.
- Add salt and pepper to taste, wine and lemon.
- Finish in oven, being careful not to overcook.
- Garnish with rum sauce, carrots and tomatoes.
- For Sauce: Mix all ingredients in small saucepan, bring to boil and remove from heat.
- Serve warm.
